Overview

This document describes the Alpina EBM-2003 bread maker, a household appliance designed for automated bread production.

Function Description:

The Alpina EBM-2003 bread maker is an intelligent appliance that automates the process of making bread at home, mimicking the operations of bakeries. It handles kneading, yeasting, resting, rising, baking, and warming based on the provided ingredients and selected program. The appliance uses a unidirectional drive for dough stirring and a Microcontroller Unit (MCU) for precise control of dough yeasting and baking temperature. Upon startup, the MCU checks the working environment and temperature transmitter. If normal, the motor begins stirring ingredients, and the program controls heating tubes, oven temperature, and yeast activity. Yeast produces carbon dioxide, making the bread soft and expanded. Flour and other ingredients are thoroughly mixed and then expand during the rising phase before being baked. The control system, comprising a power panel and a control panel, stores various bread and cake making methods. Users can customize yeasting, baking, and stirring functions, including crust color (light or dark) and thickness. The heating tube in the pan brings the oven to the desired yeasting or baking temperature, with feedback from a transducer controlling the heating tube's operation. A safety fuse protects the appliance if the oven temperature exceeds a certain degree.

Usage Features:

The bread maker offers 12 programs, accessible via the control panel:

  1. Basic white bread: For most bread recipes using white wheat flour.
  2. French bread: For traditional crusty French white bread.
  3. Sweet bread: For recipes with more fat and sugar.
  4. Cake: For pastries and cakes using baking powder.
  5. Whole wheat bread: For recipes using whole wheat flour, with longer stirring and yeasting times.
  6. Sandwich: For making sandwiches.
  7. Traditional dough: Kneads dough without yeasting, suitable for dumpling wrappers and noodles. The pan is not heated, and color/weight selection is unavailable.
  8. Jam: Automatically cooks jam in the pan.
  9. Yogurt bread: Cooks bread mixed with yogurt.
  10. Leavened dough: Kneads and proves dough for over 4 hours, yielding aromatic dough recommended for oven baking.
  11. Fast bread: A quicker version of the basic bread program.
  12. Baking: Designed to reheat completed bread. Default time is 1 hour, adjustable with TIME+ and TIME- buttons.

Control Panel Features:

  • On/Off: Press and hold for 3 seconds to start or stop operation.
  • Time + / Time -: Adjusts the delay time for the program.
  • Browning Selection: Chooses between light or dark crust color.
  • Weight Selection: Selects bread size (450g, 680g, or 900g).
  • Program Selection: Chooses programs from 1 to 12.

Beep Sounds:

  • Single beep: Power on or before resetting, or each button press.
  • Multiple beeps: If buttons are pressed multiple times consecutively.
  • 10 beeps: When dried fruits need to be mixed in during kneading.
  • 12 beeps: When bread making is done, followed by a 1-hour warming status (except for programs 7, 8, 10).

Memory Function:

The appliance can remember its status for at least 20 minutes after a power cut.

Important Usage Notes:

  • Read the manual carefully before first use.
  • For household use only, not commercial.
  • Use with 230V/10A or three-wire grounded electrical outlets.
  • Unplug when not in use, cleaning, or installing accessories.
  • Do not use outdoors or in high humidity.
  • Keep power line, plug, and machine body (except pan and kneading paddle) away from water or other liquids.
  • Avoid placing near water heaters, electric heaters, or electric cookers.
  • Ensure at least 11cm space around the appliance.
  • Verify pan installation and ensure no foreign objects (stones, paper) are left inside.
  • Do not clean the pan with metal-wire brushes.
  • Do not open the cover or put hands into the pan during operation. Use oven gloves for hot parts.
  • Damaged power cords must be replaced by professional staff.
  • Do not touch the appliance surface during operation, except for control panel buttons.
  • The internal temperature must cool below 45°C before starting a new kneading cycle. If above 45°C, "HHH" will display (except for program 12), and the buzzer will beep continuously.
  • Ingredients should be added in a specific order: liquids, egg + salt, milk powder, then flour (not touching liquid), and yeast on top of dry flour (not touching yeast or salt). Perishable ingredients like eggs or fresh fruits should not be used with the long timing function.
  • Dried fruits, nuts, and dough should be added when the buzzer beeps during stirring.
  • The measuring cup is 250ml, small spoon 5ml, big spoon 15ml.
  • Measure liquids at eye level on a flat surface.
  • Measure dry powders in a natural, loose state, leveling off the top.

Maintenance Features:

  • Cleaning:
    • Unplug and allow the appliance to cool completely before cleaning.
    • Wipe the body with a soft cloth and a neutral cleanser.
    • Clean the pan with a wet cloth, avoiding abrasive scrubbers (steel brushes) to protect the non-stick coating.
    • If the stirring paddle is stuck, pour hot water into the pan for a few minutes to loosen it, then remove. Do not use abrasive scrubbers.
    • All parts should be reassembled after cleaning and wiping.
  • General:
    • Do not immerse the pan in water for extended periods, as this can damage the rotation axis.
