Oolong tea is made of a rather large and ripe leaf —
often with the cutting. It is recommended to brew
such leaf with boiling water of 90°С,otherwise the
leaf will not open up.
Cliff oolong tea and puerh have a stronger
fermentation level. The optimal brewing
temperature comprises 95 °С.
Black teas open their taste and flavor at the
temperature of 100 °С.
