This document describes the Ciam 6040 Series Refrigerated Pastry Showcase, a device designed for the display and preservation of pastry products. It includes a maintenance and use manual, as well as technical specifications and operational instructions for its digital controllers.

Function Description

The Ciam 6040 Series Refrigerated Pastry Showcase is a display unit designed to maintain pastry products at refrigerated temperatures. It is available in different configurations, including models with or without a cold storage cell. The unit incorporates a microprocessor-based digital controller for precise temperature management, defrost cycles, and fan operation. The primary function is to provide a controlled environment for displaying and preserving perishable food items, particularly pastries, in commercial settings.

The showcase's operation is governed by a Dixell digital controller, which can be either an XW60L (for medium-low temperature ventilated refrigeration) or an XW20LS (for normal temperature refrigeration with off-cycle defrost). These controllers manage the compressor, fans, defrost cycles, and lighting. They feature real-time clock (RTC) functionality for programming daily defrost cycles and energy-saving modes (Day and Night function) with different set points. The controllers also support up to four NTC or PTC probe inputs for temperature control, evaporator temperature monitoring, and condenser temperature alarm.

Important Technical Specifications

The Ciam 6040 Series showcases are designed and manufactured in Italy by CIAMspa. Key specifications for the showcase include:

  • Refrigerant: R404A (or equivalent, such as R507)
  • Power Supply: 230V, 1ph, 50Hz (for the condensing unit)
  • Operating Temperature Range: The Dixell XW60L controller is suitable for medium-low temperature ventilated refrigerating units, while the XW20LS is for normal temperature applications. Environmental temperature for optimal operation is between 15°C and +55°C with humidity between 30% and 90%.
  • Compressor: Managed by the digital controller, with parameters for start-up delay, minimum off time, and continuous cycle operation.
  • Defrost: Two modes are available: electrical heater defrost (tdF=EL) and hot gas defrost (tdF=in) for XW60L, or simple compressor stop (off-cycle) for XW20LS. Defrost intervals can be time-based or real-time clock (RTC) controlled, with programmable daily cycles for workdays and holidays.
  • Fans: Controlled based on compressor operation (FnC=C_n or C_Y) or continuous operation (FnC=o_n or o_Y), with a timed delay after defrost (Fnd) and a temperature threshold (FSt) for fan activation.
  • Relay Outputs: The Dixell controllers feature multiple relay outputs for compressor, fan, defrost, and an auxiliary relay (configurable for light, auxiliary thermostat, second compressor, or alarm).
  • Probe Inputs: Up to four NTC or PTC probe inputs for various temperature measurements (room, evaporator, condenser).
  • Digital Inputs: Configurable for generic alarm, serious alarm, pressure switch, door switch, defrost start, heating/cooling inversion, energy saving, holiday defrost, or on/off function.
  • Connectivity: HOT KEY output for connecting to ModBUS-RTU compatible monitoring systems (e.g., Dixell X-WEB family) and for programming the controller. X-REP output is optional.
  • Protection Grade: IP65 for the front panel when mounted with the rubber gasket.

Usage Features

The Ciam 6040 Series is designed for ease of use and precise control in commercial environments.

  • Digital Controller Interface: The Dixell controllers feature a clear LED display and intuitive buttons for setting parameters, viewing temperatures (min/max), and initiating manual defrosts.
  • Programmable Defrost Cycles: Users can program up to six daily defrost cycles for both workdays and holidays, optimizing energy consumption and product preservation.
  • Energy Saving Mode: A "Day and Night" function allows for different set points to be programmed, contributing to energy efficiency.
  • Adjustable Set Point: The target set point can be easily adjusted via the front panel, allowing for flexible temperature management based on product requirements.
  • Alarm Management: The system includes various alarms for high/low temperature, probes failure, door open, and pressure switch, with options for audible silencing and relay activation.
  • Lighting Control: The auxiliary relay can be configured to control the internal lighting of the showcase, enhancing product visibility.
  • Keyboard Lock: A key combination allows locking the keyboard to prevent accidental changes to settings.
  • Hot Key Functionality: Simplifies programming by allowing users to upload settings from one controller to a Hot Key device and then download them to other controllers, ensuring consistent configurations across multiple units.

Maintenance Features

Regular maintenance is crucial for the optimal performance and longevity of the Ciam 6040 Series showcase.

  • Routine Cleaning:
    • Surfaces: Weekly cleaning with warm water and neutral soap, followed by rinsing and wiping with a soft cloth. Abrasive products should be avoided.
    • Plastic Surfaces: Weekly cleaning with warm water and neutral soap, avoiding alcohol, acetone, and solvents that may damage the material.
    • Glass Surfaces: Daily cleaning using specific glass cleaning products. Water alone may leave calcareous deposits.
    • Wooden Surfaces: Weekly cleaning with a wet cloth.
  • Defrost Management:
    • Additional Defrost: If excessive frost builds up due to particular temperature and humidity conditions, an additional defrost cycle may be necessary. This may require the assistance of a qualified technician.
    • Periodic Defrost: To ensure optimal cooling system performance, an extended defrost cycle is recommended every 15 days. Products should be removed from the cabinet, and the main switch turned off for at least 5 hours to allow complete frost melting.
  • Condenser Cleaning: The air condenser should be cleaned by a qualified technician using a compressed air jet when the fan is switched off. Metallic brushes should not be used, and protection gloves are recommended.
  • Lamps Replacement: This operation requires a qualified technician.
  • Safety Precautions: Before any maintenance or cleaning operation, the main switch must be turned off to deactivate the power supply. The unit should never be cleaned with water jets.
  • Troubleshooting: In case of malfunctioning, users are advised to check if the issue is due to a lack of maintenance before contacting qualified assistance. The manual provides a summary of alarm codes and their causes for initial diagnosis.
