Potato Salad with Bacon

Prep Time: 15 minutes
Cook Time: 30 minutes
Make-Ahead: Potato salad can be made 8 hours ahead, covered and refrigerated. If
making it in advance, serve it cold or at room temperature.
INGREDIENTS
4 1/2 lb. Yukon Gold potatoes, peeled, cut into 1 1/2 inch cubes
2 cups reduced-sodium chicken broth
1/2 cup finely chopped shallots
1/3 cup finely chopped cornichons
1/4 cup drained capers
8 oz. bacon, finely diced
1/3 cup mayonnaise
1/4 cup finely chopped fresh flat-leaf parsley
