Garlic-Yogurt Dressing
Ingredients:
1 pt. plain yogurt

⁄2 tbsp. finely chopped parsley
2 tbsp. minced garlic
2 tbsp. Dijon Mustard
1
⁄4 tsp. black pepper
tabasco Sauce to taste
Method:
1. Combine ingredients and chill until
ready to serve.
Fresh Peach and Yogurt Soup
Ingredients:
4 lbs. fresh peaches - peeled and pureed
in a processor
8 oz. light - bodied white wine
8 oz. apple juice
4 oz. honey

⁄2 tbsp. lemon zest
1
⁄2 tsp. ground cinnamon
8 to 10 oz. plain yogurt
Finely ground pistachios for garnish
Method:
1. In a non-reactive* saucepan, combine
peach puree, wine, apple juice, honey,
and lemon zest. Simmer for 20 minutes.
2. Stir in cinnamon and yogurt.
3. Chill and serve in chilled bowl.
4. Garnish with pistachios.
