  A sour or vinegar flavor in your espresso can occur if calcified deposits have not been cleaned. Try cleaning your coffee machine several times as described in 'Before first use'. Another cause may be that the coffee powder is stored in a hot and humid place for a long time and has gone bad. Use fresh ground coffee or store unused ground coffee in a cool, dry place. After opening a bag of ground coffee, reseal and store it in the refrigerator to maintain freshness.
