15.4. ON/OFF
To start the oven, press ON and to switch it off, press OFF. Each time that the oven is switched on,
the last-used values are displayed. If this is the first time the oven is switched on, the defect
values are displayed.
15.5. SELECTION OF COOKING MODE
Press to access the different cooking modes. The selected option is identified by an LED beneath the
corresponding icon.

7. Steam mode
• CONVECTION: The oven is heated with hot air (dry heat)
• MIXED: The oven is simultaneously heated with hot air and steam
• REGENERATION: The oven is simultaneously heated with hot air and steam
• STEAM: The oven is usually heated with steam created by the injection of water.
In Convection mode the fluepipe remains open.
In Steam mode the fluepipe remains closed.
In Mixed and Regeneration mode the fluepipe is open and closed alternately.
• CONVECTION (100% dry heat): The oven is only heated with hot air.
Where X=ºC is the setting:
• Fluepipe open
• The output CC stops when TC>=(X+1) ºC and is reset when TC<=(X-1) ºC.
• The VCN output never operates.
• STEAM (100% damp heat): The oven is heated by steam generated by spraying (injecting) water over the
heating system.
Chamber setting = 99 ºC
• Fluepipe closed
• VCN is activated (Y s ON (10 s -Y)
” OFF), when VHM is activated, CC and TC>=90ºC
• The output CC stops when TC>=100 ºC and is reset when TC<=98 ºC.
• The VHM output operates if 50 ºC<TC<130 ºC
• MIXED (50% dry heat + 50% moist heat): Heating uses hot air and steam simultaneously, but with more
power in the hot air.
Where X=ºC is the setting:
• Fluepipe closed
• VCN is activated (Y s ON (10-Y) s OFF), only if: TC>=90 and ((CC and VHM operate) or (TV>=78+
(TC*0.27)))
• The output CC stops when TC>=(X+1) ºC and is reset when TC<=(X-1) ºC.
• VHM operates as follows:
• If X<96 ºC: Continuous cycles of 6 s 2 s ON, 4 s OFF)
