Overview

Function Description

The primary function of this appliance is to ferment milk into yogurt or glutinous rice into rice wine. It features a microcomputer-controlled operation panel for setting fermentation times.

Yogurt Making Process:

  1. Disinfection: Wash the container and its lid with warm water (not boiled for more than 1 minute). The top cover and the main product should not be washed with boiled water.
  2. Mixing: Combine raw materials in the ferment jar. Several options are provided for raw materials:
    • Refrigerated fresh milk + 1 bagged ferment powder or 5% refrigerated pure yogurt.
    • Sterile sealed pure milk + 1 bagged ferment powder or 5% refrigerated pure yogurt.
    • Milk made from milk powder + 1 bagged ferment powder or 5% refrigerated pure yogurt.
    • Boiled Soya-bean milk + fermented. The amount of ferment or refrigerated pure yogurt adjusts proportionally to the amount of milk.
  3. Fermentation: Cover the container with its lid, place it into the ferment jar, and then cover with the top cap. Plug in the appliance and turn on the power switch to start fermentation. The fermentation time is manually controlled, typically 6-8 hours. The resulting yogurt should coagulate like "bean curd," with longer fermentation times leading to increased acidity.
    • Caution: Fermentation time is influenced by ambient temperature and raw material temperature. Lower ambient temperatures or refrigerated milk require more time, but should not exceed 14 hours.
    • Warm Water Option: To shorten fermentation time and improve heat transmission, warm water can be added to the ferment pot.
  4. Keeping Freshness: Freshly fermented yogurt is edible but can be refrigerated for enhanced flavor. It is recommended to consume the yogurt within 3 days for optimal lactobacillus activity, though it can be refrigerated for up to 7 days.
  5. Flavoring: Yogurt can be flavored with fruit juice, fructose, honey, or other desired ingredients.

Rice Wine Making Process:

  1. Wash Rice, Dip Meters: Soak cleaned glutinous rice, rice, or corn in clear water until it can be crushed by hand (5-7 hours in summer, 10-20 hours in winter). This ensures sufficient moisture absorption for thorough steaming and cooking.
  2. Steamed Rice: Boil the soaked rice until it can no longer be crushed. Incomplete cooking will prevent successful rice wine production.
  3. Add Wine Yeast:
    • Disinfect the container and its lid with boiled water for more than 1 minute.
    • Spread the steamed rice, mix it with wine yeast, and collect it into the container (pressing it properly).
    • After pressing, add cold water, dig a small hole in the center of the rice, and sprinkle wine yeast over the rice.
  4. Ferment and Set Time: Place the mixed rice and wine yeast into the fermentation tank, attach the top cover, and power on. Once the power-on indicator is lit, set the fermentation time to 30-36 hours using the panel. The machine stops automatically when the process is complete.
  5. Check Rice Wine: After fermentation, inspect the rice wine through the middle hole. The ideal result is a sweet taste and good alcohol quality.
  6. Keep Freshness: Freshly made rice wine can be consumed immediately or after refrigeration. For best taste and nutritional value (lactic acid bacteria activity), it is recommended to consume it within 5 days. Rice wine should not be stored for more than 13 days under cold conditions.
