INSTRUCTIONS FOR USE
6. Press , display shows "COOL", Maturation (3) starts;
7. When maturation period is finished, Preservation (4) starts;
NB : Press on to choose between preservation 1 and preservation 2.
8. You can pull out leaven. To do this:
• Open valve (pay attention to locking);
• Use graduated bucket to retrieve leaven (supplied);
• Close valve (pay attention to locking);
• Press ;
• Use numerical keypad to enter extracted amount (in litres);
• Press to confirm.
9. At cooling time, buzzer sounds and display shows "RAFRAICHI HH:MM";
• Replace extracted leaven with flour, then with water in equal quantities.
10. Press , to initialise calculator;
11. Return to stage 4 for a new cycle.
NB: To stop cycle in progress, press , , simultaneously.
Capacity: Number of cycles per day: 0 to 4 leaven productions (depending on maturation
time)
Safety: The machine will not start if the safety cover is open.
MAINTENANCE
Every week, by a trained user:
1. Cut the disconnector;
2. Remove the plug;
3. Use a damp cloth for external maintenance;
4. Clean with a brush and vacuum clean the inside of the machine (cold unit and electri-
cal components).
