Overview

This document provides instructions for the Kenwood CCC20, a cooking food processor designed for domestic use. It combines the functions of a food processor with cooking capabilities, allowing users to prepare a wide variety of dishes from stews and curries to sauces, soups, and steamed meals.

Function Description:

The Kenwood CCC20 is a versatile appliance that supports both manual cooking and a range of pre-set programs.

  • Manual Cooking: This mode allows users to manually select temperature, time, and stirring functions.
    • Temperature Settings: Three temperature options are available: 65°C, 92°C, and 100°C.
    • Time Settings: The cooking time can be manually set from 1 minute to 3 hours. A quick-scroll feature is available by holding down the time adjustment buttons.
    • Stirring Functions: Three stirring options are provided to suit different recipes:
      • Continuous stir (constant slow speed, ideal for sauces).
      • Intermittent stir with short pauses (slow speed, approximately 2 revolutions every 5 seconds).
      • Intermittent stir with long pauses (slow speed, approximately 2 revolutions every 30 seconds, suitable for casseroles).
    • Chopping Function: This function can be used in short bursts for chopping or held down for longer periods to purée and blend ingredients. For cold ingredients, it operates intermittently for up to 2 minutes. For hot ingredients (after a heating cycle or when the bowl/ingredients are still hot), the speed is restricted to prevent splashing and gradually increases as the button is held down, operating for a maximum of 2 minutes. The filler cap must always be fitted when using the chopping function.
  • Pre-set Programs: The appliance offers dedicated programs for specific cooking tasks:
    • One Pot Programme (CCC200WH): Ideal for stews, casseroles, curries, and risotto. This program typically involves four stages: softening vegetables and meat, bringing ingredients to a boil and simmering, and additional cooking time or adding delicate ingredients.
    • Sauce/Soups Programme: Designed for various sauces and soups, usually involving two stages: softening vegetables and other ingredients, and adding liquid to bring to a boil and simmer.
    • Steaming Programme: Used for steaming vegetables, chicken, and fish. The temperature is fixed at 100°C, and stirring options are not available in this mode.

Important Technical Specifications:

  • Capacity: The cooking bowl has a maximum fill level of 1.5 litres, marked on the inside.
  • Power Supply: The appliance requires an electricity supply matching the specifications on its underside. It is a Class I appliance and must be earthed.
  • Temperature Range: Selectable temperatures include 65°C, 92°C, and 100°C. The steaming program is fixed at 100°C.
  • Safety Features:
    • Interlock mechanism: The appliance will not operate if the lid is not correctly fitted and locked. Excessive force on this mechanism can damage the appliance and cause injury.
    • Hot temperature warning: A red bar appears on the display if the bowl temperature exceeds 60°C.
    • Boil Dry protection: If the steaming program runs out of water, an "H2O" message will be displayed, and the unit will stop.
    • Automatic standby: If no selection is made within 5 minutes, the unit enters standby mode.
    • Keep Warm cycle: After a program finishes or the manual timer counts down to 0:00, the unit automatically enters a 30-minute Keep Warm cycle at 65°C with continuous stirring.

Usage Features:

  • Display Screen: The display shows selected temperature, time, stirring function, program stage, hot temperature warning, and cooking mode. A red warning triangle indicates if the lid is removed or not locked.
  • Tools/Attachments: The appliance comes with a stirring paddle, a processing blade, and a steaming basket.
    • The processing blade is used for chopping ingredients before cooking and for puréeing after cooking.
    • The stirring paddle is for gentle stirring without breaking down ingredients.
    • The steaming basket is for steaming various foods.
  • Ingredient Preparation: Raw meat and hard vegetables should be cut into small, even-sized pieces for uniform cooking. Browning meat and sautéing vegetables in a pan before adding them to the bowl is recommended for better flavour and colour, as the appliance softens vegetables but does not brown them.
  • Spatula: A spatula is provided to scrape down ingredients between program stages.
  • Lid and Filler Cap: The lid and filler cap must be correctly fitted and locked for operation. The filler cap should always be in place when using the chopping function. Care must be taken when removing the lid or filler cap due to escaping steam, especially when liquids are boiling.
  • Placement: The appliance should be placed on a level surface away from edges and not under overhanging cupboards.
  • Food Safety: Always ensure food is thoroughly cooked and piping hot before eating. Food should be consumed shortly after cooking or cooled rapidly and refrigerated.

Maintenance Features:

  • Cleaning:
    • Always switch off and unplug the appliance before cleaning.
    • Power Unit: Wipe with a damp cloth and dry. Never immerse in water or use abrasives.
    • Bowl Temperature Sensors: Wipe with a damp cloth and dry thoroughly. Do not use abrasives or sharp instruments.
    • Bowl, Stirring Paddle, Blade: Wash by hand and dry thoroughly. For stuck-on food, use the provided spatula, fill the bowl with warm soapy water, soak, and use a cleaning brush for stubborn deposits. Discolouration of the bowl will not affect performance.
    • Lid: Always remove the lid seal before cleaning. The seal can be removed by inserting a spoon between the black ring and the clear lid. After washing, clip the seal back into place, ensuring it is securely located to prevent leaks.
  • Dishwashing: Washable parts (bowl, lid and seal, stirrer, processing blade, steamer basket) are dishwasher safe and can be placed on the top rack. Avoid placing items on the bottom rack directly over the heating element. A short, low-temperature program (maximum 50°C) is recommended.
