Overview

This document describes the Kenwood MG450/MG470 mincer, a domestic appliance designed for processing various food items.

Function Description

The Kenwood mincer is primarily used for mincing raw or cooked meat, fish, nuts, vegetables, hard cheese, and dried fruit. It comes with different mincer screens (fine, medium, coarse) to achieve various textures for different recipes, such as shepherd's pie, meat loaves, puddings, and marmalade.

Beyond basic mincing, the appliance can be adapted for specific culinary tasks with additional attachments. The sausage filler allows users to create homemade sausages, using either natural skins or by rolling the mixture in breadcrumbs or seasoned flour. The kebbe maker is designed for preparing traditional Middle Eastern kebbe, which are deep-fried lamb-and-bulgur-wheat parcels with a minced meat filling.

The mincer operates with an on/off switch and a reverse switch. The reverse function is particularly useful for clearing clogged food material, preventing the machine from stalling or jamming during use.

Usage Features

Before first use, all packaging should be removed, and the parts should be washed according to the care and cleaning instructions. Any excess cord should be wrapped around the bracket at the back of the mincer for safety and neatness.

To assemble the mincer for use, the scroll is fitted inside the mincer body, followed by the cutter, ensuring the cutting side is outermost and properly seated to prevent damage to the mincer. A mincer screen is then selected based on the desired texture and fitted with its notch over the pin. Finally, the ring nut is loosely fitted.

When preparing food for mincing, it is crucial to remove all bones and rind from meat. For nuts, a few at a time should be fed, allowing the scroll to pick them up before adding more. Frozen food must be thoroughly thawed and cut into 2.5cm (1") wide strips. The pusher supplied with the machine must always be used to feed food gently through the feed tube; fingers or other utensils should never be inserted. Pushing too hard can damage the mincer. If the machine stalls or jams, the reverse switch should be depressed for a few seconds to release the clogged food, after which the machine should be unplugged and any clogged material removed.

For the sausage filler, if using skin, it should be soaked in cold water for 30 minutes. The chosen nozzle (large for thick sausages, small for thin sausages) is then placed under a running tap, and the skin is pulled onto it. The nozzle is held on the mincer, and the ring nut is screwed on. Food is pushed through using the pusher, and the skin is eased off the nozzle as it fills, taking care not to overfill. The skin can then be twisted to form individual sausages.

For the kebbe maker, the shaper is fitted into the mincer body, with its notch over the pin, followed by the cone. The ring nut is then screwed on. The prepared mixture is pushed through using the pusher and cut into desired lengths. For stuffed kebbe, the casing mixture is pushed through, cut into 8cm (3”) lengths, and one end is pinched to seal. Filling is then added to the other end (not too much), and that end is also sealed.

The attachment is secured to the power unit by first releasing the locking screw anticlockwise, sliding the attachment into the outlet, turning it both ways until it locks into place, and then turning the locking screw clockwise to secure it. The tray is then fitted, and a dish/cover is placed under the mincer to catch the processed food.

Maintenance Features

Regular care and cleaning are essential for the longevity and hygiene of the Kenwood mincer.

For the power unit, cleaning involves wiping it with a damp cloth and then drying it.

The mincer attachment requires more detailed cleaning. The ring nut should be loosened manually or with the provided spanner, and all parts should be dismantled. All parts of the mincer attachment must be washed in hot soapy water and then dried. It is explicitly stated that no part of the mincer attachment should be washed in a dishwasher, and soda solutions should never be used.

After cleaning, the screens should be wiped with vegetable oil and then wrapped in greaseproof paper. This prevents discolouration and rusting, preserving their quality. The power unit has storage space for two screens.

If the mincer is kept on the machine, the dish/cover can be placed on the tray to act as a dust-cover, protecting the attachment from dust and debris.

For convenient storage of the sausage and kebbe attachments, the lid of the pusher can be pulled off, and these attachments can be stored inside the pusher itself.
