Overview

The Nostalgia™ 4-Quart Electric Ice Cream Maker (model NWICM4LB) is designed to provide a homemade ice cream experience with modern convenience. This appliance allows users to create up to 4 quarts of ice cream per batch.

Function Description:

The ice cream maker operates by placing an aluminum canister, filled with pre-chilled ingredients, into the center of a wooden bucket. The bucket is then filled with ice and rock salt, and an electric motor churns the mixture until the ice cream reaches the desired consistency. The churning process typically takes about 30 minutes. The unit is designed for ease of use, with the electric motor doing the work of mixing and freezing.

Usage Features:

  • Preparation:
    • Before use, the Bucket, Canister, Lid, and Dasher should be washed with warm, soapy water. The Electric Motor should be wiped with a non-abrasive cloth; it must never be immersed in water.
    • The ice cream canister should be chilled until cold to the touch before adding ingredients.
    • Ice cream mixtures should be prepared according to recipes and chilled for at least 30 minutes prior to churning.
    • The canister should not be filled more than 2/3 full, as the mixture will expand during freezing.
  • Assembly:
    • Insert the Dasher into the Canister, ensuring it's aligned in the center.
    • Place the Lid on the Canister.
    • Place the Canister into the bottom center of the Bucket.
    • Slide the two rectangular ends of the Electric Motor into the corresponding holes on the rim of the bucket.
  • Churning Process:
    • Break ice into small, rough pieces (1-2 medium bags of ice are typically needed per batch).
    • Layer the ice in the Bucket around the Canister, starting with about 6 cups.
    • Evenly cover the ice with a thin layer of rock salt (about 1½ cups). Regular table salt or kosher salt can also be used. A total of 2-4 cups of salt (1-2 lbs) is usually required for proper freezing. More salt generally leads to better results.
    • Repeat layering ice and salt until it reaches the top of the Canister, stopping when the top of the mixture reaches the bottom of the drainage hole on the side of the Bucket to prevent leakage.
    • Additional ice and rock salt can be added if the ice melts down 2-3 inches during churning.
    • Plug the Electric Motor into an outlet to turn the unit on.
    • Stir and mix the salt and ice every 10-15 minutes, or as needed, while the ice cream maker is in use.
    • The motor should be turned off and unplugged after about 30 minutes of churning, or if the motor stops prematurely. If the motor stops, check for ice blockages, break them up, and restart.
  • Post-Churning:
    • Remove the Electric Motor while holding the Canister Lid to prevent it from floating.
    • Clear ice and salt from the top of the Canister and carefully wipe away any residue before removing the cover.
    • Remove the Dasher and scrape off excess ice cream.
    • Ice cream can be served immediately or transferred to a freezer-safe container for hardening. The Lid and Lid Cap are provided for storing the Canister in the freezer.
  • Helpful Tips:
    • Taste: Finished ice cream will be less sweet than the initial mixture; adjust sugar to taste. Artificial sweeteners can be used as a substitute (e.g., 1 packet = 2 tsp sugar).
    • Texture: To prevent ice crystals, do not stop the churning process until the ice cream is ready. If ice cream is hard or grainy, reduce rock salt in the ice water, as too much salt can cause rapid freezing and crystal formation.
    • Consistency: For a thicker, firmer consistency, remove the Dasher, place the Lid and Cap on the Canister, and place it in the freezer to harden. Alternatively, add more ice to the ice-salt mixture, cover with a towel, and let it sit. Insufficient salt can inhibit freezing, so add more if needed. Alcohol in recipes can also inhibit freezing; add it during the last few minutes of the cycle.
    • Jamming: If the Dasher jams or the motor stops, check for ice blockages in the Bucket and break them up. Ensure the ice cream consistency is not thicker than soft-serve. Avoid adding hard ingredients (like nuts or chocolate chips) until the churning process is complete to prevent the Dasher from getting stuck. Do not stop churning mid-process, as this can harden the ice cream and restrict Dasher movement.
    • Freezing Issues: If the mixture hasn't reached slush consistency or has thawed after 30 minutes, stop the process. Possible reasons include an insufficiently cold Canister (add more ice and salt) or a mixture that was too warm (ensure ingredients are chilled).

Maintenance Features:

  • Cleaning:
    • Always ensure the Electric Motor is off and the unit is unplugged before cleaning.
    • Wipe the Electric Motor with a slightly damp, non-abrasive cloth. NEVER immerse the Electric Motor in water or any other liquid.
    • Wash the Bucket in warm, soapy water to remove all salt water residue.
    • Wash the Canister, Lid, and Dasher in warm, soapy water and dry thoroughly. Do not replace the Lid until the Canister is completely dry.
    • Do not use harsh or abrasive cleaners.
    • The Canister and other parts are NOT dishwasher safe; hand wash only.
    • Do NOT freeze the Canister when it is wet.
  • Storage: When storing the appliance in an appliance garage or under a wall cabinet, always unplug the unit from the electrical outlet to prevent fire risks.

  • Do not let the cord hang over the edge of a table or counter, or touch hot surfaces.
  • Never leave the unit unattended while in use or plugged in.
  • Exercise extreme caution when moving an appliance containing hot food.
  • Always attach the plug to the appliance first, then plug the cord into the wall outlet. To disconnect, turn any control to "off," then remove the plug.
  • Never operate the unit dry; always have ice cream mixture inside the container when plugged in.
  • Do not use hot oil or liquids in the Bucket. Always chill the mixture before churning.
  • Do not put hands or any foreign objects into the appliance while it is plugged in and operating.
  • Avoid contact with moving parts; keep hands, hair, clothing, spatulas, and other utensils away during operation.
  • Do not operate the appliance in an appliance garage or under a wall cabinet without unplugging it when not in use.

Warranty:

Nostalgia Products LLC provides a one-year warranty from the date of original purchase, covering defects in material and workmanship under normal home use, provided the product is operated and maintained according to instructions. The warranty is valid only for the original retail purchaser with the original sales receipt as proof of purchase. It does not cover normal wear, shipping damage, mishandling, misuse, accidents, alterations, improper replacement parts, or other than ordinary household use. The warranty is valid only in the USA and Canada.
