Steamed filet of salmon on bed
of leeks with garlic mousse
(Recipe for persons)
For the salmon:
→ 350 gr. leeks
→ 4 filets of salmon, 125 gr. each
→ juice of ½ lemon
→ salt, pepper from the mill
→ 2 Tbs. olive oil
→ 1 tsp. finely chopped dill
For the garlic mousse:
→ 40 gr. butter
→ 1 garlic clove, unpeeled
→ 1 egg yolk
→ 100 ml dry white wine
→ salt, pepper from the mill

Preparation:
Remove the green ends of the leeks,
halve the leeks lengthwise, rinse thor-
oughly and cut into fine strips. Drizzle
the salmon with lemon juice and let
stand for approx. minutes. Pat it dry,
salt and pepper it.
Heat up the olive oil in the roast-
er and brown the fish on all sides
shortly. Remove it, put it into the high
steaming insert and sprinkle it with
dill. Put the leeks next to the salmon.
Salt it and pour l of water into the
roaster. Put in the steaming insert,
close the lid, put in the thermometer
and bring the liquid to a boil. As soon
