Honey-ricotta flan with chilli fruit
salad and orange syrup
(Recipe for persons)
For the flan:
→ 2 eggs (medium-size)
→ salt
→ 40 gr. soft butter
→ 75 gr. blossom honey
→ 1 package vanilla sugar
→ zest of 1 organic lemon
→ 250 gr. ricotta
→ 2 Tbs. vanilla pudding powder
For the chili fruit salad:
→ 1 mild red chili pepper or 1 tsp.
chilli flakes
→ 15 gr. fresh ginger
→ 200 ml pineapple juice
→ 4 Tbs. brown sugar
→ 1 tsp. pink pepper berries
→ 1 tsp. cornstarch
→ 200 gr. pineapple
→ 2 kiwis
→ 3 small nectarines
→ 1 banana
→ 1 large orange (organic)
→ 4 kumquats
In addition:
→ 4 ramekins
→ butter and sugar for the ramekins

Preparation:
To prepare the flan, separate the eggs.
Beat the egg whites very stiff, adding
a pinch of salt. Stir up the honey, va-
nilla sugar and lemon zest. Stir in the
