Overview

The Waldorf 800 Series Gas Pasta Cooker is a heavy-duty, gas-fired appliance designed for commercial high-production pasta cooking. It is available in single-tank models (40 liters capacity) and is designed to operate on LPG (Propane) or Natural Gas. The boiling medium is contained within a heavy-gauge stainless steel tank, heated by one infra-red surface burner located beneath the tank. This pasta cooker features an Over Temperature Safety Cut Out System and Full Flame Failure Safety Controls for enhanced safety. Its open tank design simplifies cleaning.

(*) Burner operating pressure is measured at the upper test point (Supply Pressure) on the gas control valve, with the burner operating at 'High Flame' setting. Operating pressure is ex-factory set and should not be adjusted, except during gas conversion.

Water Supply Requirements:

  • Cold water supply connection: R 1/2" BSP, located 50mm from LH side, 556mm from rear, and 151mm from floor.
  • Maximum water supply pressure: 550 kPa (80psi).
  • Minimum water supply pressure: 150kPa (22psi).
  • Tank maximum capacity: 40 liters of water.

Drainage Connection:

  • Water is drained through a valve behind the front control panel.
  • A waste water tundish (minimum 127mm (5") major diameter) must be fitted below the drain outlet.
  • Drain piping must be suitable for conveying boiling water.
  • Drain connection: R1" BSP drain / overflow.

Usage Features:

Controls:

The PC8140G features a Gas Control Knob with the following settings:

  • OFF Position
  • PILOT Burner
  • HIGH Flame
  • LOW Flame A Piezo Igniter (behind the access door) is used for lighting, and a Water Control Valve manages water flow.

Operation Guide:

  1. Before Use:
    • Ensure gas supply is 'On'.
    • Check that no foreign articles are in the tank.
    • Warning: Do not leave unattended. Do not overfill above the upper fill level mark or allow water to fall below the lower level mark. Do not use flammable solvents or cleaning aids near a hot pasta cooker.
  2. Filling the Tank:
    • Check the drain valve behind the door is closed and locked.
    • Turn water supply 'ON' and open the appliance water valve to fill the tank.
    • Water level is maintained by an overflow at the front.
    • During cooking, adjust the water tap to provide a continuous flow out of the overflow to maintain the correct water level and provide a skimming/flushing effect to prevent residue buildup.
    • Warning: Danger of fire exists if the water level is below the minimum 'LOW' indicated level. Never operate the appliance empty.
  3. Lighting Pilot Burner:
    • Ensure the tank is full of water and the gas supply is 'On'.
    • Depress and rotate the gas control knob to 'PILOT' position and hold.
    • Open the front access door and depress the piezo igniter until the pilot burner ignites.
    • Continue holding the gas control knob for 10-15 seconds, then release. The pilot burner should remain alight.
    • If the pilot does not ignite, repeat the process.
    • Caution: Do NOT ignite the burner if the tank is empty (No Water).
  4. Lighting Main Burner:
    • Depress and rotate the gas control knob to 'High Flame'. The main burner will ignite automatically off the pilot burner.
    • The gas control knob can be regulated between 'High Flame' and 'Low Flame' to adjust cooking temperature.
    • It takes approximately 30 minutes to heat water from 20°C to 100°C.
    • Important: The use of rock salt is NOT permitted. Never add salt to cold water; always ensure the water is boiling before adding salt. Clean the pan regularly after each use.
  5. Turning 'OFF' the Pasta Cooker:
    • To 'Pilot' Position: Depress and rotate the gas control valve clockwise to 'Pilot'. The main burner will extinguish, but the pilot will remain alight.
    • To 'Off' Position: Depress and rotate the gas control valve fully clockwise to 'Off'. The pilot burner will extinguish.

Installation Requirements:

  • Installation must be carried out by qualified service persons only, complying with local, gas, health, and safety requirements.
  • The appliance must be installed with sufficient ventilation.
  • Components with protected adjustments (e.g., paint sealed) should only be adjusted by an authorized service agent.
  • The appliance is fitted with adjustable feet for leveling.
  • A manual isolation valve must be fitted to the individual appliance supply line.
  • Do not obstruct or block the appliance flue. Never directly connect a ventilation system to the appliance flue outlet.

Clearances:

  • Only non-combustible materials can be used in close proximity.
  • Minimum 600mm clearance at the front for operation, drainage, and servicing.
  • Combustible Surface: Left/Right Hand Side: 50mm, Rear: 50mm
  • Non-Combustible Surface: Left/Right Hand Side: 0mm, Rear: 0mm

Maintenance Features:

General Cleaning and Maintenance:

  • Clean the pasta cooker regularly to maintain performance and efficiency.
  • Warning: Always turn 'Off' the gas supply before cleaning. The appliance is not waterproof; do not use water jet spray to clean.
  • Caution: If cleaning detergents enter inner parts, rusting may occur, leading to premature failure.
  • Do NOT:
    • Clean with high-pressure water or steam jets.
    • Pour water directly over the appliance.
    • Use wire brushes.
    • Use combustible liquids.
    • Use harsh abrasive detergents, sharp scrapers, strong solvents, caustic detergents, chloric, or bleaching detergents.
    • Use saline or sulphuric acid preparations for descaling.
  • Ensure protective gloves are worn during cleaning.
  • Ensure all detergent/cleaning material is completely removed after cleaning to prevent rust.

Draining and Cleaning:

  1. Opening the Drain Valve:
    • Lift the locking slide on the valve handle to release.
    • While holding the slide, rotate the handle anticlockwise to open the valve.
    • When closed, slide the locking slide down to prevent accidental opening.
  2. After Each Use:
    • Clean the interior of the pan with a mild detergent and hot water solution using a soft cloth or bristled brush.
    • Dry thoroughly with a dry clean cloth.
  3. Daily Cleaning:
    • Warning: Hot water will scald; do not rush this job. Do not attempt to move the pasta cooker when full of water.
    • Drain and refill water regularly.
    • When the tank is empty, check the drain valve for particles or residue and clean with a stiff nylon brush. Do not use wire brushes or metal rods.
    • If obstructions cannot be removed with a brush, use a wooden probe.
    • Clean the control panel with a damp cloth lightly moistened with a mild detergent and hot water solution, then dry thoroughly.
    • Clean the interior and exterior of the pasta cooker and pasta/noodle baskets using a mild detergent and hot water solution, then rinse with fresh water and dry thoroughly.
    • Ensure the drain valve is closed after cleaning.

Weekly Cleaning:

  • If usage is very high, perform weekly cleaning more frequently.
  • Follow general cleaning guidelines, ensuring protective gloves are worn.
  • Stainless Steel Surfaces: Clean with hot water, mild detergent, and a soft scrubbing brush. Baked-on deposits may require a quality stainless steel cleaner or wool. Always apply cleaner when the appliance is cold and rub in the direction of the grain. Dry and polish all components.

Periodic Maintenance:

  • All maintenance operations must be carried out by a qualified service person.
  • Regular and thorough cleaning, along with periodic checks and adjustments of controls and mechanical parts by a qualified service person, are recommended every 6 months.
  • If the appliance is not used for long periods, close the gas shut-off valve and clean thoroughly.
  • The appliance and gas exhaust flue should be inspected and cleaned by an authorized service person at least every 6 months.

Fault Finding:

The manual provides a fault-finding guide for common issues such as:

  • Pilot burners not igniting or staying alight (e.g., low gas supply, loose thermocouple connections, pilot orifice blockage).
  • Pilot burner delay in ignition of main burners (e.g., incorrect operating pressure, pilot flame adjustment).
  • Main burners not igniting or igniting with difficulty (e.g., insufficient gas pressure, blocked main injector, faulty gas valve). For unresolved issues, contact an authorized service agent, providing the Model Trade Name and Serial Number.

Gas Conversion and Specifications:

  • Conversions must only be carried out by qualified persons.
  • All connections must be checked for leaks after conversion.
  • Adjustments to protected components must be done according to instructions and re-sealed.
  • The gas regulator supplied is convertible between Natural Gas and LP Gas, but its outlet pressure is fixed ex-factory and is NOT to be adjusted.
  • Gas type labels must be replaced after conversion.
  • Conversion kits are available for different gas types and regions.
