Classic Bubble Wafes
Makes 3 wafes
• 1 1/8 cup all-purpose our
• 1 teaspoon baking powder
• 1 tablespoon custard powder
• ¼ cup tapioca starch
• 2 eggs
• 1 1/8 cup sugar
• 2 tablespoons evaporated milk
• 1 1/8 cup water
• 2 tablespoons vegetable oil
• 1 tablespoon vanilla extract

1. In a bowl mix the plain our, baking powder, custard powder and topica starch. Set aside.
2. In a separate bowl, beat the eggs and mix in the white sugar.
3. Gradually add in the evaporated milk and water to the egg mixture.
4. Add the our mixture (1) into the egg mixture (2). Stir thoroughly to make a smooth batter.
It is important that it does not form lumps.
5. Add the vanilla extract and the vegetable oil and mix well.
6. Cover the batter and refrigerate for at least an hour.
7. Take the bubble wafe batter out from the fridge 30 min prior to using; allowing it to return
to room temperature.
8. Pour some batter into the Bubble Wafe maker. The longer you cook the wafe, the crispier
it will be.
9. Once baked, place it on a cake cooling rack to cool or gently shape it into a cone and allow
it to cool completely in the cone rack.
10. You can ll them with ice cream, fruits or anything you like. The Bubble Wafes are best
served in a tall glass or small paper cone.
Chocolate Bubble Wafe
To make chocolate wafes, use the Classic Bubble wafe recipe and add 2 tablespoons
ofcocoapowder.
Matcha Bubble Wafe
Makes 4 wafes
• 1 cup all-purpose our
• 1⁄3 cup sugar
• 1⁄4 cup corn our
• 2 teaspoon baking matcha
• 1 teaspoon baking powder
• 1⁄4 cup instant custard powder (optional
but recommended)
• Pinch of salt
• 3 eggs
• 1 teaspoon vanilla extract
• 1⁄2 cup evaporated milk
• 1⁄2 cup water
• 2 tablespoons vegetable oil
1. In a bowl, mix together the all-purpose our, corn our, baking matcha, baking powder,
salt, and custard powder, if using.
2. In another bowl, whisk the eggs and sugar. Add the vanilla and, while still whisking,
incorporate the evaporated milk, water, and oil.
3. Mix the liquid with the dry ingredients until completely combined. Refrigerate the mix for
an hour. Before use, bring the batter out of the fridge for a few minutes.
4. Once baked, roll your wafes into cones and place into the cone rack to cool or cover them
with your favorite toppings. Fresh strawberries and chocolate sauce are a classic.
Bubble Sandwich Bread
For the ultimate Bubble sandwich bread, use the Classic Bubble wafe recipe but add less sugar.
What you put in-between is up to you. Be creative and use fried chicken, scrambled eggs, bacon, etc
