Overview

This document is an owner's manual for the Blackstone Pizza Oven with Mobile Cart, Model: 6824.

Function Description:

The Blackstone Pizza Oven with Mobile Cart is an outdoor cooking appliance designed primarily for baking pizzas. It operates on LPG (liquefied petroleum gas) and features a rotating pizza stone for even cooking. The appliance includes a mobile cart for portability and ease of use in outdoor settings. It is intended exclusively for domestic use and is not suitable for commercial cooking or as a heater. The oven's design allows for precise temperature control, enabling users to cook various types of pizzas, from fresh dough to frozen, as well as other items like cookies.

Important Technical Specifications:

  • Model: 6824
  • Fuel Type: LPG (Liquefied Petroleum Gas)
  • LPG Cylinder Requirements: Only a 20 lb (9 kg) LPG cylinder constructed and marked in accordance with U.S. Department of Transportation (DOT) or CAN/CSA-B339 standards. The cylinder must be marked "propane," arranged for vapor withdrawal, and have a Type 1 valve outlet with a safety relief valve and a UL listed Overfill Protection Device (OPD) with a unique triangular hand wheel.
  • Electrical Power (for motor): The motor can be powered by either a power cord (AC supply) or two (2) D batteries. AAA batteries are required for the ignitor.
  • Minimum Ambient Operating Temperature: 0°F (-18°C).
  • Clearances from Combustible Material: A minimum of 36 inches (1 meter) from the sides and back of the appliance to combustible construction.
  • Installation Standards: Must conform with local codes or, in their absence, ANSI Z223.1/NFPA 54, CSA B149.1, or CSA B149.2.
  • Grounding: Must be electrically grounded in accordance with local codes or NFPA 70 Canadian Electrical Code, Part I. Requires a Ground Fault Interrupter (GFI) protected circuit and a 3-prong grounding plug.
  • Pizza Stones: The oven includes two pizza stones, which are interchangeable.
  • Thermometer: Built-in thermometer measures air temperature below the rotating stone. An infrared thermometer (not provided) is recommended for the most accurate stone temperature reading.

Usage Features:

  • Mobile Cart: The appliance comes with a mobile cart equipped with caster wheels, allowing for easy movement and positioning in outdoor spaces. The wheels can be locked for stability.
  • Rotating Turntable: A motor-driven rotating turntable ensures even cooking of pizzas. The motor can be powered by either an AC power cord or D batteries.
  • Temperature Control: The pizza oven features a control knob and an adjustable regulator (red knob) to manage the temperature. The manual provides a "Quick Start Guide" for initial temperature settings (high for 12-15 minutes, then low) and suggests target temperatures for fresh dough pizza (650°-700°F or 340°-370°C).
  • Ignition System: Equipped with a Thermocouple Sure-Start Ignition system, requiring one AAA battery for operation. The ignition process involves turning on gas, pushing and turning the control knob, and holding for 10-20 seconds for the thermocouple to heat up.
  • Outdoor Use Only: The appliance is strictly for outdoor use and must not be operated inside buildings, garages, or any other enclosed area. It should not be installed in or on a boat or recreational vehicle.
  • Sheltered Outdoor Areas: Guidelines are provided for safe use in partially sheltered outdoor areas, specifying requirements for open sides and overhead cover.
  • Safety Warnings: Emphasizes critical safety warnings, including not operating unattended, keeping flammable liquids away, proper handling of LPG cylinders, and precautions against gas leaks and fires.
  • Handle Design: Handles are provided for moving the appliance, but users are warned that handles can get hot during use and should not be touched without protective gloves.
  • Tabletop Use Option: The oven body can be detached from the mobile cart and used as a tabletop appliance by removing securing screws and attaching the provided feet.
  • Pizza Oven Door: The oven door is designed to be placed over the pizza chamber opening when the oven is not in use; it should not be used while the oven is in operation.

Maintenance Features:

  • Burner Cleaning: Detailed instructions are provided for cleaning the burner assembly to prevent blockages from spiders and insects, which can cause fires. This involves removing the turntable, using compressed air to clear scallops, removing the hex nut and burner cap, and cleaning the inside of the burner with a narrow bottle brush and compressed air.
  • Pizza Stone Cleaning: The pizza stones should be cleaned by setting the oven to HIGH for 15-20 minutes to burn off residue, then flipping them over once cooled to use the cleaner side. Soap should not be used on the cooking stone.
  • Appliance Body Cleaning: The appliance body should be washed with warm soapy water and wiped dry with a non-abrasive cloth. Abrasive pads, Citrisol, abrasive cleaners, or concentrated cleaners should not be used.
  • Leak Testing: Instructions for leak testing LPG cylinders, valves, hoses, and regulators using a mild soap and water solution are provided. Users are warned not to use the appliance if leaks are detected and to contact an LPG supplier or fire department.
  • Hose and Fittings Inspection: Annual checking and tightening of metal fittings are recommended. The fuel supply hose should be kept away from heated surfaces and checked for cuts or wear before each use.
  • Storage: The appliance should be allowed to cool to 115°F (45°C) before moving or storing. Indoor storage is only permissible if the gas supply is disconnected and the LPG cylinder is removed. Covering the appliance when stored outdoors is recommended.
  • Troubleshooting Guide: A comprehensive troubleshooting section addresses common issues related to ignition (burner will not ignite, ignitor wire misalignment) and gas flow (yellow or irregular flames, low flame, regulator issues), providing possible causes and solutions.
