SAFETY
This appliance is not intended for use by persons (including
children) with reduced physical, sensory, or mental
capabilities.
Never clamp down the lid when brewing, the clamps
are only to be used with an optional T500 compatible
distilling column (not included).
This appliance should not be left unattended during
operation.
The appliance should be operated on a flat stable
surface, NEVER on an incline.
The unit must be plugged into a GFCI protected plug.
Do not move when hot to prevent scalding.
Be aware that the walls of the Mash & Boil are hot
when in operation and could cause burns.
If the supply cord or plug is damaged, it must be
replaced by a qualified electrician in order to avoid a hazard.
DO NOT IMMERSE IN WATER - The base of the unit
is not waterproof and should not be immersed for cleaning.
The unit must be unplugged before cleaning.

Overview

The Brewer's Edge® Mash & Boil Series 2 (Item B27) is an appliance designed for home brewing and distilling. It allows users to perform mashing, sparging, and boiling processes for brewing, and can also be adapted for distilling with an optional column.

Function Description:

The primary function of the Brewer's Edge® Mash & Boil is to facilitate the brewing process, specifically mashing, sparging, and boiling. It is capable of handling either 2½ gallon or 5 gallon batches. The unit heats water to precise temperatures for strike water and sparge water, and then boils the wort. It features a digital control panel for setting temperature and timer functions. For mashing, users calculate strike water based on grain weight (0.30 gallons per pound of grain, with a minimum of 2 gallons). The unit heats the strike water to a target temperature (default 162°F, which results in a mash temperature of 152°F to 154°F). After mixing in crushed grain, the mash proceeds for about an hour. Following mashing, sparging is performed by lifting the mashing basket and adding hot sparge water (calculated as 0.75 times the strike water amount, heated to 168°F) until the target volume (5½-6 gallons) is reached. Finally, the unit boils the wort for about 1 hour.

Beyond brewing, the Mash & Boil Series 2 is "distilling ready." The lid is designed to accommodate a standard Turbo 500 type distilling column (not included). To use for distilling, the handle is unscrewed to reveal a 47mm hole where the column is installed. Clamps on the lid are used to seal it for distilling, but these clamps should never be used during brewing to avoid steam burns.

Important Technical Specifications:

  • Batch Size: 2½ gallon or 5 gallon.
  • Maximum Grain Capacity: 16 pounds for a 5-gallon batch.
  • Lid: Distilling ready with a removable handle, revealing a 47mm hole for a distilling column.
  • Heating Element: Capable of 1600 W for heating.
  • Temperature Control: Digital control with settable temperatures for strike water (default 162°F), mash (150°F), sparge water (168°F in a separate vessel), and boil (217°F-218°F).
  • Safety: Requires plugging into a GFCI protected outlet.
  • Construction: Stainless steel body, faucet, and side handles.

Usage Features:

  • Digital Control Panel: Includes an LCD display, ON/OFF switch, and Power Adjust Switch. Users can set desired temperatures and a delayed start time (1 to 23 hours).
  • Strike Water Calculation: Guideline of 0.30 gallons of water per pound of grain, minimum 2 gallons.
  • Sparge Water Calculation: 0.75 times the strike water amount.
  • Mashing Basket: Included for holding grains during mashing and sparging. It has legs that can be set on an upper wire support for draining during sparging.
  • Small Batch Adapter (Optional): Item J11, recommended for 2½ gallon batches or when using 7 pounds or less of crushed malt to cover side perforations and prevent splashing.
  • Wort Chiller (Recommended): For cooling wort after boiling.
  • Safety Guidelines:
    • Never clamp the lid when brewing to avoid steam burns. Clamps are only for distilling.
    • Do not leave unattended during operation.
    • Operate on a flat, stable surface.
    • Do not move when hot to prevent scalding.
    • Walls become hot during operation; exercise caution to prevent burns.
    • If the supply cord or plug is damaged, it must be replaced by a qualified electrician.
    • Intended for home use only, not commercial use.

Maintenance Features:

  • Cleaning:
    • Always unplug before cleaning.
    • Clean the interior with a scrub sponge and rinse with water.
    • Flush the valve with warm water.
    • DO NOT IMMERSE THE UNIT IN WATER; the base is not waterproof. Protect the bottom from water contact.
    • DO NOT REMOVE THE VALVE FOR CLEANING, as this will void the warranty and may cause leaks. Cleaning the valve by flushing with water is sufficient, as the heat of the next boil will sanitize it.
  • Error Codes and Reset Button:
    • ER1 (Thermostat error): Usually caused by the red thermostat cable plug coming loose from the top left corner of the internal power board.
    • ER4 (Thermostat overheating protection): Can occur if the heating element and thermostat are covered by a hop or grain bag, trapping heat, or due to heavy trub deposits from fine grain crush, malt extract, or honey. To reset, unplug the unit and press the reset button on the bottom center of the unit.
