Overview

The CucinaPro Cavatelli Maker (model 530) is a manual kitchen appliance designed to create authentic homemade cavatelli pasta. This device allows users to make fresh pasta from scratch, offering a hands-on approach to Italian cooking.

Function Description:

The primary function of the Cavatelli Maker is to transform prepared pasta dough into cavatelli shapes. The device features rollers that process strips of dough, shaping them into the characteristic ridged, shell-like form of cavatelli. It is operated manually with a hand crank, requiring the user to guide the dough strips into the rollers while turning the handle. The machine is designed to be clamped securely to a table or dough board during use, ensuring stability and ease of operation.

Usage Features:

To use the Cavatelli Maker, the dough must first be prepared according to one of the provided recipes (Basic Cavatelli, Ricotta Cheese Cavatelli, Potato Cavatelli, or Spinach Cavatelli). The dough should be rolled to a thickness of approximately 3/8" inch and then cut into strips that are about 1/2" inch to 3/4" inch wide. It is crucial that the dough strips are not too wide, as this can cause the cavatelli to get stuck or become misshapen as they pass through the rollers.

Before inserting the dough, the rollers should be floured generously. Each dough strip also needs to be floured generously, and one end of the strip should be pinched flat to facilitate insertion into the rollers. The user then turns the hand crank with one hand while guiding the dough strip into the rollers with the other. A plate, bowl, or baking pan can be placed underneath to catch the freshly made cavatelli.

An important tip for optimal results is to keep the dough 1/4" from the side of the machine to prevent clogging and misshapen pasta. The dough should be 1/2" - 3/4" in width, floured, and fed into the center of the rollers. If the dough sticks to the machine, it indicates that the dough is too soft; in this case, more flour should be added and kneaded into the dough, or the strips should be allowed to dry slightly.

Once made, the cavatelli can be cooked immediately, refrigerated for later use, or frozen. Cooking instructions are provided for both fresh and frozen cavatelli. Fresh cavatelli typically cook in about 5 minutes in boiling water, while frozen cavatelli require an additional 5 to 10 minutes and can be cooked without thawing. The manual also includes instructions for baking cavatelli, suggesting preheating the oven to 400°F, placing cavatelli in a greased baking dish, covering with sauce, and baking for 15 to 20 minutes.

Recipes:

The manual provides several recipes for different types of cavatelli:

  • Basic Cavatelli:

    • 6 cups sifted all-purpose flour
    • 1 1/2 cups hot water
    • 3 tablespoons shortening
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
  • Ricotta Cheese Cavatelli:

    • 4 cups sifted all-purpose flour
    • 1 teaspoon salt
    • 1 large egg
    • 1/4 cup milk
    • 1 pound ricotta cheese
  • Potato Cavatelli:

    • 6 cups sifted all-purpose flour
    • 3 boiled potatoes
    • 3 tablespoons shortening, oil, or butter
    • 1 egg
    • Preparation Note: Mash boiled potatoes, add melted shortening and flour, mix, and knead on a floured surface until smooth.
  • Spinach Cavatelli:

    • 1/4 pound cooked spinach
    • 3 large eggs
    • 1/4 cup butter (1/2 stick)
    • 3 cups flour
    • 1/2 teaspoon salt
    • Preparation Note: Drain cooked spinach, pressing out water, then chop fine. Sift flour and salt into a bowl, make a well, and add spinach, eggs, and butter.

For all recipes, the general dough preparation involves sifting flour into a mixing bowl, making a well for other ingredients, pressing and kneading the dough until it comes together, dusting with flour if sticky, and kneading for about 2 minutes. The dough should then be cut in halves, covered with a dampened cloth, and allowed to rest for at least 10 minutes before being rolled and cut into strips for the machine.

Maintenance Features:

Proper maintenance is essential to ensure the longevity and performance of the Cavatelli Maker. After each use, the machine should be allowed to air dry. A brush, cloth, or canned air should be used to clean off any flour or dried dough particles from the rollers and other parts.

Crucially, the Cavatelli Maker should NEVER be immersed in water or any other liquid, and it is NOT dishwasher safe. Failure to adhere to these cleaning instructions can damage the machine.
