CLASSIC APPLE PIE
Everyone needs a fail-proof apple pie recipe –
here is our favourite to share with you and your family.
1 RECIPE PÂTE BRISÉE DOUGH
(PAGE 52)
4 LARGE APPLES (GOLDEN
DELICIOUS, GINGER GOLD,
OR PINK LADY TEND TO BE THE
TASTIEST), PEELED, CORED,
AND HALVED
JUICE OF ½ MEDIUM LEMON
½ TEASPOON (2 ML) GROUND
CINNAMON
PINCH GROUND NUTMEG
¼ TEASPOON (1 ML) KOSHER SALT
1 TEASPOON (5 ML) PURE
VANILLA EXTRACT
½ CUP (125 ML) GRANULATED
SUGAR
EGG WASH (1 LARGE EGG
LIGHTLY BEATEN WITH A
TEASPOON OF WATER)
Makes one 10-inch (25 cm) pie, 8 to 12 servings
1. Preheat oven to 450°F (230°C) with the rack in the
lower third of the oven.
2. Roll out dough to

8-inch (0.3 cm) thick circle and fit
into a 10-inch (25 cm) pie plate. Chill in refrigerator
for about 20 minutes.
3. While dough is chilling, prepare the filling. Insert the
slicing disc into the work bowl of the food processor.
Stand the apple halves upright in the feed tube and
slice. Transfer to a large bowl and toss gently with
the lemon juice, spices, salt, vanilla and sugar.
4. Using a fork, prick the chilled dough evenly all over
but make sure not to go entirely through the dough.
Transfer the apple mixture into the pie shell.
5. Roll out the remaining dough into a 10-inch (25 cm)
disc. Brush the outer rim of the pie shell with the
egg wash. Press the dough disc on top of the filled
pie, pressing down the sides to seal. Using a paring
knife, trim any excess dough and discard (or save for
another use). Cut four ½-inch (1.25 cm) vents in the
center of the top of the pie crust (in a circular
pattern, similar to a clock’s 12, 3, 6 and 9 o’clock
positions). Brush the top with the remaining egg
wash, and sprinkle with granulated sugar.
6. Bake the pie for 15 minutes, then reduce the
temperature to 350°F (180°C) and continue to bake
until golden brown, another 30 to 35 minutes. Let
the pie rest on a cooling rack at least 40 minutes
before serving.

be free of defects in materials or workman-
ship under normal home use for 12 months
from the date of original purchase.
This warranty covers manufacturer’s
defects including mechanical and
electrical defects. It does not cover
damage from consumer abuse, unauthor-
ized repairs or modifications, theft,
misuse, or damage due to transportation
or environmental conditions. Products with
removed or altered identification numbers
will not be covered.
This warranty is not available to retailers or
other commercial purchasers or owners.
If your Cuisinart product should prove to be
defective within the warranty period, we will
repair it or replace it if necessary. For
warranty purposes, please register your
product online at www.cuisinart.ca to
facilitate verification of the date of original
purchase and keep your original receipt for
the duration of the limited warranty. This
warranty excludes damage caused by
accident, misuse or abuse, including
damage caused by overheating, and it
does not apply to scratches, stains,
discolouration or other damage to external
or internal surfaces that does not impair
the functional utility of the product. This
warranty also expressly excludes all
incidental or consequential damages.
Your Cuisinart product has been
manufactured to the strictest specifications
and has been designed for use only in
120 volt outlets and only with authorized
accessories and replacement parts. This
warranty expressly excludes any defects or
damages caused by attempted use of this
unit with a converter, as well as use with
accessories, replacement parts or repair
service other than those authorized by
Cuisinart.

within the warranty period, do not return
