Ingredients:

long strips, about 1 inch wide
2 cups panko bread crumbs
4 tbsp grape seed or vegetable oil
1 ½ tsp ground cumin
1 ½ tsp sea or kosher salt
freshly ground black pepper, to taste
baja fish

Directions:
1. Mix the panko with oil. Rub between your hands to coat the oil onto the panko. Add the salt, cumin
and black pepper and mix into the panko.

4. In a small sauté pan over medium heat, add oil and sauté the onions and peppers with a pinch of salt.

6-8 (8”) corn tortillas
2 tsp vegetable oil
¼ cup red onion, sliced thin
1 red bell pepper, sliced thin
1 avocado, sliced thin
1 lime, cut into wedges
2 tbsp cilantro, chopped
1 jalapeño, sliced thin (optional)
sour cream (optional)

