Overview

The East Oak 30" Digital Electric Smoker Pro (Model: PES23001) is an outdoor household appliance designed for low-temperature smoking, offering a convenient and controlled cooking experience. It is not intended for commercial use or as a heater.

Function Description:

This digital electric smoker is designed to cook food using wood chips to impart smoke flavor. It features a digital control board that displays cooking temperature and time, allowing for precise control over the smoking process. The smoker includes a heating element, a smoker box for wood chips, a water pan to retain moisture, and multiple cooking racks. It is equipped with a meat probe to monitor internal food temperature for accurate cooking. The unit also has a chamber light for visibility during operation and can be controlled via a remote control.

  • Temperature Setting Range: 100°F - 275°F (38°C - 135°C)
  • Meat Probe Temperature Range: 32°F - 302°F (0°C - 150°C)
  • Internal Capacity: Accommodates 2 turkeys, 4 pork forelegs, 4 ribs, or 6 chickens.
  • Barbecue Area: 4 layers of chrome-plated grill nets, totaling 725 square inches.
  • Wood Chip Loading Box: Side-loading design, sustains smoke for 4-6 hours without frequent refilling.
  • Insulation: Double-layer iron plate + internal foam filling for heat retention and smoke isolation.
  • Power Supply: Requires a GFI (Ground Fault Interrupter) protected circuit and a properly grounded outdoor outlet. Not for use with indoor circuits.
  • Extension Cord (if necessary): Must be an outdoor type with a 3-prong grounding plug, rated for 15 amperes or more, UL approved (W-A tag), and the shortest length required. DO NOT use 16 or 18 gauge extension cords or connect multiple extension cords.
  • Remote Control: Uses 2xAAA batteries.

Usage Features:

  • Digital Control Panel: Displays temperature settings, actual chamber temperature, cooking time, countdown, and fault codes.
  • Power Button: Turns the smoker on and off.
  • Temp Button: Adjusts cooking temperature. Press once to initiate temperature selection (default 210°F/99°C), use Up/Down buttons to adjust, press again to fix setting.
  • Time Button: Adjusts cooking time. Press once to initiate time selection (default 00:00), use Up/Down buttons to adjust hours then minutes, press again to start cooking.
  • Meat Probe Button: Press and hold to display internal meat temperature; release to return to set temperature/time display.
  • Up/Down Buttons: Used to add or subtract from time/temp values.
  • Chamber Light: On/off button; automatically turns off after ten minutes.
  • Temperature Unit Switch: To switch between °F and °C, simultaneously press the UP and DOWN buttons for 3 seconds after powering on and PRIOR to any operation. This cannot be changed once settings are adjusted.
  • Automatic Shut-off: The unit will automatically shut down and the display screen will turn off if no operation is performed for 12 hours.
  • Preheating: Always preheat the smoker for 30-45 minutes (to max temp) before cooking, with wood chips and water added.
  • Food Safety: Always cook food to USDA minimum required internal temperatures. Never cook for time only. Use a food thermometer to ensure doneness.
  • Wood Chips: Designed for wood chips only; do not use wood chunks, pellets, or charcoal. Dry or pre-soaked chips can be used (dry chips burn faster, produce more intense smoke; pre-soaked burn slower, less intense smoke).
  • Water Pan: Used to retain moisture. Fill with warm water to the max line before preheating. Do not overfill, remove, or refill during cooking. Ensure no liquid contacts the heating element.
  • Door Latch Adjustment: The door latch can be adjusted to tighten the door seal and minimize smoke loss.

Maintenance Features:

  • First-Time Use (Seasoning): Before first use, wipe down interior surfaces with mild detergent and water, then air dry. Apply a light coating of cooking oil (spray or on a cloth) to the inside surfaces (excluding smoker box, heating element, grease tray, water tray). Ensure water pan is in place (without water) and smoker box is in place (without wood chips). Open the vent fully. Power on, set to 275°F (135°C) for two hours, then power off and cool.
  • Cleaning:
    • Clean rack supports, racks, water bowl, and drip pan with mild dish detergent; rinse and dry thoroughly.
    • Clean the interior frame, door glass, meat probe, and exterior with a damp cloth only. Do not use cleaning agents. Dry thoroughly.
    • Clean the door seal and corresponding inside seam with a damp cloth after each use.
    • Do not clean smoker surfaces while hot.
    • Clean the Smoker Box frequently to remove ash, residue, and dust.
    • Avoid scratching any surfaces to reduce rust/corrosion.
  • Storage: Remove batteries from the remote control if not in use for several months.
  • General: Keep the smoker and electric controller dry and out of the rain at all times. Keep a fire extinguisher accessible during operation. Unplug when not in use and before cleaning. Allow to cool before handling parts.
