The EKA MKL 1064 S Proofer is designed for professional use in cooking food, specifically for heating and leavening frosted foods. Usage Features

The control panel of the MKL 1064 S Proofer includes:

  • ON/OFF Switch Key: Powers the appliance on or off.
  • Temperature Knob: Allows the user to set the heating temperature between 25°C and 65°C.
  • Humidifier Button: Activates the humidifier to introduce humidity into the proofing chamber once it has warmed up.
  • Control Thermostat Indicator Light: Illuminates when the thermostat is tripped to re-establish the selected temperature and turns off when the desired temperature is reached.

First Use: Before initial use, it is recommended to run the appliance load-free for 15-20 minutes to eliminate any unpleasant smells from residual work grease.

Important Usage Notes:

  • The appliance must be used solely for its intended purpose of heating and leavening frosted foods.
  • Salt or salty food should not be placed in the proofing chamber, as salt can cause irreparable damage. The manufacturer disclaims responsibility for any damages resulting from such use.
  • Personnel using the machine should be trained.
  • The door handle should not be used to move the appliance, as the glass panel may break.

Maintenance Features

General Cleaning:

  • Always disconnect the appliance from the electrical mains and allow it to cool before performing any maintenance or cleaning.
  • Clean the appliance when it is cool.
  • For steel parts, avoid products containing chlorine (e.g., sodium hypochlorite, hydrochloric acid), even if diluted. Use specific off-the-shelf products or a small amount of hot vinegar. Rinse thoroughly with water and dry with a soft cloth.
  • Clean the glass door with hot water only; do not use rough cloths.
  • Do not wash the appliance with direct water jets or steam, as water ingress can compromise safety.
  • Avoid using corrosive substances (e.g., hydrochloric acid) to clean the floor near the appliance, as vapors can corrode and damage the outer steel housing.

Technical Service:

  • A technical check-up once or twice a year is recommended to prolong the appliance's life and ensure optimal operation.
  • All assistance and repairs must be carried out by qualified personnel using original spare parts.
  • When ordering spare parts or seeking information, always provide the serial number and model from the "technical data" plate.

Installation (for qualified installer):

  • The appliance must be positioned perfectly horizontally (feet are adjustable) at least 10 cm from side and rear walls for ventilation. It is not suitable for embedding.
  • Electrical connection must comply with legal regulations, ensuring voltage and frequency match the "technical data" plate, and the power supply system can support the load.
  • A single-pole switch with minimum between-contacts aperture of overvoltage category III (4000 V), sized to the load and conforming to current legal regulations, must be fitted between the appliance and the mains.
  • The yellow/green earth wire must not be interrupted by the switch.
  • The power supply should not deviate from the rated voltage by more than ±10% during operation.
  • If the supply cable is damaged, it must be replaced by the manufacturer, technical support, or a qualified person.
  • The terminal board for power cable connection is on the rear panel. Conductors should be arranged so the earth conductor is the last to detach.
  • The appliance must be connected to an equipotential system, with a minimum conductor diameter of 2.5 mm².
  • Connection to water mains requires softened drinking water (0.5°F to 3°F hardness) at a pressure of 100-200 kPa (1.0-2.0 bar). A 3/4” threaded solenoid valve on the back of the appliance is used, with a mechanical filter and cut-off cock.

Warranty:

  • Tecnoeka products are designed for food use and are covered by warranty for professional users (VAT holders) purchasing from a Distributor.
  • The warranty covers original defects reported within 12 months of purchase and within 8 days of discovery, with proof of purchase.
  • The warranty excludes damages from transport, inadequate installation, incorrect use, tampering, repairs by unqualified personnel, use of non-original parts, negligence, fire, natural events, or normal wear and tear of certain components (painted/enameled parts, knobs, handles, plastic parts, light bulbs, glass parts, seals, electronic parts, accessories).
  • The warranty does not cover replacement or installation costs.
  • Products purchased as used or from unauthorized third parties are excluded.
  • Tecnoeka SRL is not responsible for direct or indirect damages from product failure or forced suspension of use.
  • Warranty repairs do not extend or renew the warranty period. Replaced parts have a 6-month warranty from the shipment date.
  • No one is authorized to modify the warranty terms.

Availability of Spare Parts:

  • Tecnoeka Srl guarantees the supply of spare parts for 24 months from the invoice date of purchase. After this period, availability cannot be guaranteed.

Applicable Laws:

  • Supply relationships are regulated by Italian law, excluding international law norms and the Vienna Convention on the International Sales of Movable Assets. Disputes fall under the exclusive jurisdiction of the Padua Court.
