Overview

This document outlines the installation, operation, and maintenance instructions for a commercial dishwasher.

Function Description

The appliance is designed for washing dishes with water and specific detergents. It features various wash cycles tailored for different levels of soiling, including a wash with hot water and detergent (min 55 °C or 150 °F for Marine USPH versions) and a rinse with hot water and rinse-aid (min 82 °C or 180 °F for Marine USPH versions). The dishwasher includes an automatic cleaning cycle to flush out residues and maintain hygiene. Some models are equipped with an incorporated continuous water softener to remove calcareous substances from the feed water, supplying decalcified water for washing. The resins in the softener are regenerated periodically based on water hardness and the number of wash cycles.

The appliance is equipped with automatic detergent and rinse-aid dispensers. Peristaltic dispensers require periodic maintenance, specifically the internal hose of the rinse-aid dispenser, which should be checked once or twice a year. The dispensed amounts of detergent and rinse-aid can be adjusted through programming modes.

Safety features include an automatic reset thermoamperometric protective device that cuts off electricity in case of pump malfunction, a device to prevent boiler water from returning to the mains during water supply failure, and an overflow pipe to maintain a constant water level in the tank. Models with a drain pump also have a supplementary level control device.

Usage Features

Starting the Appliance:

  1. Open the water supply cock.
  2. Switch on at the mains.
  3. Open the door and ensure all components are correctly positioned.
  4. Close the door and press button "A" (on/off).
  5. The "A" indicator light will illuminate, and "FILL" will be displayed during filling and heating.
  6. Once filled and heated, the display will show the tank temperature (e.g., 55°C).
  7. For atmospheric versions, the first tank filling involves several hot rinse cycles, displaying "FILL (flowing)". Opening the door during this stage will show "CLOSE".

Wash Cycles:

  • Cycle I (Lightly soiled dishes): Press button "J".
  • Cycle II (Normally dirty dishes - recommended): Press button "H".
  • Cycle III (Very dirty dishes): Press button "F".
  • The cycle time may be extended if the boiler water has not reached the minimum temperature for correct rinsing. Cycle times and temperatures can be customized by a specialized technician.

Operation:

  1. Open the door after the filling and heating stage.
  2. Pour detergent into the tank (if not using an automatic dispenser).
  3. Insert the rack with dirty dishes.
  4. Close the door and select the desired wash cycle. The corresponding indicator light will turn on, and the cycle will start.
  5. For models with a door lock device, the door locks during the cycle and can be released by pressing the selected cycle button.
  6. If detergent/rinse-aid level sensors are present, messages like "det 0" or "rAl 0" may appear if levels are low. After 5 cycles with low detergent, the dishwasher inhibits further wash cycles.

End of Work and Daily Cleaning:

  1. At the end of the wash, the dishwasher emits beeps, and "END" blinks.
  2. Open the door and remove clean dishes.
  3. For daily cleaning, open the door, remove tank filters and the overflow "W".
  4. Close the door and select the drain cycle by pressing button "B". "CLE" will be displayed.
  5. After a few minutes, 3 beeps indicate the end, and "END" blinks.
  6. Switch off the dishwasher by pressing button "A".

Racks and Loading:

  • YELLOW rack: for 18 plates (max 240 mm diameter).
  • GREEN rack: for 12 bowls (max 240 mm diameter).
  • BLUE rack: for glasses (placed upside down).
  • YELLOW container: for cutlery (handles pointing downwards).
  • Accessories: dividers for glasses and racks for dishes (max 320 mm diameter).

Maintenance Features

General Maintenance:

  • Descaling: Descale the boiler, tank internal surfaces, and water piping once or twice a year.
  • Jet Cleaning: Descale rinse and wash jets monthly using vinegar or a descaling agent.
  • Dispenser Hoses: The internal hose of the rinse-aid and detergent peristaltic dispenser should undergo periodic maintenance (once or twice a year).
  • Filters: Regularly remove and clean filters "C", "D", and "Z" under running water.
  • Jets: Unscrew plugs "L" from rinse jets and clean with water spray. Avoid sharp implements.
  • Overflow: Check for obstruction in the overflow aperture.
  • Waste Outlet Pipe: Check for obstruction.

Prolonged Inactivity:

  1. Switch off at the mains.
  2. Close the water supply cock.
  3. Replace filters and overflow.
  4. Remove and clean top and bottom jets.
  5. Completely drain the tank and incorporated dispenser hoses (by manual activation at least 3 times).
  6. Completely drain the boiler by simultaneously pressing specific buttons. A buzzer indicates completion.
  7. Spread a thin film of Vaseline oil over all stainless steel surfaces.

Cleaning Exterior Surfaces:

  • Turn off power.
  • Clean stainless steel surfaces with warm soapy water. Do not use abrasive substances, steel scrapers, wire wool, brushes, or direct/high-pressure water jets.
  • Clean the control panel with a soft damp cloth and neutral detergent.
  • Use biodegradable products for cleaning to reduce pollutant emissions.

Water Softener Maintenance (for models with incorporated softener):

  • Salt Container: Fill the salt container with coarse salt (99.8% NaCl purity) when "SAL 0" or "SAL End" messages are displayed. Approximately 1.5 kg of salt is needed.
  • Important: Only use coarse salt. Do not introduce other chemicals. Opening the cap when no salt message is displayed can cause spilling of saline solution.
  • The salt container always contains water; it is normal for water to come out during filling.
  • Messages "SAL 0" or "SAL End" may appear for several cycles after refilling until salt circulates.

Troubleshooting:

  • Dishwasher does not wash well: Check suction filter, wash jets, detergent amount, wash cycle length, tank temperature (55-65°C), and dish stacking.
  • Glasses/dishes not dried properly: Check rinse-aid amount, presence, settings, and water temperature (80-90°C).
  • Condensation on glasses: Check rinse-aid amount, presence, settings, and remove glasses immediately after cycle.
  • Stains on glasses: Use only non-foaming professional products.
  • Excessive foam: Check wash water temperature (not less than 50°C), detergent amount, tank cleanliness, and if foaming detergent was used. Drain and refill tank until foam disappears.
  • Smears/spots on glasses: Reduce rinse-aid amount.
  • Wash/rinse arms turn slowly: Clean arms and wash pump suction filter.

Warning Messages on Control Panel:

  • A1 NO WATER: Check cock, water inlet filter, minimum mains pressure (50 kPa), and overflow pipe (for models without drain pump).
  • B1 INEFFICIENT DRAINAGE: Check overflow removal, obstruction in waste outlet pipe/overflow aperture.
  • B2 TANK WATER LEVEL TOO HIGH: Check obstruction in waste outlet pipe/overflow aperture.
  • C1..C8 / E1..E8 / F21..F22 CALL THE SERVICE CENTRE: Indicates issues requiring technician intervention. The appliance may continue to operate with E1..E8 messages, but checks are recommended.

Detergent/Rinse-Aid Dispensers and Settings:

  • Peristaltic Dispensers:
    • Detergent pump "R" dispenses ~0.9 g/s. First fill: ~44g in 45 sec (2 g/l concentration). Cycle: ~6g in 6 sec.
    • Rinse-aid pump "S" dispenses ~0.1 g/s. Cycle: ~0.3g in 3 sec.
    • Operating times can be changed via programming mode (GEn -> dIn/rln -> dEt/rAl).
    • Manual activation: Simultaneously press indicated buttons to fill hoses and remove air.
  • Rinse-aid Diaphragm Dispenser (pressure boiler models):
    • Dispensed amount changed by turning screw "D".
    • Check effectiveness by observing washed glasses (drops = insufficient, streaks = excess).
  • External Dispensers: Power supply terminals (7-9 for detergent, 8-9 for rinse-aid) are available for external dispensers (220-240 V, max 30 VA).
  • Changing Detergent/Rinse-Aid Type: Rinse suction and pressure hoses with fresh water before connecting new containers to prevent crystallization and pump breakdown.

Energy Control:

  • The appliance is designed for external energy consumption control. An energy peak controller can be connected across terminals 11 and 12. A normally open (n.o.) contact of the controller disconnects boiler heating elements when closed, potentially increasing cycle time.
