Usage Features
Installation and Setup:
Before operation, the unit requires proper setup. After unpacking, it's crucial to inspect for any transit damage and file claims immediately if necessary. The dispenser should be placed on a sturdy, level base. If applicable, unit decals need to be installed following the detailed instructions provided, which involve cleaning the surface with a non-ammonia glass cleaner and using a plastic squeegee to apply the decals smoothly, working out air bubbles and excess spray. For units with an IEC Plug, the Rear Panel Decal must be cut to fit above the plug. A thorough cleaning of the unit is recommended prior to its first use.
Electrical Requirements:
The Model No. 5345 operates on 120 V~, 60 Hz. It is critical to ensure the machine is properly grounded to prevent electrical shock. The equipment should be plugged into a dedicated and protected circuit, and the use of extension cords is not recommended due to safety concerns and potential performance reduction. Before plugging in, all machine switches must be in the OFF position, and the wall outlet must have proper polarity and accept grounded plugs. For units with an IEC Power Cord, it must be properly seated into the IEC receptacle.
Operating Instructions:
To begin operation, the Power Switch is turned ON. The unit should be pre-heated with an unopened product bag inside. Product starting from room temperature (70-75°F or 21-24°C) typically takes about 4 hours to reach 140°F (60°C). Once the product is preheated, it is installed into the dispenser. This involves opening the cabinet door, removing the fitting cover from the product bag, and attaching a new dispenser tube (PN 5285). The tube pierces the inner seal of the bag, and the cap must be securely threaded onto the bag fitting. The tube clamp is then opened by turning the cam counterclockwise. The Upper Cheese Bag Tray is removed, and the product bag, with its spout and tube, is placed in the support tray, directed toward the front and downward through the tray opening. The tube is guided through the pump slot from top to bottom, and the tube clamp is closed by turning the cam clockwise. Finally, the upper bag tray is placed back, and the dispenser door is closed. To dispense cheese, a tray is positioned, and the dispense button is pressed for the desired amount of product; releasing the button stops dispensing.
Product Installation and Removal:
The dispenser is designed for easy product bag installation and removal. A Basket Liner (PN 100557) is used in each Bag Support Tray opening to provide cushion and support for product bags. When installing a new bag, the cabinet door is opened, and the Bag Support Tray is located. The Basket Liner is positioned in the bag support opening. After attaching the dispenser tube to the product bag, the tube clamp is opened, and the product bag is placed in the support tray with the tube guided through the pump slot. The tube clamp is then closed. For product removal, the front door is opened, the tube clamp is opened, and the tubing is pulled out from the bottom up. The product bag and tube are then removed from the dispenser. The basket liner can be reused for the next bag of cheese.
Maintenance Features
Care and Cleaning:
Regular cleaning is essential for sanitation and maintaining the machine's appearance. Before cleaning, the Power Switch must be turned OFF, the unit unplugged, and allowed to cool. The cheese bag and tube are removed, and the tray is slid out for cleaning. Interior and exterior surfaces are wiped with a clean, slightly damp cloth. ABRASIVES should NEVER be used on this unit. Periodically, a vacuum cleaner or damp cloth should be used to clean the air intake. The pump head assembly can be removed by unscrewing the thumb screw for cleaning and then reattached. After cleaning, the clean, dry tray is reinserted.
Adjusting the Thermostat:
The thermostat setting, which controls the interior air temperature, is factory-preset. Adjustments should only be made by qualified service personnel. To adjust, the Power Switch is turned OFF, the unit unplugged, and allowed to cool. The rear access panel is removed to locate the thermostat. Turning the thermostat clockwise increases the temperature setting, while turning it counter-clockwise decreases it. The maximum interior air temperature setting is 167°F (75°C). It's important to note that the actual product temperature may vary depending on heating duration. The unit must be set to a safe food holding temperature as per local codes and food product manufacturer instructions. Troubleshooting:
