This document describes a Sous Vide immersion circulator, a device designed for precision cooking by maintaining a consistent water temperature. The manual covers its functions, usage, and maintenance, providing a comprehensive guide for users.

Function Description

The Sous Vide device operates by heating and circulating water to a precise temperature, allowing food to cook evenly and thoroughly. Its core function is to provide accurate temperature control, which is essential for sous vide cooking. The device features a clear display that shows the current temperature and time, and it includes intuitive controls for adjusting these settings. It also has a working indicator light that changes color to signify its operational status. The device is designed to automatically stop when the set cooking time is complete, displaying an "END" icon on the screen. During the heating process, the display alternates between showing the current temperature and the countdown time every 5 seconds once the set temperature is reached.

The device offers both manual operation and smart control via a mobile application, providing flexibility in how users manage their cooking. The mobile app, available for both Android and iOS, allows users to remotely control the device, set cooking parameters, and access a variety of recipes.

Usage Features

Manual Operation: To begin manual operation, the device is plugged into an outlet, and the ON button is pressed for 3 seconds until a beep sounds and the display illuminates. The device enters standby mode, indicated by a red icon and working lamp. Pressing the Setting button allows users to enter the setting mode. Users can switch between time and temperature settings by short-pressing the Setting button. A long press of the Setting button (3 seconds) enables quick adjustment of temperature or time limits. The temperature unit can be selected between Celsius (°C) and Fahrenheit (°F) after power-on, with the chosen unit flickering blue. Temperature adjustments are made using the "+" or "-" buttons. Once the temperature is set, a short press of the Setting button allows for time adjustment. The time setting involves first adjusting the hour using the "+" or "-" buttons, followed by adjusting the minute. After all settings are finalized, a short press of the ON button starts the cooking process.

During operation, the working indicator light turns blue. If users wish to change settings mid-cook, they must press and hold the Setting icon for 3 seconds, then repeat the setting steps. The device automatically stops when the set time expires.

Smart Control (WIFI Operation): For smart control, users need to download the "CTO sous vide" app from Google Play (Android) or the App Store (iOS) by scanning a QR code. Upon first use, registration is required within the app. Users click the APP icon to open the "CTO sous vide" APP, navigate to the main interface, and click the upper left corner icon to log in or register a new account using their mobile phone number. After successful registration and login, the app will display the main interface. To add the device, users ensure their phone is connected to a 2.4GHz Wi-Fi network (5GHz Wi-Fi is not supported). The device's Wi-Fi indicator will flicker, and a "DI-DI" sound will indicate it is in waiting connection status. Users then click the "+" icon in the upper right corner of the app to enter the device interface, follow the prompts to enter the Wi-Fi password, and click "Next step" to configure the Wi-Fi connection. The app will display "Configurating..." and then "Configuration completed." Once configured, the device will appear in the app under "sous vide." If multiple devices are to be configured, users tap the "+" icon in the upper right corner and repeat the process.

Important Notes for WIFI Operation:

  • During Wi-Fi operation, the sous vide cooker must remain connected to Wi-Fi for remote control.
  • The mobile phone and the sous vide app must be connected to the same Wi-Fi network during configuration.
  • After successful configuration, the phone can disconnect from Wi-Fi and use mobile data to control the cooker from anywhere, as long as the cooker itself remains connected to Wi-Fi.
  • For subsequent uses, there is no need to re-add the device. Simply plug it in, press the gear icon to turn on Wi-Fi, and the cooker will automatically connect to Wi-Fi within about 30 seconds. The app will then display the previously configured sous vide device.
  • A white background for the device name in the app indicates it is online; a grey background means it is offline. If the status remains "loading," logging out and re-entering the app may resolve the issue, often due to a weak Wi-Fi signal.

Recipe Selection: The app offers three modes for recipes: DIY, Automatic, and Scanning.

  • DIY: Users can set their own cooking temperature and time based on their taste and ingredients. Recipes can be added to favorites or deleted.
  • Automatic: This mode provides pre-set recipes for various foods, ensuring optimal taste and nutritional value. Users can select the desired ripeness (e.g., Blue Rare, Rare, Medium Rare, Medium, Medium Well, Well Done) and ingredient thickness, and the app will automatically set the corresponding cooking temperature and time.
  • Scanning: Users can scan a QR code on packaged food to access specific cooking recipes.

Start Cooking (App): After selecting or creating a recipe, users click "Pre-heat." The working indicator will turn blue, and a "DI-DI" beep will sound, indicating the sous vide has started. Once the set temperature is reached, another "DI-DI" beep will sound, and the countdown timer will begin. The display will alternate between showing the temperature and the countdown time every 5 seconds.

Note on Wi-Fi Networks: The device supports 2.4GHz Wi-Fi networks only. If the home router has both 5G and 2.4GHz Wi-Fi, users may need to switch between them. If the Wi-Fi is hidden, the mobile phone may not recognize the Wi-Fi network. Users should ensure their phone is connected to the correct 2.4GHz Wi-Fi network.

Assembling and Disassembling the Stainless Steel Skirt: To assemble, hold the Sous Vide Stick, open the heating element upwards, and open the clamp. Slide the stainless steel skirt over the heating rods until the arrow points to the opened lock symbol. Ensure the propeller does not get caught and is positioned in the center of the hole in the clear plastic cover. Rotate the stainless steel skirt until the arrow points to the closed lock symbol. To disassemble, turn the stainless steel skirt counterclockwise, ensuring the propeller does not get caught, and remove it. The propeller must be positioned in the middle. Always ensure the propeller does not touch the stainless steel skirt to avoid deformation.

Installing and Uninstalling the Skirt: To install, hold and press the clamp, align the unlocking symbol, and rotate the skirt clockwise until the arrow and locking symbol are in the same horizontal position. Be cautious not to cross the hole of the stainless steel propeller. To uninstall, hold and press the clamp, rotate the skirt in an anticlockwise direction to take off the skirt. Be cautious not to hit the stainless steel propeller.

Maintenance Features

Cleaning: After prolonged use, scale may accumulate on the heating element and housing. To remove scale, it is recommended to clean the device with a mixture of vinegar and water. For quick and thorough cleaning, rinse with chemical burn, but be cautious as vinegar can be painful if it gets in the eye and is sensitive to light.

Maintenance:

  • Always turn off and unplug the unit before performing any maintenance.
  • Internal service work should only be performed by certified personnel.
  • Ensure the core system is at room temperature before handling.
  • Do not disassemble the water pump cap.
  • Regularly check for signs of damage, including pulled cords or physical damage to the system or heaters. If any physical damage is found, send the device back for replacement parts.

Operation Warning (Safety Precautions): This section outlines important safety precautions to ensure safe operation:

  1. Countertops made of marble and Corian cannot withstand the heat generated by the circulator. Place the cooking container on another surface to prevent damage.
  2. Do not use extension cords. Always operate with a damaged cord or plug. Use properly grounded electrical outlets only.
  3. Do not immerse the machine beyond the top MAX water level mark or below MIN water level mark on the stainless steel skirt. Only the stainless steel skirt and the pump housing are dishwasher safe. Unplug from the outlet when not in use and before cleaning.
  4. Be cautious of burns. The cooking container, stainless steel portion of the circulator, and food pouches all get hot when used. Use oven mitts or tongs when handling. Allow the machine to cool before emptying the water bath.
  5. This machine is an indoor appliance and not a toy.
  6. Do not disassemble. Observe all warning labels. Do not remove warning labels.
  7. Do not use this appliance for anything other than its intended use (e.g., laboratory work or heating a hot tub).
  8. Firmly lock the product by clamping it on the side of your pot or container. Place the container on a flat surface to prevent spills and tipping over. Do not place the unit on a stove or in an oven.
  9. Do not use deionized water (DI water).
  10. Before plugging into a socket, check whether your voltage corresponds to the rating label of the appliance. The appliance only works with 120 V outlets.
  11. Do not let children use and play with this appliance. Keep the appliance and its cord out of reach of children.
  12. Never use a damaged appliance. If it has been damaged, get it to an approved service center, checked, or repaired.
  13. If the supply cord is damaged, it must be replaced by the manufacturer, its service agent, or similarly qualified person to avoid a hazard.
  14. Do not let the excess cord hang over the edge of the table or worktop or touch hot surfaces.
  15. Please switch off the appliance and disconnect the power before changing accessories or moving the item while using.
  16. When the appliance works under an abnormal mains disturbance, it may lose performance, and it may be needed to be unplugged to recover the normal operation.
  17. This appliance can be used by children aged 8 years and above if they have been given supervision or instruction concerning use of the appliance in a safe way and if they understand the hazards involved. Cleaning and maintaining the appliance could not be made by children unless they are older than 8 and supervised. Keep the appliance and its cord out of reach of children aged less than 8 years.
  18. Appliance can be used by persons with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge if they have been given supervision or instruction concerning use of the appliance in a safe way and if they understand the hazard involved.
  19. Children shall not play with the appliance.
  20. This appliance is intended to be used in household and similar applications such as:
    • staff kitchen areas in shops, offices, and other working environments.
    • farmhouses.
    • hotels, motels, and other residential type environments.

Troubleshooting FAQ:

  • Noise: Under normal operation, the system will hum due to the motor, impeller, and cooling fan.
  • Slurping noise: A water vortex may form when emptying a bathroom sink or tub. Add more water or gently disturb the water with a spoon. If the pump rotation is unusual, it may be due to a vortex.
  • Gurgling + Woosh noise: The pump is sucking air. Add more water. Small bubbles may also be seen in the tank.
  • Food damage: The pump's water jet may crack eggs or damage fish fillets. Turn the pump outlet to face the container wall. This will greatly temper the flow of the pump output. It is also good practice to bag eggs to prevent them from being "blown" around in certain containers.
  • System will not turn on: Check power plug and breakers.
  • Low water level alarm: Add more water. The water level can drop during operation due to water turbulence.
  • Low water level alarm turns on after a few seconds of operation: Add more water. The pump generates "waves" that sometimes drop the water level at the sensors. This is normal, and you just need to add more water.
  • Temperature read does not match thermometer: Sous Vide circulators are calibrated to a scientific platinum primary standard, which is far more accurate than store thermometers.
  • Lights in house are slightly flickering when system is on: This is normal as the circulator is modulating power.
  • Error code EE1 will be appeared in below situation with alarm sound:
    1. No water in tank.
    2. Water below minimum level.
    3. Appliance in situation of short circuit.
