Overview

The device is a Gusto Gas Griddle, available in models AMGM15, AMGM24, AMGM36, and AMGM48. It is designed for commercial use in food service locations and is intended for personnel trained and experienced in its operation.

Function Description

The Gusto Gas Griddle is a countertop cooking appliance used for grilling food. It operates on gas and features manual controls with standing pilots. The griddle is equipped with fixed orifice hoods and is shipped from the factory for use with natural gas, but can be converted to propane gas in the field using a supplied conversion kit.

General Specifications:

  • Plate Thickness: All models feature a 1" thick polished steel plate.
  • Burners: Custom designed 20,000 BTU aluminized steel U-shaped burner every 12" of cooking surface.
  • Gas Type: Shipped for Natural Gas, convertible to Propane Gas.
  • Orifice Size: AMGM series grills use a #47 drill orifice for natural gas and a #55 drill orifice for propane.
  • Gas Pressure Regulator: Convertible pressure regulator provided, shipped set for 6" (15.24cm) water column manifold pressure for natural gas. For LP gas, the regulator is set for 10" (25.4cm) water column.
  • Clearance: For use on non-combustible countertops only. Minimum 48" (120cm) from the top of the appliance and 6" (150mm) from the sides and back to combustible and non-combustible material.
  • Legs: Heavy-duty 4" adjustable legs are supplied and must be installed.

Usage Features

  • Manual Control: Equipped with manual controls and standing pilots, catering to operators who prefer a "feel" of manual control.
  • Heat Distribution: Ultra-smooth 1" thick polished steel plate ensures superior heat distribution, fast recovery, and energy-efficient operation.
  • Even Heat: Custom designed U-shaped burners provide even heat distribution across the cooking surface.
  • Construction: Heavy-duty body construction with stainless steel front, bull nose, and a 4-1/2" high tapered splash guard.
  • Grease Management: Features a spatula-wide 3-1/4" front grease trough and grease chute for easier cleaning, leading to a large 4-1/2 quart stainless steel grease drawer.
  • Leveling: Supplied with four adjustable feet (1-3/4" or 43.75mm adjustment) for accurate and perfect lineup with other units. Feet must be installed and not removed.
  • Gas Supply: A manual shut-off valve should be installed upstream from the union and within 6 feet (1.829m) of the appliance.
  • Pilot Lighting: Pilot flames can be observed through front panel view ports, with best access for lighting from the bottom of the unit behind the center wall. Pilot light flames should be adjusted as small as possible but high enough to immediately light the burner when the burner valve is turned on high.
  • Burner Adjustment: To adjust burner flames, remove the front panel, turn the burner valve knob to "HI," then close the air shutter on the front of the burner to achieve a soft blue flame with luminous tips. Gradually open the air shutter until yellow tips disappear and a hard blue flame is obtained. Repeat for all burners.
  • Burner Operation (MD and MDS Models Only): To ignite burners, turn the burner valve knob to "HI." Each burner has an individual high-low, on-off valve, allowing for infinite temperature settings between high and low. For overnight shutdown, turn valves to "OFF."

Maintenance Features

  • Seasoning (Non-Chromium Surfaces): Before first use and after thorough scouring, the griddle surface must be seasoned. This involves cleaning the surface, setting the temperature to 350°F (174.9°C), spreading a thin film of cooking oil, letting it sit for 1/2 hour, removing excess oil, and repeating the oil application process.
  • Grease Pan: A removable grease pan is located at the front for easy cleaning. It should be checked and emptied regularly. Extreme care must be exercised when handling the pan containing hot grease.
  • Griddle Care (Non-Chromium Areas):
    • After each use, scrape the griddle with a scraper or flexible spatula to remove excess grease and food. A waste drawer is provided for scrapings.
    • For burned-on grease and food accumulation, scour and reseason the griddle while it is warm, using pumice or a griddle stone. Avoid steel wool to prevent steel slivers in food.
    • Daily, clean the stainless steel body with a clean cloth and a good non-abrasive cleaner. Wipe the polished front with a soft cloth.
    • At least once a day, remove and wash the waste drawer like an ordinary cooking utensil. The drawer is removed by pulling forward, up, and out.
  • Gas Leak Detection: Use a soap and water solution or other acceptable material to locate gas leakage. Never use matches, candle flame, or other ignition sources.
  • Air Supply: Ensure the flow of combustion and ventilation air is not obstructed. Air intake openings at the bottom of the appliance must remain clear.
