Important Safety Instructions:

The manual emphasizes critical safety warnings:

  • General Safety: Do not store or use gasoline or other flammable vapors and liquids near the appliance. Ensure proper ventilation and do not obstruct airflow. Do not install a ventilation system that blows air downward towards the gas cooking appliance.
  • Children Safety: Do not leave children alone or unattended near the appliance. They should never sit or stand on any part of it. Avoid storing items of interest to children above or at the back of the appliance.
  • Apparel: Wear proper, loose-fitting or hanging garments should never be worn while using the appliance.
  • Servicing: Do not repair or replace any part of the appliance unless specifically recommended in the manual. Refer all other servicing to a qualified technician.
  • Grease Fires: Do not use water on grease fires; smother fire or flame or use a dry chemical or foam type extinguisher.
  • Potholders: Use only dry potholders. Moist or damp potholders on hot surfaces may cause steam burns. Do not let potholders touch hot heating elements.
  • Hot Surfaces: Do not touch grates, burner caps, burner bases, or other parts near the flame when the appliance is in use, as they can be hot enough to cause burns.
  • Unattended Use: Never leave the appliance unattended when in use. Boilovers and greasy spills can smoke or ignite.
  • Food Containers: Do not heat unopened food containers, such as baby food jars and cans, as pressure build-up may cause them to burst and cause injury.
  • Before Service: Shut off gas supply and electricity to the appliance.
  • Flame Adjustment: Set burner controls so the flame does not extend beyond the bottom of the pan.
  • Grease Kettle: Use extreme caution when moving or disposing of hot grease.
  • Cleaning: Clean only parts listed in this guide.
  • Ventilation: Do not obstruct the flow of air.
  • Carbon Monoxide Warning: NEVER use this appliance as a space heater to heat or warm the room, as doing so may result in carbon monoxide poisoning.

Installation Instructions:

Installation must be performed by an authorized person in accordance with national and local codes.

  • Gas Connection: The appliance must be connected to the gas supply piping system by closing its individual manual shut-off valve. The gas supply piping system must be tested for leaks.
  • Electrical Connection: The appliance must be connected to a single phase electrical line (120/208Vac or 120/240Vac and 60Hz frequency). A flexible hose and a 4-wire green cable are used for connection.
  • Pressure Gas Regulator: A pressure gas regulator is supplied with the appliance and must be installed. The maximum inlet gas supply pressure is 20" water column (5kPa). The minimum gas supply pressure for checking the regulator setting is 1" w.c. (249Pa) above the inlet specified manifold pressure.
  • Base Feet: Legs are packed in a carton box and should be installed near the appliance's intended location. Raise the range about a foot to remove the bottom shipping skid, then gently lower it.
  • Backguard Installation: Install the backguard by fixing it with two screws.
  • Anti-Tip Stability Device: An anti-tip bracket must be attached to the rear wall. The bracket's height should be adjusted to the proper installation height.
  • Proximity to Side Cabinet: The range can be installed directly adjacent to existing high base cabinets. The top border of the worktop should be at the same level as adjacent cabinet countertops. A minimum of 5" side clearance is required for sidewalls above 36 20/32" high. Wall cabinets within this clearance must be 13" deep and 18" above the 36" high countertop.

Performance Checklist:

  • Burner Adjustments: Check each burner for proper operation. Flames should be blue in all settings.
  • Service: If service is required, contact your dealer or manufacturer.
  • Performance Checks:
    1. Check surface burner ignition.
    2. Check air shutter adjustment (for oven and broiler burner, look for sharp blue flame, no yellow tipping, shooting, or flame lifting).
    3. Check low flame adjustment.
    4. Check broiler and oven ignition for all burners.
    5. Check for gas leaks (odors) at all gas connections.
    6. Check oven bake and convection bake function.
  • Exhaust Fan: An exhaust fan may be used with the appliance; it must be installed in conformity with national standards.
  • Conversion to Different Gas Types: Conversion kits must be performed by a qualified licensed plumber or gas service company.
  • Gas Flow Adjustment: Adjust the air flow rate and minimum gas flow.

Adaptation of the Pressure Regulator for Use with Different Type of Gas:

The pressure regulator is convertible for use with Natural Gas or LP gas. To convert, unscrew the metal stopper, reverse it, and screw it back in.

Changing the Injectors and Adjusting the Air:

The manual provides a table with input rates, orifice sizes, simmer rates, primary air opening, and bypass orifice sizes for various burners (SR, R, Fish Kettle, TC, Dual, Griddle, Big Solid Top Burner, Small Solid Top Burner, OVEN, GRILL) for both Natural Gas (A) and LP (E).

  • Hob Burners: Remove grill, caps, burners, and worktop. Unscrew screw "F" and remove pipe "R". Unscrew injectors (U) and replace with suitable ones. Adjust air using pipe "R" according to the value "X" in Table 2.
  • Oven Burner: Remove bottom shelf and fixing screws. Unscrew injectors and replace with suitable ones. Unscrew screw "f". Adjust air using pipe "r" according to the value "x" in Table 2.
  • Air Adjustment: Perform with burner ignited and flame at maximum.
    • Excess air: small, thin flame. Move sleeve R forward.
    • Lack of air: irregular flame with yellow streaks. Move sleeve R backward.
    • Normal flame: light blue color.

Adjusting the Minimum Gas Flow:

  • Light one burner and turn flame to maximum.
  • Remove the knob and turn the gas tap and insert a screwdriver into the screw.
  • Turn the tap to minimum position.
  • Unscrew, turning to the left, to increase the flame, or screw to the right to decrease it.
  • If liquid gas is used, the regulating screw must be fully screwed in.

Service & Maintenance Instructions:

  • Replacement Parts: Use only authorized replacement parts.
  • Servicing: Service and maintenance must be carried out by an authorized person.
  • Burner Parts: To replace parts such as burners, valves, and electric components, remove the bench top by releasing attachment hooks.
  • Ignition Switches: Disassemble the ignition switches wires first.
  • Valve Gaskets: Replace valve gaskets each time the valve is replaced.
  • Gas Leak Testing: After installation, check for gas leaks with soapy water solution. Do not use fire for leak testing.
  • After Sales Service: Before calling, ensure the appliance is connected and the main switch is activated.
  • Thermostat: If the appliance is equipped with a safety thermostat, it is adjusted by a technician.

Oven Cleaning and Care:

  • General Cleaning: Clean the oven after each use when lukewarm. Remove all extractable parts and wash them with hot water and non-abrasive detergent. Clean the cooking chamber with a soft cloth soaked in lukewarm water and ammonia. Do not use abrasive or corrosive detergents. Do not use steam appliances.
  • Carbon Monoxide Warning: Never cover slots, holes, or passages in the oven bottom or cover an entire rack with materials like aluminum foil, as this blocks airflow and can cause carbon monoxide poisoning or fire hazard.
  • Dismantling Oven Door: For intensive cleaning, dismantle the door by inserting hook (C) into hinge sector (D), pulling the small door towards you until it uncouples.
  • Oven Door Glass: The oven door is composed of three sheets of plate glass. Clean with absorbent kitchen paper and non-abrasive detergent. The inside glass can be removed by setting the door in the intermediate click position.
  • Self-Cleaning Panels: If equipped, catalytic panels transform fat splashes into a light powder residue at normal cooking temperatures (430°F). Remove residue with a damp cloth once the oven has cooled.
  • Fat-Filter: Clean regularly to prevent grease buildup from damaging the thermostat and fan motor.
  • Oven Out of Order: Disconnect from mains and call After Sales Service.
  • Oven Lamp: If the oven light is not working, disconnect from mains, remove protection glass, and replace the lamp with one suitable for high temperatures.
  • Grills: Clean pan support grills after cooking with a non-acid detergent. Dry carefully. Washing in the dishwasher is not recommended.

User Manual:

  • Children Safety: Keep children away from the appliance during operation. The oven door becomes very hot.
  • Heating Purpose: The appliance must not be used for heating purposes.
  • Electrical Connections: Ensure connection cables of other electric appliances are not trapped in the oven door.
  • Maintenance: Any required maintenance must be undertaken by skilled technicians or after sales service.
  • Oven Cleaning: Clean the oven regularly after use.
  • Pans: Choose heat-resisting pans. Stainless steel containers are not recommended. Adjust shelf height as needed.
  • First System Startup: Wash all removable parts with detergent and reassemble. Start the oven empty for 60 minutes at 440°F. Clean after cooling.
  • Flame Distributor: Ensure the brass flame distributor tooth (e) coincides with the notch (b) on the aluminum base (a). Remove flame distributor covers (c) before lighting the flame.
  • First Use of Oven: Let the oven work empty for one hour with windows open to dissipate production residuals.
  • Electric Thermostat: Choose oven temperature from 100°F to 500°F by turning the knob clockwise. The pilot lamp indicates when the selected temperature is reached.
  • Turnspit: Spit meats, place on base, insert on spit motor, place collector plate on lower shelf, ignite grill, turn on spit motor.

Electronic Programmer:

  • Functions: Cooking time, end of cooking, clock, timer, manual operation.
  • Display Symbols: Pot symbol for duration and manual functions, "A" for automatic program, bell symbol for minute minder.
  • Setting a Function: Select function and set time with +/- buttons.
  • Keys: Bell button, cooking time button, end of cooking button, +/- buttons for timer setting.
  • Clock Function: Activated by pressing cooking time and end of cooking buttons simultaneously.
  • Manual Function: Set by pressing cooking time and end of cooking buttons simultaneously. "A" disappears, pot symbol appears.
  • Semi-Automatic Function with Cooking Time: Select cooking time function and set time. "A" and pot symbol appear. Oven switches off when time coincides. Buzzer sounds, "A" flashes.
  • Semi-Automatic Function with End of Cooking Time: Select end of cooking function and set final time. "A" and pot symbol appear. Oven switches off when time coincides. Buzzer sounds, "A" flashes.
  • Automatic Function with Cooking Time and End of Cooking: Choose cooking time and set required time. "A" appears. Oven switches on, pot symbol appears. Set end time. Oven switches off, pot symbol disappears. Pot symbol reappears when time coincides with final time minus cooking time. Buzzer sounds, "A" flashes.
  • Minute Minder: Choose timer function and set time. Bell symbol remains on. Buzzer sounds at end of time.
  • Buzzer: Sounds for 7 minutes at end of cooking time. Silence by pressing any button. Volume adjustable with "-" button.
  • Start of Programme and Checking: Programme starts after setting time. Remaining time can be viewed by re-selecting the function.
  • Programming Error: Indicated by buzzer sounding and "A" flashing if time indicated on clock is between cooking and end of cooking times.
  • Cancelling a Programme: Select manual function.
  • Immediate Use: If display flashes, set correct time. Press cooking time and end of cooking buttons simultaneously. Set temperature and function using knobs.

Multifunction Oven:

  • Selector Knob (S): Choose function.
  • Thermostat (T): Choose temperature from 100°F to 500°F.
  • Oven Light: Press button on left part of board.
  • Pizza Cooking: Uses upper and lower heating elements.
  • Upper & Lower Elements: Conventional electric oven.
  • Lower Element: For pastry, cakes, flans, pizzas, biscuits, fruit cakes.
  • Upper Element: For browning and adding finishing touches.
  • Grill Baking: For meat, fish, vegetables.
  • Turnspit: Insert spit on support and in motor.
  • Grill & Fan: For deep cooking.
  • Upper Element & Fan: For intensive form of cooking.
  • Fan Oven: Conventional oven.
  • Defrost Function: For defrosting frozen food.

Static Oven:

  • Upper & Lower Elements: Conventional electric oven.
  • Upper Element: For browning and adding finishing touches.
  • Lower Element: For pastry, cakes, flans, pizzas, biscuits, fruit cakes.
  • Grill-Baking: For meat, fish, vegetables.
  • Turnspit: Insert spit on support and in motor.

Gas Oven with Gas Grill:

  • Ventilated Gas Function: Turn knob (A) to "ventilated cooking gas", knob (G) to desired temperature. Ignition is automatic.
  • Electric Lighting of Gas Oven: Turn knob (A) to "static cooking gas", knob (G) to desired temperature (150 to 500°F). Ignition is automatic.
  • Defrost Function: Turn knob (A) to "Defrost".
  • Lighting Gas Grill: Turn knob (A) to "cooking grill". Preheat for 5 minutes. Oven door must be closed. Maximum temperature is 500°F. Place baking tray with grid on 3rd position.

Lighting Gas Burners:

Choose burner, press and turn knob (A) towards left for 10 seconds to enable gas passage. For "Fry-top" and "Coup feu" burners, press knob for 2 seconds.

Lighting "Dual" Triple Ring Burner:

Locate knob (B), press and turn to spark symbol for 10 seconds. Once ignited, turn anti-clockwise to medium power. Press firmly to turn off external ring, leaving central auxiliary burner. Regulate auxiliary burner to minimum by turning anti-clockwise to limit-stop. Reignite by turning clockwise past limit-stop.

Use of the Coup Feu:

  • Function: Large solid cast iron plate with concentric rings for resting pans. Provides moderately intense, well-distributed heat. Ideal for slow cooking, sauces, browning, grilling, heating dishes, or keeping warm.
  • Usage: Switch burner on 15-20 minutes before use to accumulate heat. Middle is hottest, outer part cooler. Move pan to adjust cooking intensity. Can cook several dishes simultaneously.
  • Cleaning: Clean while still warm with kitchen metal surface products. Rub with wire pad, dry well. Apply Supercromo paste for appearance. For long periods, apply thin film of liquid paraffin to prevent surface oxides. Do not cook food directly on the plate.

Instructions for Use of the Gas Fry-Top:

  • Function: Special stainless steel plate (20/64" thick) with evenly distributed temperatures. High heat accumulation, low heat loss.
  • Usage: Light flame below plate using corresponding knob. Leave knob for 10 minutes to heat up. Adjust flame for slow cooking or higher temperatures for meat, fish, vegetables. Ideal for Japanese Tepanyaki cooking.
  • Cooking Table: Provides indicative values for cooking times (e.g., egg in 2 minutes, sliced aubergines in 9-13 minutes, steak in 3 minutes).
  • Cleaning: Clean accurately at end of each cooking session. With plate hot and flame at minimum, remove cooking residue with scraper. Pour water, continue cleaning with scraper. Repeat until desired result. Clean black enamel flue with soft cloth soaked in lukewarm water and ammonia.

Gas Barbecue:

  • Function: Gas barbecue with protected barbecue burner cap.
  • Usage: Light flame below plate using corresponding knob. Leave knob for 10 minutes to heat up. Adjust flame for slow cooking or higher temperatures.
  • Cooking Table: Provides indicative values for cooking times (e.g., sliced aubergines in 3-5 minutes, hamburger in 10 minutes, steak in 3 minutes).
  • Cleaning: Clean before cooling. Use lightly abrasive sponge or brush with brass bristles. Remove all incrustations. For all barbecues, the plate loses its shine with constant use. Clean flue with soft cloth soaked in lukewarm water and ammonia.

Fan Oven Cooking Chart:

Provides cooking temperatures and times for various meats (Roast beef, ox, veal, lamb, hare, rabbit, turkey, goose, duck, rare roast beef) and cakes (Fruit cake, Plain square cake, Brioches, Sponge cake, Plain ring cake, Sweet biscuits, Yeast cake, Strudel, Savoy biscuits, Apple fritters, Biscuits pudding, Toast, Bread, Pizza).

Natural Convection Oven Cooking Chart:

Provides cooking temperatures and times for various meats and cakes, similar to the fan oven chart.

Electrical Sketches:

Includes a list of keys and their corresponding electrical components (e.g., Brown, Red, Yellow, Green, Blue, Grey, Black, White, etc.). Provides detailed electrical diagrams for various models: UP90MP, UP90VG, UPD100FMP, UPD90VG, UP120SMP, UP120VG, UP150MP, UM150SVG, UP90VGG, UPD90VGG, UP120VGG, UP150VGG.
