Overview

The HAMRFORGE EL PARRILLA (ITEM# EL-2000) is a hard-use outdoor cooking unit, specifically designed for grilling and smoking with wood logs or charcoal. Manufactured in Canada, it emphasizes robust construction and versatile outdoor use.

Function Description:

The EL PARRILLA serves as an outdoor grill and smoker, capable of utilizing both wood logs and charcoal as fuel sources. Its primary function is to provide a stable and efficient platform for cooking outdoors. The design incorporates air control dampers to regulate temperature, allowing for various cooking methods from high-heat grilling to low-and-slow smoking. The unit is intended for household use only and is not suitable for commercial or food service settings.

Important Technical Specifications:

While specific dimensions and weight are not provided, the manual emphasizes that the unit must be used on a hard, level, non-combustible, stable surface capable of supporting its weight. It is designed for outdoor use only, with a required clearance of 10 feet from combustible materials (bushes, trees, wooden decks, fences, buildings, etc.) to prevent fire hazards. The unit should not be operated under a roof overhang or in any enclosed area. The maximum operating temperature should not exceed 700°F. The unit features air control dampers for temperature regulation, which can be opened to a wide position for lighting and closed to 1/4 inch for seasoning or maintaining specific temperatures.

Usage Features:

  • Fuel Versatility: The EL PARRILLA can be fueled by either wood logs or charcoal.
  • Lighting: A Charcoal Chimney Starter is recommended for lighting charcoal to avoid the dangers associated with charcoal lighting fluid. If charcoal lighting fluid is used, it must be approved for lighting charcoal, and the unit's lid and door should remain open for approximately 20 minutes until the charcoal is covered with light ash, allowing the fluid to burn off. Accelerants, gasoline, kerosene, or alcohol are strictly prohibited for lighting or re-lighting, as they can cause explosions or severe bodily injury.
  • Temperature Control: The unit is equipped with air control dampers that can be adjusted to manage airflow and, consequently, the cooking temperature. Opening them wide facilitates lighting, while closing them partially helps maintain desired temperatures.
  • Seasoning: Before initial use, the unit requires seasoning. This involves wiping the grill surfaces (not other surfaces) with vegetable oil, lard, or olive oil, lighting a fire with hardwood or charcoal, allowing the unit to reach at least 250°F, closing the air control dampers to 1/4 inch, and letting the fire extinguish itself naturally (which can take up to 4 hours depending on fuel type and fire size).
  • Safety Precautions:
    • Always use on a stable, non-combustible surface.
    • Maintain a 10-foot clearance from combustible materials.
    • For outdoor use only; never indoors or in enclosed areas.
    • Do not leave unattended when in use.
    • Keep children and pets away from the unit.
    • Wear protective gloves or oven mitts when handling hot surfaces.
    • Avoid loose clothing or hair contact with hot surfaces.
    • Do not move the unit when hot.
    • Brace the unit with wheel chocks if it has wheels to prevent accidental movement.
    • Use extreme caution when adding charcoal/wood during cooking.
    • Never add lighting fluid to hot or warm coals.
    • Suffocate grease fires; do not use water.
    • Be cautious of flare-ups when opening the lid, keeping hands, face, and body at a safe distance.
    • In windy conditions, place the unit in a protected outdoor area.
    • In case of fire, close air dampers to suffocate the flame.
    • Never leave coals and ashes unattended; remove them carefully into a non-combustible metal container, saturate with water, and allow to sit for 24 hours before disposing.
    • Completely wet the surface beneath and around the unit with a garden hose after use to extinguish any fallen ashes or embers.
    • Store the unit out of reach of children in a dry location when not in use.
    • A fire extinguisher is advised to be on hand.

Maintenance Features:

  • Cleaning After Use: After each use, the unit should be thoroughly cleaned, and a light coat of vegetable oil (or similar oil) applied to the interior to prevent rusting. Covering the unit helps protect it from excessive rusting.
  • Cleaning Procedure:
    • DO NOT use cleaning agents, chemicals, metal scrapers, steel wool, or wire brushes on the inside of the unit, as these can damage the protective scale, scratch the paint, and expose raw steel to rust and oxidation.
    • Use hot water and dish soap to rinse the unit and remove large deposits by hand.
    • A sharp-edged wood scraper can be used to remove grease, soot, and ashes.
    • Rinse with a power washer or garden hose.
    • Wipe down the inside of the unit with a coarse threaded towel or rag until dry.
  • Paint Touch-ups: If paint touch-ups are needed, use high-temperature matte black paint. Do not paint inside the cook box. Prepare the surface by cleaning and removing paint chips, grease, or dirt. Rigorously scrub the area with a Scotch-Brite® Heavy Duty Scrub Sponge until clean, then wipe with rubbing alcohol. Apply paint according to manufacturer's specifications and allow it to dry.
  • Grease Management: Check the grease level in the grease cup often and empty or change it when it is 3/4 full, exercising extreme caution as the unit and its contents will be hot.
  • Storage: Store the unit out of reach of children and in a dry location when not in use.
