This document is an instruction, maintenance, and service manual for JET-TECH HI TEMP WAREWASHERS. It covers several models, including 727, 737, 747, F-16, F-18, F-20, F-22, and PIPER. The manual is specifically created for service technicians, providing information for troubleshooting, electrical schematics, exploded views, and detailed parts lists.

Function Description:

JET-TECH warewashers are high-temperature dishwashing machines designed for commercial use. They are engineered to provide efficient and thorough cleaning of dishware and trays. The machines operate through a series of stages:

1. Power On: Initiated by pressing the green power button, which illuminates the power on indicator light and digital temperature gauges.
2. Water Fill: If the wash tank is empty, the water inlet valve opens, and the tank fills through the rinse arms. The water level is controlled by an air trap and an air pressure switch. On some models, the automatic drain pump and liquid detergent pump are energized during this stage.
3. Heating: Once the proper water level is attained, power is transferred to the booster thermostat. If the rinse water temperature is below the preset level (185°F / 85°C), the booster element heats the water. After the rinse water reaches temperature, power is transferred to the wash tank thermostat. If the wash water temperature is below the preset level (140°F / 60°C), the wash tank element heats the water. The booster element always has priority, and the two elements are never energized simultaneously.
4. Ready State: The "READY" indicator light illuminates when ideal temperatures for a wash cycle are reached. This light cycles on and off as elements maintain temperatures.
5. Wash Cycle Initiation: Pressing the black cycle start button activates a micro relay, which in turn energizes the timer motor and the cycle indicator light, starting the wash cycle.
6. Washing: After a few seconds, the wash pump(s) are energized, initiating the wash cycle.
7. Rinse Cycle: At the end of the wash cycle, the wash pump stops, and the water inlet valve opens for the rinse cycle. On some models, the automatic drain pump and liquid detergent pump are also energized during the rinse cycle. The cycle indicator light extinguishes when the rinse cycle is complete.

The machines do not dump and fill after every cycle; instead, the wash water is refreshed by the hot rinse water, and excess stale water is expelled via the overflow pipe. Some models are equipped with an automatic drain pump for water evacuation.

Usage Features:

• Control Panel: Features a green power button, power ON indicator light, digital temperature gauges (rinse and wash), "READY" indicator light, cycle start button, cycle indicator light, white drain pump button (on equipped models), and black warm rinse button (on F-16/F-16DP).
• Detergent Dispensing: Machines are equipped with a rinse additive pump as standard. Models 727, 737, F-16, F-16DP, F-18, F-18DP, and F-20 include a factory-installed liquid detergent pump for automatic dispensing. Powder detergent can also be used.
• Overflow Pipe: Essential for proper water level management and draining. It should be correctly set in place and never forced.
• Loading: It is recommended to fully load the basket for economical washing, but avoid overloading to allow water to spray freely.
• Warm Water Rinse (F-16/F-16DP): These models feature an alternative warm water rinse, bypassing the booster tank for the final rinse by activating the black button on the control panel.
• Drain Pump (727, 737, F-16DP, F-18DP): These models have a drain pump capable of pumping water to a maximum height of 36" (0.9 meter). Manual draining is performed by turning off the machine, removing the overflow pipe, and pressing the white drain pump button. Newer models have a non-locking drain pump button that must be held to operate.

Maintenance Features:

• Daily Maintenance:
  • Remove the rack.
  • Drain and clean the dishwasher, including scrap screens and the wash tank. Do not use abrasives.
  • Do not flush food particles down the drain on drain pump equipped models.
  • Verify levels of detergent and rinse-aid.
• Weekly Maintenance:
  • Clean wash/rinse-arm jets, ensuring no blockages. Remove the wash/rinse arm assembly by unscrewing the center knob.
  • Turn off power, open the front panel, and visually inspect the peristaltic pump for worn tubes.
• Monthly Maintenance:
  • Visually inspect inside the machine for any water or detergent leaks.
• Semi-Annually Maintenance:
  • Replace tubes in peristaltic pumps.
  • Verify if "O" Rings are worn on wash/rinse arms.
  • Rotate upper and lower arm assembly.
• Annually Maintenance:
  • A complete verification by a qualified JET-TECH technician is recommended.
  • Treatment for mineral deposits.
  • Flush and drain booster.
  • Run cycles with a de-liming product.
  • Electrical verification.
  • Check all water and drain connections for leaks.
  • Check all components and hoses for wear and tear.

Servicing Features:

• Control Panel Access: Models F-16, F-18, F-20, 727, and 737 feature a control panel drawer that slides out for easy access to internal components.
• Top Panel Access: On model F-22, the top panel lifts off.
• Control Drawer Access: On model 747, the control drawer slides out with a quick tug.
• Lower Front Panel Access: The lower front panel "unsnaps" on all models, providing access to components in the base.
• Thermostat Adjustment: Adjustment screws for booster (TB) and wash tank (TV) thermostats are located in the middle of the thermostat, sealed with paint. Adjustments should be made in 1/8 turn increments, clockwise to increase temperature, and counter-clockwise to decrease. Allow 10-15 minutes for stabilization. Thermostat tolerance is ± 3 degrees.
• Air Pressure Switch Adjustment: The adjusting screw (Phillips head) is in the middle of the air pressure switch. Adjustments should be made in 1/8 turn increments, clockwise to lower water level, and counter-clockwise to increase. The wash tank must be emptied and refilled after each adjustment.
• Rinse Pump Adjustment and Priming: The adjusting screw on the rinse pump controls the amount of rinse additive. Priming may be necessary if air enters the hose or the pump stops drawing additive.
• Liquid Detergent Pump Adjustment: An adjustment screw on the pump regulates the amount of detergent injected. Turning counter-clockwise shortens injection pulse time, and clockwise lengthens it.
• Water Inlet Valve (Solenoid) Replacement: The water inlet valve cannot be serviced and must be replaced if defective. For F-22 or 747 models, the filter screen must be removed for increased water flow.
• Cycle Timer Replacement: JET-TECH washers use mechanical timers that cannot be serviced and must be replaced if defective.

Warranty Information:

JET-TECH Systems Corporation provides a one-year limited warranty on parts and labor for new warewashers in the continental USA and Canada, effective from the date of original installation, not exceeding eighteen months from the shipment date. Exceptions include the "Piper" model, which has a 90-day labor and one-year parts warranty. The warranty covers defects in material or workmanship under normal usage and operation. It requires prior authorization for labor, service by an authorized agency, and use of genuine JET-TECH parts. Travel time is limited to two hours or 100 miles round-trip.

Warranty Exclusions:

• Damages from shipping, handling, or abuse.
• Incorrect installation or connections.
• Adjustments or calibration of thermostats or timers.
• Faults due to lack of regular maintenance or cleaning.
• Replacement of wearable items (e.g., glasswasher curtains, peristaltic squeeze tubing, gaskets).
• Excessive lime, mineral, alkali, or hard water conditions.
• Poor results due to incorrect detergent type or inadequate water temperature/pressure.

Service Call Regulations:

JET-TECH covers labor for defective part replacement, travel time, and original replacement parts from service company inventory. They do not cover:

• More than one man on a service call.
• Waiting time.
• Unauthorized labor charges.
• Excessive travel time.
• More than one service call for the same problem.
• Adjustments or calibrations.
• Replacement of small items (pilot light, screens, jets).
• Cleaning or regular maintenance.
• Overtime or weekend charges.
• Problems due to improper installation, water supply, or electrical supply.
• Disconnecting hard plumbing or removing counter tops.

All claims must be received within 30 days of work completion. Payment may be withheld if defective parts are not returned, failure is due to negligence/improper installation/unauthorized servicing/abuse, or if documents/information are missing.
