STARTER)
Sourdough
Starter
is
a
mixture
of
flour,
water,
and
natural
leaven.
It
is
a
traditional
form
of
the
original
bread
"leaven"
that
gives
breads
a
more
sour
taste
and
better
inherent
keeping
qualities
than
breads
made
with
baker's
yeast,
due
to
the
lactic
acid
produced
by
the
lactobacilli.
It
is
a
batter
in
which
both
yeast
and
bacteria
grow
in
a
perfectly
balanced
condition.
