Overview

The Miele Built-in Warming Drawer, available in models ESW 408x-14, ESW 47xx, and ESW 48xx, is designed to keep food warm and tableware heated, offering a range of features for convenience and safety.

Function Description

The warming drawer's primary function is to maintain food at serving temperature and to preheat tableware. It utilizes a fan to distribute warm air evenly throughout the drawer, ensuring consistent heating. The drawer operates in various modes: "Cups/Glasses" for warming beverages and glassware, "Tableware" for preheating plates and dishes, and "Food - warm and hold" for keeping prepared meals at an optimal serving temperature. The "Food - warm and hold" mode runs in intervals to prevent overcooking while maintaining warmth.

Important Technical Specifications

The warming drawer is designed for built-in installation and is not intended for commercial use. It is suitable for use in domestic households and similar working and residential environments. The maximum load capacity for the drawer is 55 lbs (25 kg). The appliance is equipped with a 5 ft (1.5 m) long power cord with a three-prong grounding plug, ready for connection to a 120 V, 15 A, 60 Hz power supply.

The drawer features a safety cut-out mechanism that turns off the heating and fan if the drawer is closed for an extended period of continuous operation (up to 12 hours, except during Sabbath mode). This ensures safety and prevents potential hazards.

Usage Features

The control panel, located on the front of the drawer, includes "On/Off," "Menu," "Temp.," and "Timer" touch controls.

  • On/Off: Press and hold to turn the warming drawer on or off.
  • Menu: Allows selection of the operating mode: "Cups/Glasses," "Tableware," or "Food - warm and hold."
  • Temp.: Used to select the desired temperature. The display shows a series of squares, with the number of illuminated squares indicating the temperature setting. Each operating mode has an assigned temperature range, and the suggested temperatures are set by default. Users can adjust these settings as needed. For example, "Cups/Glasses" mode offers temperatures ranging from 104°F (40°C) to 140°F (60°C), "Tableware" from 140°F (60°C) to 176°F (80°C), and "Food - warm and hold" from 149°F (65°C) to 185°F (85°C).
  • Timer: Allows setting the heating time in one-hour increments, up to 4 hours. The display shows "1h," "2h," "3h," or "4h" for the selected duration.

For religious observance, the appliance can be set for the duration of the Sabbath. In Sabbath mode, the timer is deactivated, and sensors are touched longer than usual. If Sabbath mode is activated, the appliance will turn off after approximately 72 hours, then automatically reset to normal operation. To activate, press and hold "Timer." To deactivate, press and hold "On/Off."

Loading the warming drawer is straightforward. For ESW 408x-14 models, the drawer is designed to accommodate dishes directly. For ESW 47xx and ESW 48xx models, a supplied rack can be used to increase load space, and additional racks are available from Miele.

Tips for keeping food warm include preheating the drawer for approximately 15 minutes to ensure the interior reaches the desired temperature, placing food into preheated tableware, and covering foods with a high moisture content to avoid a "skin" from forming. It is recommended not to cover foods that should remain crisp. Food should not be overcooked, and extra time may be needed for temperature adjustments.

The warming drawer can also be used for proofing yeast dough or warming/crisping bread. For proofing dough, open the drawer, turn the appliance on "On/Off," select "Cups/Glasses" mode via "Menu," and select the lowest temperature setting via "Temp." Place the dough in a bowl and cover with a plate, then place the bowl on either the floor or rack of the warming drawer. Allow dough to proof for approximately 30 minutes or until it has doubled in size. For warming/crisping bread, open the drawer, turn the appliance on "On/Off," select "Food - warm and hold" mode via "Menu," and select the highest temperature setting via "Temp." Place the bread on a plate and place it in the drawer. Allow bread to crisp for approximately 30 minutes.

Maintenance Features

Cleaning the appliance is essential for its longevity and proper functioning.

  • Before first use: Remove any protective wrapping, the non-slip mat, and clean the warming drawer inside and out with a damp cloth and mild dish soap. Dry thoroughly.
  • Routine cleaning: Allow the appliance to cool before cleaning. Do not use a steam cleaner, commercial cleaning agents, abrasive cleaners, stainless steel cleaners, dishwasher soap (powder), caustic (oven) cleaners, scouring pads, steel wool, hard brushes, or metal scrapers. Use cleaners containing soda, ammonia, thinners, or chlorides sparingly. For glass cleaners, ensure they do not allow them to sit or "puddle" on the surface, as this can cause damage.
  • Non-slip mat: The mat can be removed and cleaned by hand with warm water and liquid dish soap. Dry thoroughly. Do not return the mat until it is completely dry. The mat should never be cleaned in the washing machine.
  • Appliance front/interior: Remove spills as soon as possible. If spills are allowed to sit for an extended period, they may discolor or change the surfaces. Clean the appliance with a solution of warm water and liquid soap applied with a soft sponge. Dry with a soft cloth. All surfaces of the appliance are susceptible to scratching, and breakages can occur on glass surfaces.

Troubleshooting:

  • Drawer does not heat: Check if there is power to the warming drawer and if the circuit breaker has tripped.
  • Food is not warm enough: Adjust the temperature setting. Check that the vents are not blocked by large plates or dishes.
  • Food or dishes are too hot: Check the temperature setting and make sure the food is not too close to the heating element.
  • Dishes are not warm enough: Check the temperature setting, reload the dishes, and allow more time for warming.
  • Noise during use: A circulation fan distributes heated air, and the fan works in intervals during the "Food - warm and hold" mode. This is normal.
