Direction for use
1.
Pour water into the compartment of the sharpener and keep it there during
sharpening operation. The water in the wheel compartment serves always to rinse the
revolving ceramic whetstones and to prevent over-heating the knife blade. The
sharpener should always be rinsed with clean water by removing the cover after use.

To keep the sharpener steady, firmly grip the handle with one hand.

Next, place the knife blade vertically into groove No.1 COARSE with Blue, and move
the blade back and forth with SLIGHT PRESSURE 7 or 8 times, or as necessary.
NO HEAVY PRESSURE IS REQUIRED.

Next, place the knife blade vertically into groove No.2 MEDIUM with Brown wheel,
and move the blade back and forth with SLIGHT PRESSURE 7 or 8 times, or as
necessary.
5.
Next, place the knife blade vertically into No.3 FINE with Yellow wheel, and move the
blade back and forth with SLIGHT PRESSURE 7 or 8 times.
It is very important not to apply too much pressure when passing the knife through the
sharpener, as doing so may cause damage to the wheels.
If undue pressure is applied, the wheels may break or become damaged. Such damage
will not be covered under our warranty, but replacement wheels are generally
available to purchase.
6.
When sharpening is complete please hand wash knife in hot water and carefully dry
with a dry towel or cloth before use.

  5. Number of Strokes: The recommended number of strokes varies depending on the knife brand and condition:
    • For GLOBAL knives: 7 or 8 strokes on each wheel.
    • For other brands: Start with 15 strokes on each wheel. If the knife is still not sharp enough, repeat the process with an additional 20 strokes on each wheel.
  6. Post-Sharpening Care: Once sharpening is complete, the knife should be hand washed in hot water and carefully dried with a clean towel or cloth before use.
