This document describes the installation, operation, and maintenance of Refrigerated Prep Tables, which are commercial appliances designed for the temporary storage of food products. These units are available in "Standard Top" and "Mega Top" configurations, differing primarily in their pan capacity.
Function Description:
Refrigerated Prep Tables are designed to keep food products at safe, cool temperatures, typically around +38°F (3°C), for temporary storage and preparation in commercial kitchen environments. They feature a refrigerated cabinet for bulk storage and a top section with openings for food pans, often accompanied by a cutting board. The units utilize a refrigeration system with a compressor and fan motors (evaporator and condenser) to maintain internal temperatures. They are equipped with self-closing doors (on solid door models) and adjustable shelving.
Important Technical Specifications:
General:
- Refrigerant: R290 (flammable refrigerant, requiring careful handling).
- Electrical: All models operate on 115/60/1/3.5 electrical supply.
- Operating Conditions: Designed for indoor use. Ambient temperature should be at or below 75°F (24°C) with relative humidity of 55% or less. Operating range is 45°F to 86°F (7°C to 30°C).
- Power Cord: Equipped with a NEMA 5-15P three-prong grounded plug. Requires an independent, properly grounded 3-prong wall outlet. Extension cords are not to be used.
- Clearance: Requires a minimum of 3 inches between the back of the cabinet and the wall for proper operation.

Usage Features:
- Caster/Leg Installation: Units are supplied with casters or legs that must be installed for proper operation and warranty validity. Casters with locks should be installed on the front.
- Shelf Installation: Each door is supplied with one shelf and four shelf supports. Shelf supports are installed on pilasters inside the cabinet, allowing for adjustable shelf height. All supports for a single shelf must be at the same height.
- Food Pans: Units come with 4-inch deep 1/6th size pans. They can accommodate pans up to 6 inches deep and various sizes, secured by locking-in-place pan adapter bars. Pans should be cleaned before use.
- Cutting Board: A 9.5-inch deep reversible cutting board is included, secured by brackets on each end of the unit. It should be cleaned before use.
- Temperature Adjustment: The temperature control is located on the inside back wall, pre-set to a mid-point for approximately +38°F. Turning the control counter-clockwise makes the cabinet warmer, and clockwise makes it cooler. Adjustments should be made in small increments, allowing time for the unit to respond.
- Loading Product: After initial run-time (2 hours), products can be loaded. Shelving should be adjusted as desired. It is crucial not to block airflow (air intake or discharge at the back inside wall) for maximum cooling performance. Warm products should not be loaded directly; they should be cooled first. All food products should be covered or stored in sealed containers to prevent drying, odor transfer, and cross-contamination. Running the unit without pans in place for extended periods is not recommended.
- Defrost: The units feature "Off Cycle" defrost, meaning they defrost automatically during each off cycle of the compressor.
- Door Swing Reversal (27" solid door models): The 27" solid door models come with a right-hand hinged door, but the swing can be reversed to left-hand hinging using a supplied Bottom Left Hand Hinge (part number 145683). This involves disconnecting power, laying the cabinet on its back, carefully disassembling and reassembling hinge components, and adjusting spring tension for the self-closing feature. The unit should not be reconnected to power for one hour after reversal.
Maintenance Features:
- General Cleaning: Disconnect power before any cleaning or maintenance. Do not spray or splash water directly onto the appliance.
- Chemicals: Avoid caustic, acidic, or chlorinated cleaners on stainless steel to prevent corrosion. Do not use scouring or abrasive pads. Use only mild soap or stainless steel cleaners with a soft cloth.
- Exterior and Interior Surfaces: Clean with a mild soap/warm water solution and a soft cloth, wiping with the grain of the metal. A baking soda solution can help remove interior odors. Avoid stainless steel cleaners or solvent-based chemicals on plastic door handles.
- Shelves: Remove shelves and clean with a soft cloth or brush and mild soap/warm water.
- Door Gasket: Periodically clean with mild soap/warm water to remove debris. Gaskets can be removed by pulling them out of the groove (starting at corners) and replaced by pushing the dart back into the groove.
- Condenser Coil Cleaning: Disconnect power. Remove the rear grill. Use a soft bristled brush, vacuum cleaner, and/or compressed air to remove dirt particles from the fins. Replace the grill and reconnect power. It is recommended to check and/or clean the coil four times a year, depending on the installation environment, to maintain peak efficiency and warranty.
- Only qualified service technicians should install and service the appliance.
- Installation must comply with national, state, and local codes.
- Do not touch the appliance or plug with wet hands.
- Always disconnect from power before servicing.
- The appliance requires an independent power supply of proper capacity; failure to use one can lead to tripped breakers, blown fuses, damage, heat generation, or fire.
- The appliance must be properly grounded; do not remove the ground prong or use adapter plugs.
- Do not use extension cords.
- Do not use if the power cord is damaged or alter it.
- Do not spray or splash water on the appliance.
- Do not make alterations or modifications to the appliance.
- Children must be properly supervised around the appliance.
- This appliance is not intended for use by persons with reduced physical, sensory, or mental capabilities or lack of experience unless supervised or instructed.
- Do not climb, stand, or hang on or into the appliance.
- Use caution when opening doors/lids to avoid pinch points.
- Do not use or store combustible sprays, aerosols, gasoline, or other flammable substances near the appliance.
- Keep the area around the appliance clean.
- Do not load shelves with more than 100 pounds.
- Do not block air inlets or outlets.
- Do not overload storage capacity; allow space for airflow.
- All component parts must be replaced with manufacturer original equipment parts.
