Overview

This document describes the Nutrichef PKBRKTL150 Home Beer Brewing Machine, an all-in-one electric brewing system designed for home brewers. It integrates mashing, lautering, and boiling into a single kettle, making the brewing process more streamlined.

Function Description

The Nutrichef Home Beer Brewing Machine is designed to facilitate the entire beer brewing process from start to finish. It allows users to heat water for mashing, perform the mashing process, conduct lautering, and boil the wort, all within a single unit. The system is equipped with an easy-to-use brew controller that supports these three main phases of brewing. Each phase involves heating and maintaining specific temperatures, which are crucial for different stages of beer production.

The machine features a brew kettle with a capacity of 30 liters effective volume (about 35 liters total volume), capable of holding up to 8 kgs of malt. Water measurement markings in both liters and gallons are present on the kettle wall. A malt basket with a filter screen is included, designed to be placed inside the brew kettle before adding water and malt. A lifting handle is provided for easy removal of the malt basket. The stainless steel tap has a larger diameter and shorter outlet for quicker liquid flow. A glass lid is included to retain heat during mashing and features an extra hole for a thermometer to monitor mash temperature at the top of the kettle.

The brew controller is a key component, featuring a display that shows the current temperature, target temperature, heating power percentage, and remaining time for the current phase. It also indicates heating status with an animated symbol. The controller supports three pre-programmed brewing programs (PROG I, II, and III) and allows for customization of parameters.

PROG I includes the HEAT (preheating), MASH, and LAUTER phases. PROG II focuses on the BOIL phase. PROG III encompasses all phases: HEAT, MASH, LAUTER, and BOIL.

Users can adjust heating power (in percent), target temperature (in °C or °F), and time (in minutes) for each phase. The controller comes pre-programmed with default values suitable for single-step mashing at 65°C (149°F) with a 60-minute duration for each of the three phases, suitable for most modern, well-modified malts. The system supports multi-step mashing with up to 5 steps.

The controller's step selector allows users to choose specific steps (S-B3) during operation, even running backward from a selected step. Steps with a timer or temperature setting of 0 are automatically skipped. The display provides visual cues, such as a flickering step indicator for the current phase and a barrel symbol to show heating status. Audible alarms signal when target temperatures are reached and when phases are completed.

  1. Easy Setup: The machine is designed for easy assembly and operation. Users simply place the malt basket with the filter screen inside the brew kettle, add water and malt, and connect to a wall outlet.
  2. Program Selection: Users can select from three pre-programmed brewing cycles (PROG I, II, III) or customize individual steps.
  3. Parameter Adjustment: During standby or pause, users can adjust heating power, target temperature, and timing for each step (S-B3) using the "SET" and +/- buttons.
  4. Temperature Conversion: The controller allows for easy conversion between Celsius and Fahrenheit (°C/°F button).
  5. Temperature Deviation Adjustment: A temperature compensation function allows users to adjust the temperature deviation (±10°C) to account for external environmental factors or discrepancies between displayed and measured temperatures.
  6. Run/Pause Function: The brewing process can be paused or resumed at any time.
  7. Automatic Skipping: Steps with a timer or temperature setting of 0 are automatically skipped.
  8. Audible Alarms: The system provides audible signals when target temperatures are reached and when phases are completed, ensuring timely intervention for hop additions or other steps.
  9. Power Off Protection: In case of an unexpected power failure, the machine remembers the breakpoint and can restart from that step once power is restored.
  10. Automatic Memory Saving: After each brewing session, the running program and settings are automatically saved and retrieved for the next use.

  12. Recipe Book: Includes a recipe book for various beer types (Belgian Wit, IPA, Kolsch, Pale Ale, Pils, Red Ale, Coast Beer, Weissbier) with a 25-liter capacity.

Maintenance Features

  1. Cleaning: After use, the brew kettle should be emptied of any remaining trub. Warm water and a soft kitchen brush are recommended for gentle cleaning. PBW cleaner can be used to soften burnt material at the bottom.
  2. Pipe and Pump Cleaning: To clean the equipment pipes and pump, add 5-10 liters of water, switch to PROG II, press "Run," connect a whirlpool arm, and let it boil for about 5 minutes with the riser pipe valve open and pump on.
  3. Care Instructions:
    • Do not use hard brushes or abrasive chemicals that could scratch the stainless steel.
    • Do not submerge the base of the unit in water.
    • Ensure proper handling when lifting the malt basket, as it can weigh up to 30 kgs when soaked.
    • Be aware that the bottom part of the malt basket may have rough edges.
    • Always close the tap before pouring liquid into the boiler.
    • Do not switch the unit ON without liquid in the boiler.
    • Handle with care during use, as surfaces and liquids can reach 100°C (212°F).
  4. Fault Indication: The machine provides error codes (E1, E2, E3, E4) on the display to indicate specific issues:
    • E1 (Temperature Probe Failure): Check if the probe is clean and free of sediment, or if the wire connection is loose.
    • E2 (Temperature Sensor Broken): Indicates a need for sensor replacement.
    • E3 (Dry-Boil Detected): Occurs due to insufficient water, or if malt powder covers the heating area/probe. Requires pouring out wort, removing mash, cleaning the kettle, and restarting.
    • E4 (Overheated Machine): The temperature exceeds the thermostat's set point, and the thermostat fails. Requires disconnecting power, allowing the machine to cool, and then restarting.
  5. Default Factory Settings Restoration: The "PROG" button can be held for 5 seconds to restore factory settings, eliminating previous procedures and settings. This is useful if settings are incorrect or memory/program is out of order.
