Safety Precautions:

Paragon emphasizes safety and provides several guidelines:

  • Electrical Safety: The machine must be properly grounded to prevent electrical shock. It should NOT be immersed in water, as this can damage the equipment and prevent proper function. Always unplug the equipment before cleaning or servicing to prevent electrical shock.
  • Personal Safety: Always wear safety glasses when servicing the equipment.
  • Operational Safety: Direct contact with the equipment by the general public should not be allowed in food service locations. Only trained personnel should operate this equipment. Users must carefully read the entire manual before operation.
  • Alterations: Never make alterations to the equipment. Any alterations by non-certified Paragon personnel will void the warranty and may create unsafe working conditions.

Electrical Requirements:

All models require a properly-grounded 208 to 240VAC power supply. It is recommended to plug the fryer directly into a dedicated outlet, as extension cords may pose a safety hazard and reduce performance.

Important Fire Safety Notice:

Building codes in most North American cities require fryers with more than a 7-pound oil capacity to be operated under a vent hood with an "Automatic Fire Extinguisher System." This requirement may not apply if the fryer is operated outdoors in a trailer or portable concession stand. Paragon fryers are equipped with two temperature control mechanisms: a thermostat with a heat adjustment dial for working temperature and a high limit shut-down controller with a digital temperature display that activates if the primary thermostat fails.

Crucially, an oil-type fire extinguisher must be readily available in case both thermostats fail, leading to a fire.

Unpacking:

Paragon ensures products are carefully inspected and packed for safe delivery. Users should remove all packing material and adhesive before operation and examine the product for completeness and good condition. Any damage or missing parts should be reported to Paragon immediately for replacement.

Operating Cautions:

  • Hot Oil Hazards: Hot oil is dangerous and can cause severe burns upon skin contact.
  • Placement: Place the fryer on a strong, stable table or base to prevent it from being knocked off.
  • Floor Safety: Keep floors clean around the fryer to prevent slips.
  • Flammability: Oil is flammable. Keep open flames away from oil and vapors.
  • Cleanliness: Keep areas and filters above the fryer clean, as oil-soaked lint or dust can easily ignite.
  • Fire Extinguisher: Install an automatic fire extinguisher over the fryer and exhaust duct. Consult local fire protection agencies for requirements and regularly check the system's function.
  • Abnormal Operation: If the fryer smokes or boils abnormally, cut off the power supply and determine the cause before reuse.
  • Power Source: Ensure the power source is properly installed according to local and national codes.
  • Personnel Training: All personnel must understand the hazards of hot oil and proper actions if something malfunctions.
  • Grease Fires: Instruct personnel on how to handle a grease fire. DO NOT use water on a grease fire! Use only approved fire extinguishers and never direct the extinguisher to blow grease out of the oil tank.
  • Shortening: Use appropriate frying shortening.
  • General Reminder: Remember that hot oil is dangerous.

Don'ts for Deep Fat Fryers:

  • Don't fry above 375°F.
  • Don't overload the frying tank.
  • Don't shake breaded items over the fryer.
  • Don't salt items over the fryer.
  • Don't introduce excessive amounts of water to the fryer.
  • Don't fry food in broken-down frying shortening.

Installation:

  1. Placement: Place the fryer on a suitable bench or table, allowing sufficient side space for the reversible top cover to act as a side tray. Position the fryer back enough to prevent the drain valve from extending over the edge.
  2. Local Codes: Check local regulation codes, as some localities may require an exhaust hood and/or an approved fire extinguisher.
  3. Control Panel: Mount the control panel assembly onto the tank. WARNING: Do not lift the fryer by the control panel. Secure the control panel by tightening the two thumb knobs on the back side.
  4. Power: Plug the power cord into the power outlet.
  5. Start-up Test:
    • Turn on the control panel's power switch.
    • On initial startup or if power causes the unit to go out, hold down the Reset (RST Button) until the unit stops flashing. A noise should be heard when the relay turns on.
    • The digital temperature readout should indicate a temperature.
    • Turn the temperature knob up to 200°F. Warning: Turn the temperature knob back to "Off" after a couple of seconds.
    • Turn the power switch off.
    • The heating element should be hot.
    • Test is completed, the fryer is now ready for use. WARNING: Do not operate without any cooking oil.
    • Note: If digital display unit buttons are accidentally pushed, causing unknown readings, turn the Master Switch off then back on, and repeat Step #1.

Operation:

  1. Ensure the "drain valve" is closed.
  2. Fill the fryer tank with frying oil to about 1½ inches below the MAX fill line.
  3. The fryer is now ready for use.
    • WARNING: Some products may require oil temperatures up to 375°F. Use only trained personnel.

Maintenance Features (Cleaning):

  • Skimming: A fine mesh skimmer can be used to remove crust that forms during cooking or routine clean-up.
  • Draining Oil: Use the drain valve to drain cooking oil. An extension on the valve can direct oil flow. To remove the last remaining oil, block the back edge up slightly, and a baster may be used. WARNING: Do not drain until the oil has cooled down.
  • Residue Removal: For routine cleaning, a fine grade steel wool can be used to remove baked-on oil residue in the tank.
