This product is warranted to be free from defects in material and/or
workmanship for a period of 1 year from date of original installation, not to
exceed 18 months from the date of manufacture.
Any component which proves to be faulty in material and/or workmanship
will be replaced or repaired (at the option of Prince Castle, Inc.) without
cost to the customer for parts and labor. This warranty covers on-location
service (i.e. trip charges and/or mileage). Travel mileage is limited to 100
miles (200 Kilometers) round trip (one trip warranty) from an authorized
service agency or its sub-service agency.
This warranty is subject to the following exceptions/conditions:
• Use of any non-genuine Prince Castle parts voids this warranty.
• All labor shall be performed during regular work hours. Overtime
premium (the incremental amount) will be charged to the customer.
• Damage caused by carelessness, neglect and/or abuse (e.g. dropping,
tampering, or altering parts, equipment damaged in shipment, by fire,
flood or an act of God) is not covered under this warranty.
• All problems due to operation at voltages other than that specified on
equipment nameplates are not covered by this warranty. Conversion to
correct voltage is the customer’s responsibility.
• Normal adjustments as outlined in this manual are not covered under
warranty.
• This equipment must be serviced by Prince Castle Authorized Service
Agency or a Prince Castle Service Technician during the warranty period.
• Wearable items such as (springs, Teflon sheets, bearings) are not
Included under warranty.

Overview

This document outlines the operation and maintenance of the Prince Castle MULTIFLEX NCG14 Series, a commercial clam grill designed for foodservice applications. The manual covers both electronic and mechanical control versions of the device, providing detailed instructions for setup, daily use, programming, and troubleshooting.

Function Description:

The MULTIFLEX NCG14 Series is a commercial clam grill used for cooking food products. It features top and bottom heating platens that cook food simultaneously, reducing cooking times and ensuring even heating. The device is available in both electronic and mechanical control versions, offering flexibility in operation and programming. The electronic control version allows for precise temperature and time programming for up to four different products, while the mechanical control version provides a simpler, knob-based temperature setting. Both versions include features for warm-up, cooking, and cleaning, designed for efficient and consistent performance in a commercial kitchen environment.

Important Technical Specifications:

The NCG14 Series grills come with varying power specifications depending on the model.

  • Model NCG-14-x:

    • Height: 26.64 inches (677 mm) (when the top plate is open)
    • Depth: 23.17 inches (588 mm)
    • Voltage: 208-240V
    • Power Options: 2500-3350W, 2850-3800W, 3200-4300W

The unit is designed to operate on alternating current only, and the specified voltage must be applied as indicated on the nameplate to prevent damage and voiding of the warranty. The maximum set point for temperature is 608°F (320°C), and the minimum is 122°F (50°C). The electronic control version features RTD (Resistance Temperature Detector) sensors for accurate temperature measurement and control.

Usage Features:

Initial Start-Up:

  1. Place the unit on a stable table.
  2. Wipe down the exterior and toasting area with a damp cloth.
  3. Heat the unit in a well-ventilated area for approximately 30 minutes to burn off manufacturing oils. Smoke emission during this process is normal.
  4. Brush off any debris from the toasting surface.

Seasoning the Cooking Surfaces:

  • First Time Seasoning:
    1. Bring the grill to 300°F (149°C).
    2. Brush cooking surfaces with a release agent (apply aerosol agents into a cup first).
    3. Let sit for 20 minutes, then wipe clean with a warm damp cloth.
  • Daily Seasoning:
    • Apply a light coating of release agent in the morning and occasionally throughout the day to prevent sticking. Not necessary before grilling each item.

Operating Instructions (Electronic Control):

  1. Start-Up: Turn the power switch ON. Heating indicators turn red, and "Lo" displays, indicating warm-up. Press a product button; the LED above it lights. If the platen is hotter than the preset, "HI" displays. Once preset temperatures are reached, indicators turn green, and the display shows the selected product's time. Initial warm-up is approximately 20 minutes.
  2. Cooking: Place product on the surface, close the lid, and press the product button. The display counts down to "0," then beeps. Press the button again to turn off the alarm. To cancel a program early, press and hold the product button for 2 seconds.
  3. Post-Cooking: Raise the lid, remove food, and scrape residue into the grease tray.
  4. Off: Turn the unit off when not in use. Lids should be closed to save energy.
  5. View Temperature: Press the Logo button to view actual platen temperature. Press product buttons "1" & "2" to view top and bottom temperatures.
  6. Flat Grill Mode: Press the top heater button (right of display) to turn off the top platen and its indicator, activating only the bottom platen. Press again to reactivate the top platen.

Programming Instructions (Electronic Control):

  1. Program Time and Temperature:
    1. Press any product button, then "SET" once. Enter security code: 4, 3, 2, 1.
    2. Set top plate temperature using "1" (increase) or "2" (decrease) buttons.
    3. Press "SET" to save.
    4. Set bottom plate temperature using "1" or "2" buttons.
    5. Press "SET" to save.
    6. Set preset time using "1" or "2" buttons.
    7. Press "SET" to save.
    8. Repeat for other product buttons.
    9. To change right-side time/temperature: Press any right-side product button, then "SET" once. Enter security code: 4, 3, 2, 1. Set top platen temperature and time. If right side has the same preset as left, press and hold "SET" and "4" for 4 seconds until a beep confirms data transmission.
    • Note: Top platen preset temperature must be within ±50°C of bottom platen. "d50" displays if out of range.
  2. Resetting to Factory Defaults: Press and hold "SET" and "1" "2" buttons for 4 seconds. "FAC" displays. Caution: All saved settings are lost.
  3. Switch between °F and °C & Temperature Calibration:
    1. Press "SET" once. Enter security code: 2, 3, 4, 1.
    2. "dEGC" or "dEGF" displays. Set desired unit (°C or °F) using "1" or "2" buttons.
    3. Press "SET" to save.
    4. "OF" displays for top platen calibration. Set offset value (pyrometer reading - display temperature) using "1" or "2" buttons.
    5. Press "SET" to save.
    6. "OF" displays for bottom platen calibration. Set offset value using "1" or "2" buttons.
    7. Press "SET" to save.

Operating Instructions (Mechanical Control):

  1. Cooking: Turn the unit ON. The HEAT ON indicator lights until operating temperature is reached, then turns off. Initial warm-up is approximately 20 minutes. Place product, close lid. After cooking, raise lid, remove food, and scrape residue into the grease tray.
  2. Temperature Setting: Use the thermostat control knob. Knob positions 1-7 correspond to temperatures from 122°F/50°C to 608°F/320°C.
  3. Off: Turn the unit off when not in use. Lids should be closed to save energy.

Maintenance Features:

Daily Cleaning:

  • During Operating Hours:

    1. After each cook cycle, remove grease and food residues with a rounded-corner spatula.
    2. Wipe cooking surface with a damp cloth if needed. Apply release agent if sticking occurs.
    3. Empty grease tray daily or as needed.
  • After Hours:

    1. Press and hold "SET" for 4 seconds to activate cleaning mode. "COOL" displays until plates cool to 149°C (300°F), then "CLN" displays.
    2. In clean mode, remove grease by applying liquid dish detergent (e.g., Ecolab Heat Activated Grill & Toaster Cleaner) with a sponge or plastic scrubbing pad. Note: surfaces are still hot.
    3. Rinse surfaces twice with a clean damp sponge/cloth. Repeat as necessary.
    4. Apply a light coat of release agent.
    5. Clean non-cooking surfaces, including front displays, with a clean cloth and nonabrasive cleaner.
    6. Press top heater button to exit cleaning mode.
    7. To remove carbon buildup, use an approved aluminum-safe carbon removal agent according to instructions. Re-season surfaces afterward.
  • Cautions: Do not immerse, hose down, or splash water on the unit, control housing, or conduit. Do not use ice, pumice, griddle stones, abrasives, or sharp instruments on platen surfaces. Abusing surfaces voids the warranty.

Spring Adjustment:

The spring setting, which holds the top housing in the up position, is factory-set for long-term use. If the top housing does not maintain its original setting after extended use, the spring tension can be adjusted:

  1. Unscrew the marked screws and remove the cover.
  2. Insert a screwdriver into the hole on the collar and hold it. Use a 3/16 hex wrench to loosen the set screw. Turn the screwdriver in the direction of the arrow to tighten the spring (opposite to loosen), then tighten the set screw.
  3. Replace the cover and attach the screws.
  • Note: Repeat as needed to achieve proper spring pretension force.

Limited Warranty:

The product is warranted against defects in material and/or workmanship for 1 year from the original installation date, not exceeding 18 months from the manufacture date. This includes on-location service (trip charges and mileage up to 100 miles/200 kilometers round trip).

  • Exclusions: Use of non-genuine Prince Castle parts, labor performed outside regular work hours (overtime premium charged to customer), damage from carelessness/neglect/abuse (dropping, tampering, shipment damage, fire, flood, act of God), operation at incorrect voltages (conversion is customer's responsibility), normal adjustments, service by unauthorized personnel, and wearable items (springs, Teflon sheets, bearings).

Platen Surface Limited Warranty Exclusions:

Platen surfaces are warranted for 1 year against manufacturing defects. The warranty is void if misuse or abuse is determined, including improper installation, incorrect voltage, misuse of tools causing scratches/indentations/peeling, use of damaging chemicals/abrasives, or neglect of daily maintenance.

Error Code Table:

The manual provides a table of error codes (E11 to E7) with corresponding criteria and recommended actions, such as checking heaters, relays, replacing RTDs, or checking PCB boards and transmission wires. For example, E11 indicates the top heating plate did not reach the set temperature within 20 minutes, requiring a check of the top heater and relay. E31 indicates a top RTD open circuit, requiring RTD replacement.
