Overview

This document describes the Robot-Coupe Power Mixer, a professional appliance designed for various food preparation tasks in catering, restaurants, and laboratories. The power mixer is available in several models, including the MP 350 Ultra, MP 450 Ultra, MP 550 Ultra, MP 600 Ultra, MP 800 Turbo, MP 350 Combi Ultra, MP 450 Combi Ultra, MP 450 FW Ultra, and MP 450 FW XL Ultra, some of which offer variable speed functionality.

Function Description

The Robot-Coupe Power Mixer is a versatile appliance capable of performing two primary functions: blade function (mixing) and whisk function. Some models also offer a mixing tool function for specific preparations.

  • Blade Function (Mixer): This function is ideal for making soups, vegetable purées, pulps, and various sauces (green, rouille, remoulade, cream emulsions, tomato, parsley). It can also be used for bisques (langoustines and shellfish), vegetable and fish mousses, fruit compotes, and pancake batter. Thanks to its powerful motor, it can process quantities ranging from 50 to 400 litres, depending on the model, delivering rapid and high-quality results.
  • Whisk Function: This function is perfect for preparations requiring aeration or emulsification, such as pancake batter, mayonnaise, beaten egg whites, chocolate mousse, butter sauces, whipped cream, smooth fromage frais, and mashed potatoes (fresh or instant). The whisk, featuring a metallic gearbox, is designed for durability, especially when processing denser items like mashed potatoes. In whisk function, the appliance can process 2 to 50 egg whites or 1 to 60 kg of purée.
  • Mashed Potatoes Function (Specific Models): For MP 350 Combi Ultra, MP 450 Combi Ultra, and MP 450 FW Ultra models, a self-regulating speed system is specifically developed for pureeing tasks using the whisk. This is achieved by turning the knob counter-clockwise until a click is felt, and mashed potatoes should be processed at the lowest speed. A triangle mark on the speed variation switch indicates this dedicated speed.
  • Mixing Tool Function (MP 450 XL FW Ultra, optional for Combi Ultra models): This function allows for specific mixing tasks, with a speed range of 160 to 510 rpm.

Important Technical Specifications

The power mixers are designed for professional use and feature robust construction.

  • Motor Types: Robot-Coupe supplies models with different motor configurations to suit various power supplies:
    • 230 V / 50 Hz (for 220 V to 240 V)
    • 120 V / 60 Hz
    • 220 V / 60 Hz
  • Electrical Connection: Class II appliance (double insulation) requiring a single-phase alternating current. It does not need an earthed socket. The universal-type motor is fitted with an interference suppressor. The power outlet must be protected by a 30mA RCBO and a 10 A fuse. A standard 10/16 A single-phase socket is required.
  • Speed Variation:
    • Whisk function (Combi Ultra, FW Ultra models): Speed between 250 and 1,500 rpm.
    • Mixer function (V.V. Ultra, Combi Ultra models): Speed between 1,500 and 9,000 rpm.
    • Mixing tool function (MP 450 XL FW Ultra): Speed ranging from 160 to 510 rpm.
    • Variable-speed models allow adjustment to suit each preparation and to start at a lower speed to reduce splashing. The automatic speed regulation maintains the selected speed even if the consistency of the preparation changes.

Usage Features

  • Safety Systems: The appliance is equipped with several safety features:
    • Safety Control Button: Prevents unintentional starting. Two buttons must be pressed to start the mixer.
    • Thermal Protection System: Automatically shuts down the appliance if it runs for too long. A cooling period of approximately 30 minutes is required before restarting.
    • Overload Protection System: Shuts down the motor if it becomes overloaded (e.g., due to a spoon in the pan or a too-thick mixture). This indicates the preparation is too thick or unsuitable for a stick blender.
    • No Volt Release: Prevents automatic restart after a power cut or unplugging. The starting procedure must be followed again.
    • Intensity Warning Light (MP 600 Ultra and MP 800 Turbo): Flashes for 5 seconds in case of overload or use with a sticky preparation, indicating the motor will stop shortly. The mixer can be restarted, but will stop again if the consistency is not modified.
    • Power Cord Safety: A green indicator light on the cord indicates electrical current, correct connection, and proper cable operation.
  • Ergonomics:
    • Removable Handle: For enhanced ergonomics, safety, and ease of handling, a "removable handle" attachment is recommended for all Large range mixers, including Combi models (except MP 800 Turbo). This handle allows for a two-handed grip and helps tilt the mixer to prevent the bell from touching the container bottom.
    • Pan Support: Optional adjustable pan supports are available for pans with diameters from 330 mm to 1300 mm. A universal support is also available for any pan diameter. These supports allow the user to tilt the mixer without effort or leave it running on its own, are made of stainless steel, and are easy to clean.
  • Assembly and Dismantling: The simple design allows for quick assembly and dismantling of moving parts, facilitating maintenance and cleaning.
    • Blade Function: Attaching the bell to the tube involves aligning flat sides and catches, then turning to lock. Removing the bell is done by turning in the opposite direction. The blade can be removed for cleaning by unscrewing the male drive coupling using a provided tool or oven glove.
    • Whisk Function: Attaching the whisk holder to the motor unit involves aligning flat sides and catches, then turning to lock. Whisks are inserted into the whisk holder drive shaft by aligning lugs with notches and rotating slightly to lock. The ejector tool is used to remove whisks.
    • Mixing Tool Function: The mixing tool is attached to its housing by aligning flat sides, then the housing is inserted into the motor unit. A button is pressed to release the mixing tool from its housing.
  • Working Position: It is recommended to position both hands on the mixer (main handle and removable handle if applicable) and keep them as far as possible from moving and cutting parts. Tilting the mixer slightly ensures the bell does not contact the bottom of the recipient. For optimum efficiency in blade function, two-thirds of the foot should be immersed.

Maintenance Features

  • Cleaning:
    • Always unplug the appliance before cleaning.
    • Clean the appliance and its attachments at the end of each cycle.
    • Never immerse the motor unit in water; clean it with a damp cloth or sponge.
    • For aluminum parts, use cleaning fluids intended for aluminum.
    • For plastic parts, avoid detergents that are too alkaline (e.g., containing caustic soda or ammonia), as they can cause rapid deterioration.
    • After using in hot preparations, cool the foot in cold water before dismantling the bell.
    • For routine cleaning, fill a container with hot water (60-70°C) and dishwashing liquid, then run the mixer for 20 seconds. Unplug, clean the outside of the tube and bell with a brush, rinse, and run again for 10-15 seconds.
    • At the end of the day, detach the bell to remove condensation and allow it to dry.
    • Blades: Can be removed for thorough cleaning. Always dry them thoroughly to prevent spotting. Handle with care due to sharpness.
    • Whisk Holder: Never immerse in water. Clean with a throwaway wiper. Do not clean in a dishwasher.
    • Whisks: Can be cleaned by hand or in a dishwasher. Remove the whisk ejector for effective cleaning.
    • Mixing Tool Housing: Never immerse in water or put in the dishwasher. Clean with a slightly damp cloth.
    • Mixing Tool: Can be washed by hand or in the dishwasher.
    • Important Cleaning Note: Never use pure bleach, abrasive cleaning products, solvents, scouring pads, or powder detergents, as these can damage metal and plastic surfaces.
  • Regular Checks:
    • Check seals and washers regularly for wear and tear, replacing them if necessary to maintain watertightness.
    • Grease the washer with a food-safe lubricant.
    • Check the state of the 3 buttons' watertight membranes and the blender housing for cracks or abnormal openings.
    • Maintain and check attachments, especially with corrosive ingredients like citric acid.
  • Part Replacement:
    • Blades: Subject to wear and tear, should be replaced periodically to ensure consistent product quality. The washer and watertight seals should also be changed at the same time.
    • Whisker Wires: Should be replaced periodically to ensure optimum quality of the finished product.
    • Power Cord: Subject to wear and tear, must be replaced if damaged (cuts, burns, etc.). A dismantling tool is provided for replacement.
    • Cartridge: Needs to be changed if liquid seeps into the foot or if there is play in the blade. A knife dismantling tool is used for both dismantling and mounting the cartridge.
  • Troubleshooting: If the mixer stops, identify the cause (power cut, overheating, inability to locate cause). Follow specific steps for each scenario, including checking power supply, cooling the motor, and inspecting the plug, blades, power cord, and drive shaft. If issues persist, consult a retailer or after-sales service.
