This document is an instruction manual for Anvil by Royal-Kincool Cake Showcases, including models for cold deli, hot pastry, and gelato displays, in both floor-standing and countertop configurations. The manual provides essential information for the safe operation, installation, usage, maintenance, and disposal of these commercial display units.
Function Description
The Anvil Cake Showcases are designed for the display and storage of various food items at specific temperatures.
- Cold Deli Cake Showcases are refrigerated units intended to keep cakes, pastries, and other deli items cool, typically within a temperature range of 2°C to 8°C.
- Hot Pastry Showcases are heated units designed to keep pastries and other hot food items warm, typically within a temperature range of 40°C to 75°C.
- Gelato Display Showcases are specialized refrigerated units for displaying gelato and ice cream, maintaining very low temperatures, typically between -12°C and -22°C.
- Countertop versions offer compact solutions for smaller spaces, while Floor Standing versions provide larger capacities.
- The units feature glass shelves for display, internal lighting (LED for cold deli/gelato, halogen for hot pastry), and sliding doors for access. They are equipped with temperature controllers for setting and monitoring the internal temperature, and some models include demisting and defrosting functions.

Usage Features
The showcases are designed for ease of use with factory-set temperatures, though adjustments are possible.
- Installation: Units must be transported, stored, and handled in a vertical position to prevent oil contamination in the compressor. Proper unpacking involves removing plastic film from stainless-steel panels. Positioning requires a horizontal, sturdy surface, indoor use only, and 200mm clearance for ventilation, especially near heat sources. Brakes on wheels should be engaged for stability. Assembly involves placing glass shelves onto supports.
- Electrical Connection: Ensure proper grounding and voltage matching the serial number label.
- Operation (Cold Deli/Gelato):
- Plug in the machine and ensure sliding doors are closed.
- Press the light button for internal lighting.
- Power on/off by pressing the power button for 3 seconds.
- Temperature setting: Press the "set" button for 1 second, then use up/down arrows to adjust. The display will show the working temperature after 6 seconds. Factory default for cold deli is 2°C. Gelato units are not designed for overnight storage; products should be removed and stored in a freezer. Gelato units require natural defrosting every few days (2-3 times a week) by turning off the unit and removing product.
- Manual demisting (default "off"): Press the demist button for 6 seconds to activate.
- Manual defrosting: Press the defrost button for 3 seconds to start (display shows "dEF") and again for 3 seconds to stop.
- Operation (Hot Pastry):
- Plug in the machine and ensure sliding doors are closed.
- Press the light button for internal lighting.
- Power on/off by pressing the power button for 3 seconds.
- Temperature setting: Press the "set" button for 1 second, then use up/down arrows to adjust. The display will show the working temperature after 6 seconds. Factory default for hot pastry is 65°C.
- Loading: Ensure front and rear vents are not blocked to maintain airflow and consistent temperature across shelves. Avoid filling with room temperature products unless allowing several hours for cooling.
- Safety: Do not use with wet hands/feet, do not allow children or untrained persons to operate, do not leave outside, do not pull electrical cord to unplug. Do not store explosive substances.
Maintenance Features
Regular maintenance is crucial for hygiene and performance.
- Cleaning: Interiors should be cleaned regularly for health standards. Always unplug the machine before cleaning. Use neutral soap and warm water; rinse carefully to remove soap residue. Do not use abrasive powders.
- Condenser Filter: The removable condenser filter should be cleaned at least monthly.
- Motor Lubrication: The motor is permanently lubricated and does not require oil.
- Repairs: Any necessary repairs must be performed by an authorized service agent. If the supply cord is damaged, it must be replaced by the manufacturer or a qualified person to avoid hazards.
- Troubleshooting: The manual includes a troubleshooting guide for common issues like no power, high temperature, compressor starting/stopping frequently, fan not working, and various error codes (ER1, ER2, ER3). Solutions often involve checking connections, cleaning the condenser filter, defrosting, or contacting a service agent.
Disposal
- To render an old machine unusable, pull out the mains plug and cut off the power cable.
- Refrigerants and gases in thermal insulation must be disposed of professionally according to local regulations.
