Mediterranean veal rolls in zucchini
on a bed of tomato ragout
Ingredients for 4 persons:
800 g ne veal minced meat
8 slices of Parma ham
4 mid-sized green zucchini
10 black and green olives (each)
4-6 dried tomatoes (watered)
2 spring onions
2 sprigs of rosemary and thyme (each)
12 ripe vine tomatoes
2 spring onions
2 garlic clove
salt, pepper, sugar, olive oil, aluminium foil
Herbs, olives, spring onions, diced well-watered dried tomatoes are mixed with the minced
meatandavouredwithsaltandpepper.Youcut8squaresofthealuminiumfoilandoilthem
with the olive oil.
The zucchinis are ne planed lengthwise and then put lightly overlapped on the aluminium foil.
One slice of Parma ham is put on the zucchinis. You form 8 rolls out of the minced meat, lay
them on top of the zucchini-Parma ham and wrap it all into the aluminium foil. You x the ends
of the foil by twisting them.
You ll the steamer with approx. 1 litre of water shortly under the insert - put the rolls of
minced meat into the insert and cook them with 85° C about 15 minutes.
Forthetomatoragoutyouquarterthevinetomatoesandseedthem.Thenyousquaretheto-
matoes as well as the garlic cloves and the spring onions and put it all into a long-handled pot
tosweatitwitholiveoil.Thesquaresofthetomatoesareaswellshortlysweatedwithitand
then you fl avour it with salt, pepper and a pinch of sugar.
You put the tomato ragout on pre-heated plates. The ends of the aluminium foil are cut with
scissors and the rolls of minced meat are cautiously unwrapped. You arrange the rolls of minced
meat either as a whole or cut in slices on top of the tomato ragout.
This recipe is free of lactose and gluten.
As side dishes you may serve risotto, gnocchi or polenta with a fresh rocket salad with parmesan
cheese and roasted pine nuts.
