Overview

This document provides a comprehensive guide for the SENCOR SFR 7200SS fryer, covering its function, usage, and maintenance.

Function Description

The SENCOR SFR 7200SS is a deep fryer designed exclusively for frying food using suitable oil or shortening. It is not intended for solid fats, heating water or other liquids, or cooking food directly in the frying pot without a frying medium. The appliance features a heating element (A6) and a frying pot (A7) where the frying medium is heated. A frying basket (A3) with a removable handle (A4) is used to immerse food into the hot oil. The fryer is equipped with controls (A11) including a rotary timer (C2) for setting frying time (5 to 30 minutes) and a temperature control knob (C4) for setting frying temperature (130 to 190°C). Indicator lights (C1, C3) show when the fryer is on and when the set temperature has been reached. A viewing window (A2) on the lid (A1) allows users to monitor the frying process without opening the lid. The fryer also includes minimum and maximum frying medium level marks (A13) to ensure safe operation.

Usage Features

Preparing the Fryer: Before first use, the lid, frying basket with handle, and frying pot should be washed with hot detergent solution, rinsed with clean water, and thoroughly dried. The fryer's outer body should be wiped with a lightly dampened cloth and dried. The fryer should be placed on a flat, dry, clean, stable, and heat-resistant surface, away from flammable materials and other heat sources. A clear space of at least 15 cm on all sides is required for sufficient air circulation. The handle (A4) is attached to the frying basket by pressing the handle wires (B1) towards oneself and inserting the angled ends into the holes of the holders (B2) in the basket until an audible click is heard. The dry and empty frying pot (A7) is placed in the fryer body, and the heating box (A12) with the heating element (A6) is slid into the pot. Frying medium (oil or dissolved shortening fat) is poured into the frying pot up to the MAX mark, ensuring not to exceed it or fall below the MIN mark. Only "non-foaming" oils or fats suitable for deep-frying should be used, and different types of fats or oils should not be mixed.

Deep Frying: To start frying, the power cord is connected to a socket. The temperature control knob (C4) is set to the desired temperature, and the timer (C2) is turned to switch on the fryer. The power indicator light (C1) and timer indicator light (C3) will illuminate. The indicator light (C3) will turn off when the set temperature is reached, which typically takes about 10 minutes. The fryer only starts when both the temperature and timer are set. Food should be cut into equal-sized pieces for even cooking and dried thoroughly before frying to prevent splashing. Frozen foods require careful handling, with all ice removed to avoid excessive splashing. When frying foods with a large amount of water or frozen foods, the basket should be lowered slowly into the frying medium to prevent overflow. During frying, it is recommended to stir the food occasionally. The thermostat automatically maintains the correct temperature, causing the power indicator light to turn on and off intermittently. After frying, the control knob is turned to the "Off" position. The lid is removed carefully to avoid hot steam, and the basket is pulled up and hung on the fixed bracket (A5) in the drip position to allow excess oil to drain. The frying basket is very hot after frying and should only be handled by its handle. The deep fryer should be allowed to cool down with the lid open to prevent water condensation.

Tips for Optimal Frying: Higher temperatures are suitable for lighter foods like French fries, while lower temperatures are better for bulkier foods like chicken drumsticks to ensure even cooking. French fries can be fried in two phases: 5-10 minutes at 170°C, followed by cooling, then 2-4 minutes at 190°C. When frying multiple food types, start with the one requiring the lowest temperature. Pre-fried foods require higher temperatures and shorter times than raw foods.

Removing Unpleasant Odours: To neutralize unpleasant odours from the frying medium (e.g., from fish), heat the oil to 160°C, add a few shoots of parsley or two slices of bread, and remove them with a suitable utensil once the "bubbles" stop forming.

Overheating Protection: The fryer has a safety fuse that protects it from overheating. If the fryer overheats (e.g., due to prolonged use or accidental activation without frying medium), the safety fuse will activate, shutting off the fryer. In such a case, the fryer must be disconnected from the power socket and allowed to cool down. Replacement of the safety fuse must be done by an authorized service centre.

Handling the Frying Medium: Cooled frying medium should be stored in enclosed bottles or containers in a refrigerator or cool place when not in regular use. It should be filtered through a fine strainer to remove food residues. The frying medium does not need to be replaced after every use; if mainly potatoes are fried and the medium is filtered, it can be reused 8 to 10 times, but not for more than 6 months. The frying medium should be replaced if it turns brown, smells or smokes, contains too much water (indicated by large bubbles or rapid rise in oil), or is no longer fresh. When replacing, the cooled medium is poured into a suitable container, and the frying pot is washed and dried before refilling.

Maintenance Features

Cleaning and Maintenance: Before any cleaning or maintenance, the deep fryer must be completely cooled and disconnected from the power grid. The fryer should be cleaned immediately after it cools down to prevent food scraps from drying. The fryer unit should be wiped with a soft damp cloth, and the power cord with a dry cloth. The handle is slid out of the frying basket, and both are washed in hot water with detergent, rinsed, and dried thoroughly. These parts can also be washed in a dishwasher. The inside of the fryer unit can be wiped with paper towels, and tougher soils can be cleaned with a soft sponge. The fryer's outer body, power cord, and heating element are not dishwasher safe and should not be sprayed with water or submerged in any liquid. If the filter (D2) or viewing window glass (D3) are dirty, the cover plate (D1) is unscrewed from the underside of the lid, and the filter and glass are washed in hot water with detergent, rinsed, and dried thoroughly before being reassembled. Abrasive cleaning products, steel wool, or chemicals should not be used on the deep fryer unit or frying pot as they can cause damage. Any frying medium stains or remains on the hotplate or deep fryer unit should be removed every time the frying medium is poured out.

Storage: Before storage, the fryer must be completely cool, disconnected from the power supply, clean, and dry. It should be assembled in the same way as for frying, with the lid attached. Store the fryer in a clean, dry, and well-ventilated place out of reach of children, away from extreme temperatures, direct sunlight, excessive humidity, and dusty environments. No items should be placed on the stored deep fryer.
