This document is a user manual for a Smeg countertop combi steam oven, model COF01. It provides comprehensive instructions for safe use, operation, and maintenance of the appliance.
General Safety Instructions
The appliance and its accessible parts become very hot during use, so small children should be kept away. Users should wear oven gloves when handling food inside the oven. In case of fire, the appliance should be turned off and flames smothered with a fire blanket, not water. Children aged 8 and above, and individuals with reduced physical, sensory, or mental capacities, may use the appliance under adult supervision. Children under 8 should be kept away from the appliance and power cable unless constantly supervised. Cleaning and maintenance should not be performed by unsupervised children. The cooking process, especially short ones, must always be monitored. The appliance should never be left unattended during cooking operations involving fats or oils, as these could ignite. Users should be careful not to pour water directly onto hot trays and keep the oven door closed during cooking. When moving food or at the end of cooking, the door should be opened 5 cm for a few seconds to release steam before opening fully. After use, the appliance should be allowed to cool down before touching internal surfaces or heating elements to avoid burns. Pointed metal objects should not be inserted into the appliance slots. The appliance should be switched off immediately after use. Flammable materials and aerosols should not be used or stored near the appliance. The appliance should not be modified, and installation and servicing must be carried out by qualified personnel. Users should not attempt to repair the appliance themselves. The power cable should not be pulled to unplug the appliance.
Caution when using this appliance
Abrasive or corrosive detergents, rough materials, or sharp metal scrapers should not be used on glass parts to avoid scratches and shattering. Wooden or plastic utensils are recommended. Users should not sit on the appliance. Cleaning products containing chlorine, ammonia, or bleach should not be used on steel parts or metallic surface finishes. Racks and trays must be inserted fully into the side guides. The bottom of the oven cavity should not be covered with aluminum or tin foil. Pans or trays should not be placed directly on the bottom of the oven cavity. Greaseproof paper should be placed so it does not obstruct hot air circulation. The open door should not be used to rest pans or trays on the internal glass pane. The oven door should never be used to lever the appliance into place during fitting. Excessive pressure on the open oven door should be avoided. The handle should not be used to lift or move the appliance. No weight should be rested on or sat on the open door. Steam jets should not be used to clean the appliance. Spray products should not be used near the appliance. Ventilation openings and heat dispersal slots should not be obstructed. Fire hazard: objects should never be left in the oven cavity. The appliance should not be used to heat rooms. Plastic cookware or containers should not be used for cooking. Sealed tins or containers should not be placed in the oven. All unnecessary trays and racks should be removed during cooking. When cooking with steam functions, the tray should not be overfilled (800 ml). The appliance must be installed and used on a flat, stable surface. A minimum distance of 8 cm should be maintained from vertical combustible walls. This appliance is not suitable for installation in boats or caravans.
Connecting the appliance
The voltage and frequency of the power supply must match those indicated on the data plate. If the plug is incompatible, technical assistance should be contacted. The power cable connector must be fully inserted into the product's connector. Children must not play with the appliance and its power cable should be kept out of their reach. The appliance should always be unplugged when left unattended, before assembly, disassembly, or cleaning. The appliance should be switched off and disconnected from the power supply before changing accessories or approaching moving parts. The appliance must not be installed on a pedestal. The appliance, power cord, or plug should not be immersed in water or any other liquid. Liquids should be avoided on the power plug and base. If the power cable is damaged, technical support should be contacted for replacement. Personal protective equipment (PPE) should always be used when working on the appliance. The power supply should be switched off before any work. The appliance must be disconnectable after installation via an accessible plug. Before replacing the oven light bulb, the appliance must be switched off and disconnected from the mains power supply. The bulbs are specific for household appliances and not for home lighting. The appliance can be used up to a maximum altitude of 4,000 meters above sea level.
Manufacturer liability
The manufacturer is not liable for damage caused by: unintended use, not reading the user manual, tampering with the appliance, using non-original spare parts, or not complying with safety instructions. The instructions should be stored carefully and transferred with the appliance if it is given to others. Instructions can be downloaded from www.smeg.com.
Disposal
Electrical appliances should not be disposed of with household waste. Devices marked with the European Directive 2012/19/EU symbol must be disposed of separately at authorized waste disposal facilities. Correct disposal helps protect the environment and human health. For more information, contact your local waste disposal department or the retailer.
To save energy
Unless otherwise indicated, defrost frozen foods before placing them in the oven. When cooking multiple foods, cook them consecutively to utilize the hot oven efficiently. Use dark metal molds for better heat absorption. Remove unnecessary trays and racks during cooking. Stop cooking a few minutes early; residual heat will complete the process. Minimize door openings to prevent heat dispersal. Keep the oven interior clean.
Light sources
This appliance contains user-replaceable light sources. The light sources are suitable for ambient temperatures ≥300°C and high-temperature applications like ovens. This appliance contains efficiency class "G" light sources.
Appliance Description (Fig. A)
The appliance features a control panel and display (1), seal (2), oven light (3), door (4), fan (5), positioning guides (6), removable water reservoir (7), rack (8), enamelled tray (9), and perforated tray (10).
Before first use
Danger of burns due to high temperatures inside the oven. Do not remove the earth prong, use an adapter, or an extension cord. Failure to follow these instructions can result in death, fire, or electrical shock. Remove all protective films and labels (except the technical data plate) from the appliance and accessories. Wash all accessories before first use. The current time must be set before using the appliance. Ensure all components are intact before use.
Description of the parts (Fig. A)
- Water reservoir (7): Removable reservoir for steam cooking.
- Light (3): Illuminates when the door is opened or during cooking.
- Internal fan (5): Cools the appliance and operates during cooking, causing a steady outflow of air from above the door, which may continue briefly after switch-off.
- Positioning guides (6): Three shelves for trays and racks at different heights, indicated from bottom upwards.
Description of accessories (Fig. A)
- Rack (8): Supports oven-proof containers, molds, or casserole dishes.
- Enamelled tray (9): Recommended for traditional cooking of cakes, pizza, and baked desserts. Also collects fat from food placed on the rack.
- Perforated tray (10): Recommended for pure steam or combination steam cooking (e.g., fish, vegetables). Can also be used for air-frying breaded, pre-cooked, or frozen foods (chips, potato or meat croquettes, bite-size mozzarella).
- Cooking containers: Users can use their own high-temperature resistant containers. Metal containers are recommended for steam cooking for better heat distribution. Metal containers may deform at high temperatures but return to shape when cooled. Thick ceramic plates may require more heat and longer cooking times.
- All accessories in contact with food comply with current legislation.
Description of the controls and display (Fig. B, Fig. C)
- Menu navigation knob (11): Navigates menus and submenus. A steady LED light indicates use.
- START/STOP button (12): Confirms menu/submenu selection, starts/stops cooking. A steady LED light indicates cooking is in progress.
- Parameter navigation knob (13): Navigates cooking settings. Relative LEDs light up during configuration.
- SET button (14): Confirms values. Displays settings menu when pressed for 3 seconds in clock mode. Relative LEDs light up when cooking starts and switch off when it ends.

- Recipe number (25): Displays the selected Chef Menu recipe number.
- Clock and Timer (26): Displays current time, cooking time, and programmed cooking timer.
- Temperature (27): Displays cooking temperature in °C or °F.
- Steam/weight percentage indicator (28): Displays steam percentage (%) for steam cooking or food weight (kg/lb) for Chef Menu.
Use
First use: Set a cooking time of at least one hour. Heat the empty oven to maximum temperature to burn off manufacturing residues. Ventilate the room during heating. Unpleasant smells may occur initially but disappear after the first heating. Clean trays before first use to remove residues.
Setting the time: When connecting or after a power failure, the time "12:00" and clock symbol flash.
- Turn the right knob to set the hour.
- Confirm with the SET button.
- Repeat for minutes.
To set current time and/or display format (12h/24h), see "3.3 Settings Menu".
Selecting the menu and cooking functions:
- Turn the left knob to navigate through functions.
- Confirm with START/STOP button.
- Turn the left knob to navigate through functions in the selected menu.
- If not modifying settings, press START/STOP to start.
- To change selected function during cooking, turn the left knob to navigate and confirm with START/STOP.
- Static: Traditional cooking for single dishes, roasts, fatty meats, bread, pies.
- Fan-assisted: Intense and uniform cooking for biscuits, cakes, and cooking on more than one level.
- Grill: Excellent grilling and gratinating. Used at the end of cooking for uniform browning.
- Bottom fan-assisted: Heat from bottom of cavity. Perfect for cakes, pies, tarts.
- Air-Fry: For frying without oil or with small oil amount. Use with special perforated tray.
- Warm: For reheating or keeping food warm.
- Defrost: For defrosting frozen foods.
- Pure steam cooking: 100% steam for fish, vegetables, chicken, rice, potatoes, desserts. Low temperatures, can be used to help dough rise. Use with special perforated tray.
- Fan + steam: Combination fan-assisted and steam cooking (steam level adjustable from 20-70%).
- Fan grill + steam: Combination fan-assisted grill and steam cooking (steam level adjustable from 20-70%).
After selecting a function, temperature, cooking duration, and programmed cooking values can be set.
Chef Menu: Various recipes grouped by food category. Smeg chefs' recipes are popular. Select dish type and weight; appliance suggests suitable function, time, and temperature. Small variations may occur due to ingredients or accessories. Check food at end of preset cooking time.
- Meat and poultry: Pork spare ribs (enamelled tray, shelf 1), Pork sausages (perforated tray, shelf 2), Roast pork (enamelled tray, shelf 1), Roast beef (enamelled tray, shelf 1), Duck stew (enamelled tray, shelf 1), Whole roast chicken (enamelled tray, shelf 1), Chicken nuggets (perforated tray, shelf 1).
- Fish and shellfish: Salmon fillet/steak (perforated tray, shelf 2), Whole fish (enamelled tray, shelf 1), Cod au gratin (perforated tray, shelf 1), Sea bream/sea bass en papillote (enamelled tray, shelf 1), Calamari/squid/cuttlefish (perforated tray, shelf 2), Scallops/mussels au gratin (perforated tray, shelf 2), Breaded prawns (perforated tray, shelf 2).
- Vegetables and side dishes: Roast potatoes (enamelled tray, shelf 1), Vegetables au gratin (enamelled tray, shelf 1), Mixed roasted vegetables (perforated tray, shelf 1), Stuffed vegetables (enamelled tray, shelf 1), Chips/potato croquettes, frozen (perforated tray, shelf 2).
- Cakes and sweets: Chocolate fondant (moulds on perforated tray, shelf 1), Apple pie (cake tin on rack, shelf 1), Tart (cake tin on rack, shelf 1), Sponge cake (cake tin on rack, shelf 1), Cheesecake (cake tin on rack, shelf 1), Muffin/cupcakes (moulds on perforated tray, shelf 1), Biscuits (enamelled tray, shelf 1).
- Bread, pizza and pies/flans: Dough proving (bowl on bottom of oven, shelf 1), Pan baked pizza (enamelled tray, shelf 1), Lasagne/pasta bake (enamelled tray, shelf 1), Potato gnocchi/pot stickers (perforated tray, shelf 2), Leavened bread (enamelled tray, shelf 1), Focaccia (enamelled tray, shelf 1), Vegetable tart (cake tin on rack, shelf 1).
After recipe selection, weight and programmed start time can be modified. Cooking duration is automatically calculated based on weight but can be changed.
Modifying cooking temperature: Not available in Chef Menu.
- Before starting: Select menu and function. Turn right knob to increase/decrease temperature (indicator flashes). Press START/STOP to start.
- During cooking: Press SET. Turn right knob to increase/decrease temperature (indicator flashes). Confirm with START/STOP or wait 5 seconds for automatic restart.
Setting cooking duration: Not available in Chef Menu.
- Press SET until timer icon flashes.
- Turn right knob to set duration.
- Confirm with START/STOP. If changed during cooking, wait 5 seconds for automatic restart. Remaining time shown by progress bar.
Setting a programmed cooking cycle: Cooking stops at a user-set time. Appliance programs start time automatically. Pre-heating time is included.
- Press SET until flashing programmed cooking icon is displayed.
- Turn right knob to set end time.
- Confirm with START/STOP. Appliance waits for start time.
- Cannot set end time without duration.
- Cannot set programmed cycle if cooking has started.
To cancel:
- Press SET until flashing programmed cooking icon is displayed.
- Turn right knob anticlockwise to current time and reset.
- Confirm with START/STOP.
Changing steam level: Available only in Steam Cooking menu. For combination cooking (fan-assisted and grill), steam level is adjustable from 20% to 70%.
- Press SET until % indicator flashes.
- Turn right knob to increase/decrease steam level.
- Confirm with START/STOP. If changed during cooking, wait 5 seconds for automatic restart.
Modifying weight: Available only in Chef Menu.
- Press SET until unit of measurement (kg/lb) flashes.
- Turn right knob to modify weight (cooking duration updates automatically).
- Confirm with START/STOP. If changed during cooking, wait 5 seconds for automatic restart.
Preheating stage: Cooking is preceded by preheating. Indicator lights up, showing progressive temperature. Unless specified, do not place food in oven during preheating. A buzzer sounds when preheating finishes, indicating cooking start. Confirm with START/STOP or by placing dish in oven. If a timer is set, countdown starts automatically after preheating confirmation.
Starting cooking:
- Open door.
- Place food in oven.
- Close door. Cooking starts automatically, indicator switches off.
If food is already in oven, press START/STOP after preheating to start cooking.
End of cooking: If duration set, cooking ends automatically. "End" appears, timer icon flashes, buzzer sounds (deactivate with START/STOP). To end manually and return to clock, press and hold START/STOP for 3 seconds.
Residual heat: After use, if oven is hot, residual heat indicator appears. Heat level decreases automatically until it switches off.
Filling reservoir for steam cooking (Fig. D): If no water, light flashes.
- Press release button on lid and pull to open.
- Lift handle and remove reservoir.
- Fill left compartment with water up to MAX level.
Use cold tap water (not too hard), softened water, or still mineral water. Do not use distilled water, high chloride tap water (>40 mg/l), or other liquids.
- Place reservoir in oven compartment and close lid.
- Confirm with START/STOP.
Caution: Do not fill right compartment (for draining water). If reservoir is empty during steam cooking, process stops for max 5 minutes. Cooking resumes after refill confirmation. If not refilled, appliance continues without steam or finishes if pure steam function.
3.3 Settings Menu: Accessible only in clock mode.
- Press SET for 3 seconds.
- Turn left knob to navigate.
- Turn right knob to set value, confirm with SET.
- Press SET for 3 seconds to save and exit.
Child lock: Locks controls (On). Indicator lights up. To disable, go to Settings menu and select OFF.
Sound: Enables/disables oven sounds.
Clock format: Sets time display to 12 (12H) or 24 hour (24H). Factory default is 24h.
Modifying the time:
- Clock icon appears, hours flash.
- Turn right knob to set value.
- Confirm with SET.
- Repeat for minutes.
This can also be accessed by pressing START/STOP for 3 seconds in clock mode.
Setting units of measurement: For temperature and weight (Chef Menu).
Display brightness: Select brightness level.
- 1: 25%
- 2: 35%
- 3: 50%
- 4: 70%
- 5: 90%
Factory default is 5.
Display ECO function: If enabled (On), display brightness lowers automatically in clock mode. No effect if brightness is already set to 1.
Water hardness: Sets water hardness to optimize descaling. Factory default is medium 3. Descaling frequency depends on hardness setting. Hours of use before descaling request:
- 1: 18 hours
- 2: 12 hours
- 3: 9 hours
- 4: 6 hours
- 5: 4 hours
Descaling: If enabled (On), starts descaling cycle (see "4.1 Descaling (Fig. E)").
Cleaning and maintenance
Always remove plug and allow appliance to cool before cleaning.
Caution: Do not use steam jets, cleaning products with chlorine, ammonia, or bleach on steel/metallic parts. Do not use abrasive/corrosive detergents, rough/abrasive materials, or sharp metal scrapers. Clean components and accessories regularly after each use.
Cleaning surfaces: Clean regularly after use, once cooled. Use specific non-abrasive, non-chlorine-based products. Apply to damp cloth, wipe, rinse, and dry with soft/microfiber cloth.
Food stains/residues: Do not use steel sponges or sharp scrapers. Use normal, non-abrasive products and wooden/plastic tool if needed. Rinse and dry with soft/microfiber cloth. Do not let sugary food residues set, as they can damage enamel.
Cleaning accessories: Wash in warm soapy water with soft sponge/cloth. Rinse and dry thoroughly. Do not use abrasive detergents, metallic sponges, or metal tools. Do not wash in dishwasher to extend life.
Cleaning door glazing: Keep glass perfectly clean. Use absorbent kitchen roll. For stubborn dirt, use damp sponge and ordinary detergent.
Cleaning oven cavity: Clean regularly after cooling. Avoid letting food residue dry to prevent enamel damage. For easier cleaning, remove side guides by pulling frame to release from fastenings; reinsert by applying light pressure.
Using steam function for assisted cleaning: Softens cooking residues. Before starting, spray water and washing-up liquid solution on side walls.
- Select pure Steam function.
- Set temperature to 100°C for 18 minutes.
- Press START/STOP to start; after preheating, press again.
- After function ends, open door and use microfiber cloth to finish cleaning.
Drying: Cooking generates moisture. After each cooking:
- Let appliance cool.
- Remove dirt.
- Dry inside with soft cloth.
- Leave door open until dry.
Descaling (Fig. E)
When icon appears steadily, boiler descaling is highly recommended. When flashing, boiler must be descaled, and steam cooking cycles cannot be selected until complete. Descaling frequency varies with water hardness. Descaling can be run in advance.
Caution: Scale build-up can compromise appliance operation long-term.
- Access settings Menu.
- Turn left knob until "DESC" appears.
- Turn right knob to "On", confirm with SET to start.
- To cancel, press START/STOP for 3 seconds.
Caution: Once started, descaling can only be stopped before container filling with descaler solution ends. Afterwards, no other function can run until descaling is finished. Cycle duration is approx. 40 minutes. User should remain near appliance for interventions (e.g., topping up reservoir). Cycle has 6 steps, indicated by progress bar (24) and display indicators (St1, St2...).
Draining residual water (St1):
- Appliance drains residual water into right compartment.
- Press release button on lid, pull to open.
- Lift handle, remove, and empty reservoir.
Caution: Water may be very hot.
Filling reservoir with descaler solution (St2):
- Fill left compartment with water and descaler solution (per manufacturer's recommendations).
Caution: Do not fill right drainage compartment. Use cold tap water (not too hard), softened water, or still mineral water. Do not use distilled water, high chloride tap water (>40 mg/l), or other liquids.
- Place reservoir in oven compartment, close lid.
Once here, descaling cycle cannot be canceled.
Starting descaling function (St3):
- Press SET to confirm.
- Appliance starts boiler cleaning, display shows duration.
During descaling, appliance pauses to allow descaler to act. Wait for cycle to end.
Draining descaler solution (St4):
- After cleaning, appliance drains remaining solution into drainage compartment.
- Remove and empty reservoir.
Caution: Descaler solution may still be very hot.
Filling reservoir with clean water (St5):
- Clean reservoir, fill left compartment with clean water up to MAX level.
- Place reservoir in oven compartment, close lid.
- Press SET to confirm.
Rinsing water circuit (St6):
- Appliance starts water circuit cleaning, display shows duration.
- At end, "End" appears, buzzer sounds.
- Press START/STOP for 3 seconds to exit descaling.
Seal maintenance: Seal should be soft and elastic. Clean with non-abrasive sponge and lukewarm water.
Replacing internal light bulb:
Caution: Unplug appliance. Use protective gloves. Let appliance cool down.
- Remove all accessories.
- Unscrew bulb cover by hand.
Pay attention not to scratch oven cavity enamel.
- Slide out and remove bulb.
- Reinstall protective cover after replacing bulb.
Troubleshooting ("What to do if...")
- Oven does not switch on: Plug not inserted, cable defective, no power. Solution: Insert plug, contact technical support, check power supply.
- Display does not turn on: Plug not inserted, electronic board failure. Solution: Insert plug, contact technical support.
- Oven light does not switch on: Plug not inserted, bulb/oven door sensor failure. Solution: Insert plug, replace bulb, contact technical support.
- Cooking does not start: Failure to confirm after preheating, oven door not closed, oven door sensor failure. Solution: Confirm cooking phase, close door, contact technical support.
- Oven does not heat up after cooking starts: Oven door not closed, heating elements/oven door sensor failure. Solution: Close door, contact technical support.
- Fan heard after power off: Fan cooling appliance. Solution: Wait for cooling, contact technical support if fan doesn't switch off.
- Hot air escapes above oven door: Normal for cooling. Solution: Wait for cooling, contact technical support if hot air escapes from other parts.
- Burning smell: First use (normal), food residues on heating elements. Solution: Follow first use instructions, clean oven.
- Oven does not generate steam: Water reservoir not inserted correctly, reservoir empty/not full, filling compartment not filled, mandatory descaling required, boiler failure. Solution: Insert reservoir correctly, fill reservoir, run descaling cycle, contact technical support.
- Steam escapes above oven door: Normal for cooling and steam control. Solution: Wait for cooling, contact technical support if steam escapes from other parts.
- Water drips onto shelf from under door: Condensation from high moisture food, frequent door opening, seal problem. Solution: Contact technical support for excessive leaks, reduce door openings, contact technical support for seal.
- Water reservoir does not fit: Reservoir inserted incorrectly. Solution: Insert reservoir correctly, ensure door is closed.
- Error codes (Err1-Err5): Possible internal fault. Solution: Contact local technical support.
If problems persist, contact local technical support.
