Function Description

The Smeg stand mixer is designed as a versatile kitchen appliance primarily for mixing, whipping, whisking, and kneading both solid and liquid ingredients to prepare a wide range of dishes. With the addition of optional accessories, its functionality extends to rolling out and cutting pasta into various shapes. The mixer operates with a planetary mixing action, where the accessories rotate around their own axis in the opposite direction to the mixer's rotary movement. This ensures thorough blending of all ingredients across the entire bowl, yielding excellent results for all preparations.

The mixer features a motor head, body, and a speed selector (3) that allows users to choose the most appropriate speed for their task. A head raising/lowering release button (4) facilitates easy access to the bowl and accessories. The lower attachment (5) is designed for standard accessories, while a front attachment hub (6) with a cover (7) accommodates optional accessories. The appliance includes a bowl base (8) and a bowl (9), which can vary in design and material depending on the model.

Standard accessories include an aluminium dough hook (11) for slowly combining, mixing, and kneading leavened doughs like bread, pasta, and pizza. An aluminium flat beater (12) is provided for combining, mixing, and starting all mixing procedures, ideal for cake batters, pastries, biscuits, and thicker mixes. A stainless-steel wire whisk (13) is used for beating, mixing, whisking, and whipping ingredients such as butter, egg whites, and cream, as well as preparing creams, custards, and sauces. Some models also include a flex edge beater (14) with flexible silicone edges for mixing doughs and soft batters, ensuring even consistency. A pouring shield (10) is available on some models to protect against splattering and to facilitate adding ingredients during use.

The appliance incorporates a safety lock system that automatically shuts off the mixer when the motor head is raised. It also features a Smooth Start System, which gradually increases speed upon startup to prevent damage to the appliance and accessories and to avoid ingredients from being ejected from the bowl.

Usage Features

Before first use, it is crucial to unpack the appliance, remove all packaging, and clean the body and head with a damp cloth. The bowl and standard accessories should be thoroughly washed and dried. The mixer must be plugged into an earthed three-pin socket, and extension cords or adapters should not be used.

To use the mixer, place it on a flat, stable, and dry surface. Press the release button (4) and raise the motor head (1). Insert the bowl (9) into its base (8) and turn it clockwise until it locks. Select the appropriate accessory for the task and insert it into the lower attachment (5), pushing it upwards and turning it anticlockwise until it locks into place. Ensure the bowl and accessory are correctly locked before operation. Add ingredients to the bowl, then lower the motor head (1) by pressing the release button (4). If using, position the pouring shield (10) with the opening facing outwards.

Always ensure the speed selector (3) is in the "O" (OFF) position before plugging the mixer into the power socket. Select the desired speed (3) to begin mixing. For increased safety, if power is disconnected (e.g., by raising the head or unplugging), the speed selector must be returned to the zero position before restarting.

General advice for optimal use includes never exceeding the maximum speed and capacity to prevent damage. Start at a low speed until ingredients are mixed, then gradually increase. Add ingredients to the edge of the bowl, not directly onto the moving accessory. Reduce speed when adding dry or liquid ingredients to prevent splattering. The pouring shield is recommended for liquid mixtures or when adding dry ingredients.

Specific tips are provided for various preparations:

  • Whisking egg whites: Use egg whites at room temperature. Ensure the accessory and bowl are clean and free of grease or yolk. Gradually increase speed to prevent splattering. The mixer whisks rapidly, so monitor closely to avoid over-whisking.
  • Whipping cream: Use cold whipping or double cream. Gradually increase speed to prevent splattering. For one litre of liquid cream, start at speed 7-8 for the first minute, then increase to 10.
  • Recipes using eggs: Use eggs at room temperature for best results.
  • Kneading: Ensure sufficient liquid (at least 50-60% of flour weight) in doughs to avoid overloading the motor. If the appliance struggles, divide the dough and knead separately.
  • Bread/pizza dough and egg pasta dough: Start at speed 1 until ingredients are incorporated, then increase to speed 2. Add liquid ingredients first for best amalgamation. Use the dough hook for kneading; the flat beater can start the kneading process, but the flex edge beater should not be used for this.
  • Prepared cake batters: For up to 1 kg, start at low speed, then increase to 7. For up to 2 kg, start at speed 1, then increase to 3-4.
  • Pastry: Always use cold ingredients unless the recipe specifies otherwise. When preparing cakes, beat butter with sugar first, then add eggs, and finally flour.

Maintenance Features

Regular cleaning and maintenance are essential for the appliance's longevity and safe operation. Before cleaning, always unplug the mixer and allow it to cool down. Never immerse the motor base (2) in water or other liquids. Splattered liquids or batters should be wiped off immediately with a soft, damp, cotton cloth.

Cleaning Precautions:

  • Do not use abrasive or corrosive detergents.

Cleaning Specific Components:

  • The dough hook, flat beater, flex edge beater (if applicable), and stainless steel bowl (if applicable) are dishwasher safe.
  • The wire whisk and pouring shield (if applicable) should be hand-washed with a neutral detergent and a soft sponge.
  • The silicone edges of the flex edge beater can be removed and washed in a dishwasher.
  • The glass bowl (if applicable) can be hand-washed with warm water and a neutral detergent or in a dishwasher on a low-temperature program (maximum 50°C).
  • The ring nut at the base of the bowl can be removed and hand-washed separately with a neutral detergent and a soft sponge.
