Overview

The SMOKI MAXI GRILL is a pollution control unit designed for connection to kitchen exhaust systems, specifically for charcoal and wood-fired grills. It is available in models 250, 350, 400, 500, and 500S. The unit's primary function is to filter smoke, grease, and soot particles, and to reduce odors from exhaust gases. Function Description:

The MAXI GRILL is engineered to remove 97% of soot particles and reduce odors by 50-60%. It also cools the fumes discharged through the flue, contributing to fire protection. The unit is equipped with additional mechanical filters and a stainless steel water separator filter, which are easily accessible for maintenance. It must be connected to an aspirator/fan with a simultaneous starting switch to operate both units. The electrical starter includes an automatic switch with appropriate amperage, typically located near the grill or on the power panel. A circuit breaker (ON/OFF switch) and a maximum level indicator lamp are integrated into the electrical box.

Usage Features:

  • Installation: Can be installed either inside or outside closed places, connected to a fume discharge system. For outdoor installations, an insulated stainless steel protection panel (AISI 430) is required to protect vital parts from adverse weather conditions. In freezing temperatures (below 14°F), an electrical heater may be needed between the unit and the protection panel.
  • Positioning: Must be placed on a flat, stable surface. If installed on a shelf or raised area, it must be fixed with screws to the metal base. Minimum space is required for maintenance: 60cm above, 80cm in front, 60cm on the side, and according to installation needs at the back. The room must be well-ventilated, with temperatures below 50°C. Flammable materials should not be placed near the pump or aspirator.
  • Operation: Continuous as needed. The draft inducing device (suction unit) must be simultaneously connected with the MAXI GRILL. A remote switch for daily ON/OFF function should be located near the hood in the kitchen. The unit has only one electrical switch for ON/OFF, with no partial power switches.
  • Water Connection: Permanent connection to the water supply is required. The water drain valve (9) must be closed (vertical position) for operation. Connection to a grease trap is recommended for the sewer system.
  • Safety: The unit complies with NFPA 96, Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations, and ULC-S650, Standard for Installation and Performance of Ventilation and Fire Suppression Systems for Commercial and Institutional Cooking Equipment. It must be exclusively grounded by a certified electrician. Operators must wear personal protective clothing (footwear, gloves, goggles) and follow safety instructions to prevent electrocution and injuries.

Maintenance Features:

Maintenance is categorized into biweekly, routine, and special operations.

  • Biweekly Maintenance (every 15 days):
    • Cleaning internal mechanical filters (if necessary).
    • Changing recycle water to improve smoke washing and reduce atmospheric pollution.
  • Routine Maintenance (every 60 days):
    • Includes biweekly maintenance.
    • Cleaning the recycle tank, paying attention to drains and float arm.
  • Special Maintenance (every 6 months):
    • Includes biweekly and routine maintenance.
    • Cleaning the gigler/automatic water level switch.
  • General Maintenance Procedures:
    • Always disconnect power by turning off the machine's electrical panel switch and the main circuit breaker before any repair or maintenance.
    • Turn off the water tap (12.03) to close the water supply, ensuring the pressure gauge falls to 0 bar.
    • Clean the water supply filter (12.04) by removing and washing the filtering cartridge in clear water.
    • Open the water drain valve (12.05) to decrease the water level in the tank.
    • Remove the cover (12.06) by unscrewing 10 fastening knobs for internal access.
    • Clean the water tank (12.07) by removing the inspection cover, opening the auxiliary tap, and cleaning with a jet of water. Ensure the water drain lever is open and not clogged. Clean the float arm.
    • Clean the gigler (automatic water level control) (12.08) by loosening it with a 26mm wrench, unscrewing, and cleaning with water or compressed air.
    • After maintenance, turn the breaker switch ON (12.09) and then the main switch ON (12.10). Wait about 10 minutes for the water tank to fill and the pressure gauge to reach 1.5-3 bar.
    • Stainless Steel Cleaning (12.11): Use specific detergents for stainless steel. Avoid preparations containing salt or sulfuric acid, bleach, abrasive powders, or sharp objects. A diluted solution of acetic acid can be used for limestone.
  • Important Safety Notes for Maintenance:
    • Maintenance must be carried out by qualified personnel.
    • Do not touch electrical parts with wet hands (risk of electric shock).
    • Do not perform outdoor maintenance during rain (risk of shock, short circuit, lightning).
    • Wear appropriate safety protection (gloves, goggles, footwear).
    • Do not use flammable liquids for cleaning electrical components.
    • Machine cleaning requires compressed air; wear protective glasses.
    • Do not use the machinery without the safety guard or tamper with it.
  • Troubleshooting: The manual provides a detailed troubleshooting guide for common issues such as the system not starting, pump not starting, water pressure gauge remaining at 0 bar, maximum level indicator light on, circuit breaker not plugging/unplugging, automatic switch not plugging/unplugging, blocked level switch, pump going on/off at intervals, and low water pressure.
  • Unused Machine (17): For extended periods of disuse, disconnect electricity and water supply, and protect the unit with cellophane tape against dust and pollutants.
  • Demolition and Disposal (18): Disassembly and disposal of parts must be performed by authorized personnel in accordance with antipollution laws in the country of use.
