This document describes the Sous Vide Model: SJ-S012, a slow-cooking culinary device designed for precise temperature control and consistent cooking results.
Function Description:
The Sous Vide device is a slow-cooking culinary method that originated in France in the 1970s. It involves vacuum-sealing fresh ingredients in a bag and immersing them in a water bath with constant temperature for a set period. This method ensures even heat penetration, preserving the food's delicate fibers, healthy nutrients, and enhanced flavor, making it possible to achieve restaurant-quality results at home. The device generates a 360° strong water cycle to maintain a constant temperature throughout the container, ensuring uniform heat penetration. This 3D multidirectional heat penetration remedies the imperfections of conventional cooking, guaranteeing thoroughly cooked food with a tender texture. Overcooking is effectively avoided by setting a precise timer, ranging from 0 minutes to 99 hours and 59 minutes. An alarm signal will buzz when cooking is done, allowing users to relax while their meal is being prepared.

Usage Features:
The Sous Vide simplifies the cooking process: set the timer, place food into a container, and wait for it to cook without constant supervision.
- Preparation: Place food and seasoning into a vacuum bag, seal, and vacuum it.
- Setup: Fix the machine onto a container using the clip, ensuring it doesn't touch the bottom. Fill the container with water between the MIN and MAX water lines. Remember that the water level will rise when food is added, so do not overfill.
- Power On: Connect the power supply. The indicator light ring and display screen will flicker and then go out, with only the power button remaining on.
- Default Settings: Press the power button. The indicator light ring will turn red. The default cooking time is 2 hours, and the display shows the current actual water temperature.
- Menu Presets: Press the menu button to cycle through preset menus for meat (55°C, 1 hour), seafood (51.5°C, 30 min), vegetable (82°C, 1 hour), and eggs (63°C, 45 min). These are recommendations and can be adjusted.
- Manual Adjustment: If not using presets, press and hold the menu button for about 2 seconds until the menu symbols are off. Then, manually adjust time and temperature.
- Temperature Setting: Press the temperature setting button, and the temperature symbol will blink. Use the up/down arrows to adjust to the desired temperature.
- Time Setting: Press the time setting button, and the time symbol will blink. Use the up/down arrows to adjust the time. The default cooking time is 2 hours, and the temperature is 55°C.
- Celsius/Fahrenheit Toggle: Press and hold the temperature setting button for more than 2 seconds to switch between Celsius (°C) and Fahrenheit (°F).
- Preheating and Cooking: After setting the time, the display time will flicker 3 times. The temperature displays as the current actual water temperature. Once the water reaches the specified temperature, the light ring turns green, and the countdown begins. Submerge the bagged food in the water bath. Cooking time varies based on ingredients, portions, and preferences.
- Completion: When the countdown ends, the indicator lamp ring turns blue, and the buzzer emits five "beep" sounds. The screen remains on for 10 minutes before turning off automatically.
- Finishing: For a golden appearance and crisp taste, food can be baked slightly in an oven or quickly seared on a hot skillet.
Maintenance Features:
Before maintenance, ensure the unit is turned off, unplugged, and cooled to room temperature.
- Cleaning:
- Stainless Steel Column: Hard or mineral-rich water can cause stains. Use appropriate methods to remove stains and lime accumulation. Wipe dry with a cloth or paper towel. Store in a cool, dry, well-ventilated environment. The stainless steel column can be cleaned in a dishwasher or with detergent.
- Circulator: The heating coil, pump shaft, and sensors can be cleaned with detergent and a soft toothbrush, then rinsed with water.
- Disassembly and Installation:
- Detaching Stainless Steel Column: Pull the fixed clip down along the column, then rotate the column clockwise. Pull downwards until it comes off. If impellers jam, shake the column slightly. The pump cap can be removed before detaching the column.
- Installing Stainless Steel Column: Align the stainless steel column with threads, rotate it counterclockwise, and fix it. Then put the fixed clip in place.
- Decalcification: Use Calcium Lime Rust Remover (wear gloves) or Sodium Bicarbonate.
- Error Warnings:
- E1: Failure of anti-burning temperature sensor.
- E2: Failure of detecting water temperature sensor.
- E3: Water level sensor finds no water in the machine.
- E4: Anti-burning temperature sensor finds the temperature higher than 110°C.
- Dishwasher Safety: Do not put the machine into a dishwasher.
