Overview

The Swan SI-100E Block Ice Shaver is an electric-type machine designed for shaving block ice, primarily for creating shaved ice desserts. This manual provides comprehensive instructions for its operation, maintenance, and troubleshooting.

Function Description:

The primary function of the Swan SI-100E is to transform a block of ice into fine or coarse shaved ice. It operates by holding a block of ice firmly against a rotating shaving disc equipped with a blade. The ice block holder, driven by a main shaft, applies pressure to the ice, while an adjustable blade shaves off layers of ice. The texture of the shaved ice can be controlled by adjusting the blade's height.

Important Technical Specifications:

  • Dimensions: 25-3/4" high x 11-1/8" wide x 15-1/8" deep
  • Weight: 61.7 lbs.
  • Shaving Capacity: 4.84 to 5.5 lbs. per minute
  • Motor: 115V, 200W
  • Power Requirement: 210W, 60Hz
  • Accessories: Includes 1 Spare Blade, 1 Grease oil, and 1 Drain Hose.
  • Motor Options: Available with a 115V motor (with SS Worm & Rubber) or a 220V motor (with SS Worm & Rubber).
  • Warranty: 2 years (24 months) against defects in materials and workmanship from the date of delivery.

Usage Features:

  • Ice Block Holder Crank: Used to raise and lower the ice block holder. It must be installed before first use.
  • Polycarbonate Shield: A safety shield that should be positioned horizontally to the rear when placing ice and to the front during operation.
  • Blade Adjustment Knob: Located on the left side of the Shaving Plate Frame, this knob allows for precise control over the blade's height. Turning it counter-clockwise raises the blade, resulting in coarser and faster ice production. Turning it clockwise all the way recesses the blade, stopping ice production. The dial indicates settings from 0 (recessed) to 6 (roughest shaving), with 1 being for fine shaving.
  • Motor Switch: Activates the main shaft and ice block holder rotation.
  • Protector (Reset Switch): A push-button switch on the left side of the Head Cover. If the blade or revolving section encounters an issue, the machine automatically stops to prevent overheating and motor damage. After resolving the cause, the protector can be pushed to restart the motor.
  • Ice Placement: Block ice should be placed flat side up and centered on the shaving disc. The spikes on the ice block holder must be deeply embedded in the ice to prevent wobbling during operation.
  • Ice Preparation: Ice stored in a freezer should be allowed to thaw for 15-20 minutes until semi-transparent before shaving to prevent blade damage.
  • Safety Precautions: Emphasizes extreme caution when handling the blade and spikes. Children or individuals unfamiliar with the product should not operate it. The machine should be placed on a strong, flat, horizontal surface where dripping water is not an issue.
  • Extension Cord Usage: If an extension cord is necessary, a three-prong grounded cord, maximum 25 feet in length, and 12-gauge (heavy duty) for outdoor use, is recommended to prevent overheating and motor damage.
  • Power Source: Requires a 15A 115V power source. If using a generator, ensure it provides sufficient electricity.

Maintenance Features:

  • Brake Adjustment: This is a crucial initial setup and ongoing maintenance feature. It involves removing a rubber plug, raising the ice block holder, and using a straight-edge screwdriver to adjust the Brake Adjustment Screw. Turning it counter-clockwise slowly until the ice block holder drops, then turning it clockwise 2-2.5 full turns, sets the correct tension for proper ice shaving. The crank should feel firm, not too easy to turn. This adjustment is also used if ice is not shaving correctly (too fine or too rough).
  • Blade Replacement: Recommended every 3,000 shaves or if chipped/dull. Involves turning the Blade Adjustment Knob all the way right, unscrewing two Phillips-screws, removing the blade holder and old blade, then accurately placing the new blade on the Standard Level Guide Screws and re-securing it. The center slotted screw should not be interfered with.
  • Lubrication: Main Shaft and Gear Box should be lubricated monthly. FDA-approved grease for food processing machinery should be used for the Main Shaft. Cooking oil is recommended for cleaning and lubricating the blade before storage.
  • Cleaning for Sanitation:
    • The Shaving Plate can be removed by unscrewing 4 thumbscrews from its underside and pushing it up.
    • The Front Cover (held by 4 thumbscrews, 2 on each side) can be removed by pulling it towards the user to access and clean the Shaving Plate Frame and adjacent food zone areas.
    • Brake Shoe and worm gear should be kept free of grease, especially in hot weather or with heavy use. A dry rag can be used to wipe parts clean while the machine is on.
  • Storage After Season: Wipe off moisture, clean and lubricate the blade with cooking oil, and wrap it in foil paper. Remove all soiled oil from the Main Shaft and lubricate with FDA-approved grease. Always unplug the machine when not in use.
  • Troubleshooting Guide: A detailed table is provided to diagnose and resolve common issues, including motor failure, ice block holder movement problems, poor shaving quality, and crank tension issues, offering specific causes and solutions.
  • Plastic Cover Care: Avoid placing the machine near direct heating equipment or using paint thinner/similar products for cleaning, as these can disfigure the plastic cover.
  • Shaving Plate Protection: Avoid touching the aluminum shaving plate with a metal ice pick, as scratching can lead to uneven ice shavings, "pitting," and potential damage.
  • Parts and Maintenance Videos: Information is provided for ordering authentic Swan factory parts and accessing complete maintenance videos on SnoBiz: YouTube.
