INTRODUCTION TO SLOW COOKING
Slow cooking occurs at temperatures just around boiling point. Since liquids do not bubble
very quickly at this temperature, there is just a little steam and evaporation, foods do not stick
and very little stirring is required.
Slow cooking retains both flavour and nutrition, and allows you to select cheaper cuts of
meat.
The cooker can operate on LOW all day and night if required.
When on HIGH setting, it is very much like a covered pot on a stove. Foods will cook in half
the time required on LOW. Additional liquid may be required as evaporation is higher on
HIGH setting.
NOTE: The glass lid should not be removed when cooking on LOW setting.
USING THE AUTO SETTING
When switch to AUTO, the appliance will cook on HIGH until the preset temperature is
reached. It then switches the element on and off to maintain a constant temperature.
Therefore a dish that cooks for 5-6 hours on HIGH, will cook for 8-9 hours on AUTO. This
facility allows the user to switch the appliance on and leave the house for the whole day,
without supervising the cooking process.
COOKING PRACTICES
1. Vegetables such as carrots, potatoes, turnips, etc require longer cooking time than many
meats and should be placed in the bottom of the cooker and covered with liquid.
2. If adding fresh milk or yogurt, this should be done during the final 2 hours. Evaporated
milk may be added at the start of cooking.
3. Rice, noodles and pasta are not recommended for long cooking periods. Cook them
separately and then add to the cooker during the final 30 minutes.
