Overview

This document is an installation manual for True Refrigerated Food Prep units, including Undercounters, Worktops, Sandwich/Salad, Pizza Prep, and general Food Prep models. It provides comprehensive instructions for installation, setup, operation, and maintenance, ensuring efficient and trouble-free use of the commercial refrigerators.

Function Description:

The True Refrigerated Food Prep units are commercial refrigerators designed to maintain food products at optimal temperatures for preparation and storage. They are available in various configurations, including undercounters, worktops, and specialized sandwich/salad and pizza prep models. The units feature either mechanical or electronic temperature controls to regulate internal temperatures, typically set to approximately 35°F (1.6°C) for refrigerators and -10°F (-23.3°C) for freezers. The primary function is to provide reliable refrigeration, ensuring food safety and quality in commercial kitchen environments.

Important Technical Specifications:

  • Refrigerant Type: Units may contain fluorinated greenhouse gases such as R134a (GWP=1,300) or R404a (GWP=3,800), or hydrocarbon refrigerant R-290. The specific type and volume are indicated on the serial label inside the cabinet.
  • Electrical Requirements: Units are designed for specific voltage ratings (e.g., 115/60/1, 115/208-230/1, 208-230/60/1) and come with NEMA plugs (5-15R, 14-20R, 5-20R, 6-15R). A dedicated electrical circuit matching the unit's rating plate is recommended.
  • Temperature Control:
    • Mechanical Controls: Utilize an evaporator coil sensing temperature control for off-cycle defrost. Settings range from #1 (warmest) to #9 (coldest), with #0 as the off position. Each 1/4 turn of the calibration screw adjusts temperature by approximately 2°F.
    • Electronic Controls (LAE & Danfoss): Feature adjustable set-points and differentials. The set-point determines when the compressor shuts off, and the differential is added to the set-point to determine when the compressor restarts. Defrost cycles are preprogrammed by interval or specific times, with durations ranging from 4 to 60 minutes.
  • Climate Classes: Appliances are tested according to climate classes 5 and 7 for temperature and relative humidity, indicating suitability for demanding environments.
  • Ventilation: Requires at least one inch between the wall and the rear of the refrigerator for proper ventilation. Freezers require three inches. Insufficient ventilation voids the warranty.
  • Shelving: Designed for gravity feed TrueTrac organizers, with shelf clips hooking onto shelf standards.
  • Drawer Systems: Two types of drawer systems (Set 1 and Set 2) are described, with instructions for removal and installation.
  • Cutting Boards: TPP and TFP models include cutting boards, often made from Richlite material, which may require periodic turning to prevent warping.
  • Chiller Hose (TSSU-27-12M-C models only): Features a flexible hose that requires periodic cleaning with a hose cleaning brush.

Usage Features:

  • Pre-use Preparation: Units must run for 24 hours prior to usage to ensure proper cooling. It is recommended to run the unit empty for two to three days after installation to confirm proper electrical wiring and operation.
  • Loading Guidelines: Product should be loaded carefully to avoid pressing against the back wall or coming within four inches of the evaporator housing to ensure proper air circulation.
  • Temperature Adjustment: Instructions are provided for adjusting both mechanical and electronic temperature controls. For mechanical controls, adjustments are typically recommended only for high-altitude locations. Electronic controls allow for changing set-points, defrost intervals, and display readouts (Fahrenheit to Celsius).
  • Manual Defrost: Electronic controls allow for initiating a manual defrost cycle if frost or ice accumulates on the evaporator coil.
  • Locking Controls: Electronic controls can be locked to prevent unauthorized changes to program settings, which could affect cabinet operation.
  • Light Control: Glass door models have interior lights that can be controlled by the LAE controller or an interior light switch. Solid door models typically have lights controlled by a door switch.

Maintenance Features:

  • Condenser Coil Cleaning: Critical for efficient operation and warranty validity. Condensers accumulate dirt and require cleaning every 30 days or as needed using a stiff bristle brush, vacuum cleaner, CO2, nitrogen, or pressurized air. Dirty condensers can lead to compressor failure, product loss, and increased electrical costs.
  • Stainless Steel Care: Emphasizes using non-abrasive tools and cleaners (alkaline, alkaline chlorinated, or non-chloride containing) to prevent scratches and corrosion. Cleaning should be done along the polish lines or "grain" of the stainless steel. Rinsing and wiping dry immediately after cleaning are recommended. Hydrochloric acid (muriatic acid) should never be used.
  • Lid Maintenance: Lid pin screws should be checked periodically to ensure they are tight, as they are designed to be removable for cleaning.
  • Cutting Board Maintenance: For Richlite cutting boards, periodic turning is recommended to prevent warping caused by moisture and temperature differences.
  • Chiller Hose Cleaning: For TSSU-27-12M-C models, the chiller hose should be cleaned using a provided hose cleaning brush to ensure proper air circulation.
  • Warranty Information: A three-year parts and labor warranty is provided for units shipped after September 1, 2015, covering defects in material and workmanship. An additional two-year compressor warranty extends coverage for hermetically and semi-hermetically sealed compressors. The warranty is voided by improper installation, lack of preventative maintenance (e.g., condenser coil cleaning), use of non-OEM parts, alteration, neglect, abuse, misuse, accident, damage during transit or installation, fire, flood, acts of God, or improper electrical connections. Product loss due to refrigeration failure is not covered.
