Overview

The Ugolini NG6 and NG10 are electronic dispensers designed for preparing and dispensing granitas and other chilled beverages. These machines are available in configurations with one, two, or three transparent removable bowls, offering capacities of 6 liters per bowl for the NG6 models and 10 liters per bowl for the NG10 models.

Function Description:

The dispenser operates with a main switch, a keyboard, and a screen for each bowl, allowing users to set various operation modes. These modes include:

  • STANDBY: The dispenser is powered and ready to start.
  • GRANITA MAKING: The dispenser prepares granitas according to the product in the bowl. The cooling system automatically stops when the product reaches the desired density, while mixing continues.
  • PRODUCT PRESERVATION: This mode maintains the liquid product at a suitable temperature, ideal for overnight use to preserve product quality and reduce energy consumption.
  • WASHING: In this mode, only the mixers operate, and the cooling system is stopped. This is useful for cleaning the dispenser without cooling the cleaning solution.

The dispenser is equipped with a hermetic compressor and an air-cooled condenser, with an overload protector for safety. The noise level is kept below 70 dB(A).

Important Technical Specifications:

  • Models: NG 6/1, NG 6/2, NG 6/3 (for 6-liter bowls); NG 10/1, NG 10/2, NG 10/3 (for 10-liter bowls).
  • Bowl Capacity: 6 liters (NG6) or 10 liters (NG10) per bowl.

Usage Features:

  • Installation: The dispenser should be placed on a stable bench capable of supporting its full load, with at least 15 cm clearance around for cooling air circulation. It is not suitable for outdoor use and must be installed in an upright position.
  • Controls: The control keyboard includes a pilot light (A) for standby indication, a standby key (B) to turn the machine or individual bowls on/off and control cover lights, a product preservation key (C) for increasing/decreasing density and switching to product preservation or washing mode, and a granita making key (D) for decreasing density, switching to granita making mode, or resetting alarms.
  • Density Adjustment: Product density can be adjusted using keys C or D in Granita Making mode. The factory default is 5.
  • Timer Function (Optional Smart Display): Some models feature a day/night timer to automatically switch between day and night modes. This allows for setting specific operating intervals and product preservation during off-peak hours. The timer can be temporarily suspended.
  • Product Preparation: When preparing granita, the volume will increase by about 10%, so containers should not be filled to maximum capacity. For natural products, 150-200 grams of sugar per liter of product is recommended. Freeze-dried bases should be prepared in a separate container before pouring into the machine.
  • Alarm Display: In case of a fault, an alarm message will be displayed, with a flashing element on the density bar indicating the alarm number.
  • Keyboard Lock: The keyboard can be locked by pressing keys C and D simultaneously for two seconds to prevent unauthorized access.

Maintenance Features:

  • Daily Maintenance: Inspect for product leaks from gaskets. Ensure components are properly installed and gaskets are lubricated or replaced if worn.
  • Monthly Maintenance: Remove dust from the condenser filter located on the back of the machine.
  • Annual Maintenance (by qualified service personnel only): Remove all panels and clean the inside of the machine, including the base and panels. Do not remove the anti-condensation material around the evaporator outlet tube; replace with original spare parts if missing.
  • Cleaning and Sanitization:
    • Before Use: The dispenser must be disassembled, washed, and sanitized.
    • Washing: Empty the product, select CLEANING mode, and fill containers with water. After a few minutes, drain and turn off the machine. Do not use a dishwasher for any parts. Use a solution of hot water (45-60°C) and sodium hypochlorite (bleach) at a ratio of 1 tablespoon per 2 liters of water. Only use detergents compatible with plastic parts. Avoid excessive water around electrical components.
    • Disassembly for Cleaning: Unplug the device from the mains. Remove the lid, container, mixer, hexagonal joint, gasket, tap, drip tray, and flow restrictor.
    • Sanitizing: This must be done immediately before starting up the dispenser. Wash hands with antibacterial soap. Prepare a sanitizing solution (hot water 45-60°C and sodium hypochlorite at 1 tablespoon per 2 liters) and immerse all parts for the time indicated by the product manufacturer. Allow parts to air dry on a clean surface.
    • In-Place Sanitization (Optional): For additional precaution, a sanitizing solution can be poured into the assembled device, stirred for 2 minutes, drained, and then rinsed with a cool beverage.
  • Lubrication: Only use the grease supplied by the manufacturer or other food-grade grease compatible with plastic parts for lubricating the tap piston, hexagonal joint, and mixer.

Safety Instructions:

  • Ensure proper earthing to prevent electric shocks.
  • Do not use extension cables.
  • Damaged power cables must be replaced by authorized personnel.
  • Do not operate without reading the manual, proper grounding, or with panels unrestrained.
