Overview

The Vitamix Mix'n Machine is a commercial-grade appliance designed for rapidly mixing frozen desserts and beverages with various ingredients. It combines a durable motor with different styles of agitators to achieve thorough mixing. The machine is available in several models, including the Mix'n Machine Advance Timer Model, Mix'n Machine Advance Programmable Model, Mix'n Machine Advance Variable Speed Model, and the Mix'n Machine Standard Model (Countertop and Wall Mount).

Function Description

The primary function of the Vitamix Mix'n Machine is to blend and mix frozen desserts like ice cream, yogurt, and other ingredients such as liquid flavorings, candies, cookies, fruits, and other condiments. By moving the serving cup up and around the agitator, the machine ensures a consistent and well-mixed final product. The various models offer different levels of control and automation for blending cycles.

Usage Features

General Blending Procedure:

  1. Preparation: Place the frozen dessert product (e.g., ice cream, yogurt) and desired mix-in ingredients into a sturdy serving cup.

  2. Agitator Attachment (for Removable Agitator models): If using a removable agitator, push it onto the shaft until it snaps into place.

  3. Power Connection: Plug the machine into a grounded electrical outlet.

  4. Cup Guard: Place a cup guard on the serving cup. This guard helps contain splashes during mixing.

  5. Positioning the Cup: Hold the cup securely (from the side, not the bottom) and reach under the splash guard. Lift the cup until the agitator touches the bottom.

  6. Activating the Machine: Turn the machine ON to activate the agitator. The method of activation varies by model:

    • Mix'n Machine Advance Programmable Model: Press the ON/OFF power switch to ON. Select the desired program setting on the dial. Push the START Actuator (located behind the agitator) to begin a programmed blending cycle. The machine will automatically shut off at the end of the cycle.
    • Mix'n Machine Advance Timer Model: Press the ON/OFF power switch to ON. Push the START Actuator (located behind the agitator) to activate a pre-set timed blending cycle. The machine will automatically shut off at the end of the pre-set time.
    • Mix'n Machine Advance Variable Speed Model: Select the desired speed setting on the VARIABLE SPEED dial. While holding the cup, press the ON/OFF power switch to ON to activate the agitator. It is recommended to start on a lower setting and gradually increase speed as the mixture begins processing.
    • Mix'n Machine Standard Model (Countertop and Wall Mount): While holding the cup, press the ON/OFF power switch to ON to activate the agitator.
  7. Mixing Technique: With the agitator spinning, use a swirling motion to gradually move the cup up and down and completely around all sides of the agitator. This technique helps create a pleasing product appearance and prevents a hole from forming in the center of the mixture. If the ice cream is hard, this motion should be performed slowly. The agitator is designed to chip and break solids, but complete pulverization is not intended, so solid chunks are expected in the final product.

  8. Finishing the Cycle: Before removing the cup, allow any excess mixture to be thrown off the agitator and caught by the cup or lid/collar. The machine will shut off automatically for timed and programmable models. For variable speed and standard models, press the ON/OFF power switch to OFF to stop the machine.

Special Features and Controls:

  • LED Indicator Light (Advance Models): This light blinks when a blending program is 4 seconds from completion, signaling the operator to prepare to remove the cup. The blinking speeds up as the cycle nears completion, indicating when excess product can be spun off the agitator. It also blinks to confirm acceptance when a new program is installed via a programming chip.
  • PROGRAM Dial (Advance Programmable Model): Allows selection from six pre-programmed blending settings, each designed for common dessert types (e.g., easy-to-blend, hard-to-blend, syrups). Each program has a specific sequence of speeds and durations, with a 3-second delay at the end to allow cup removal.
  • PULSE Switch (Advance Programmable Model): This switch allows for quick refreshment of products. Depress and hold the switch to activate the agitator, and release to stop. It can only be used when the power switch is ON.
  • VARIABLE SPEED Dial (Advance Variable Speed Model): Provides continuous control over motor speeds, activated when the power switch is ON.
  • FOOT PEDAL Control (Optional, Sold Separately): Available for applicable models, the foot pedal offers hands-free power activation. Press and hold for ON, release for OFF. It should be placed where it won't be activated unintentionally, and a foot guard is included for added safety.
  • Splash Guards: Unique designs catch product thrown from the agitator, shielding the operator. Countertop models have pivoting splash guards, while wall mount units have sliding guards that ride on top of cup guards. Both are easily removable for cleaning.

Programming with a Custom Chip (Advance Programmable Model):

  1. Turn the machine ON.
  2. Locate the programming port on the right side panel and insert the custom programmed chip with silver contact bars up.
  3. Within 5 seconds, the six PRE-SET PROGRAMS will be re-programmed. The LED Indicator light will blink to confirm acceptance. If it doesn't blink, rotate the chip 180 degrees and try again.
  4. Remove and store the programming chip.

Resetting to Original Factory Settings (Advance Programmable Model):

  1. Turn the machine OFF.
  2. Hold down the PULSE button while turning the power back ON using the ON/OFF switch.

Agitator Types:

  • Permanent Soft Ice Cream Agitator: Made of durable NSF-accepted Acetal, designed to be pushed against paper or plastic cups without damage.
  • Aggressive/Permanent Hard Ice Cream Agitator: Made of NSF-accepted stainless steel with rounded fins, designed for efficiently mixing hard ice cream at colder temperatures. Recommended for use with sturdy cups (durable paper, plastic, or metal).
  • Removable/Reusable Agitator: Made of durable NSF-accepted Acetal, this rigid agitator is easily removable and cleanable, ideal for preventing flavor, coloring, and allergen transfer between servings. Conversion kits are available to switch between permanent and removable agitators.

Motor Protection:

The Mix'n Machine is equipped with a reset breaker on the motor enclosure. If the motor is overloaded or locked, the breaker will trip. If this occurs, ensure the motor is free to rotate, allow it to cool, then push the reset breaker to restart. Never remove or bypass the reset breaker.

Maintenance Features

Cleaning Permanent Agitators:

  1. Fill a durable container (square or rectangular) with hot water (110°F / 43°C) and mild liquid detergent (1 oz. per qt. / 30 ml per Ltr.), ensuring the agitator and shaft can be fully submerged up to the motor chamber.
  2. Hold the container around the agitator and shaft, turn the machine ON, and run for about 15 seconds. Repeat several times, ensuring all food-contact portions of the shaft are submerged. The moving splash guard must be removed for this cleaning.
  3. Repeat step 2 using rinse water.
  4. Repeat step 2 using an approved 100 ppm sanitizing solution and run for a minimum of two minutes.
  5. Resanitize at the start of each day.

Cleaning Removable/Reusable Agitators:

  1. Remove the agitator from the machine.
  2. Wash in warm soapy water.
  3. Rinse clean.
  4. Sanitize as necessary.
  5. Dry and reassemble. Dishwasher use is NOT recommended as excessive heat may bend the agitator, causing unbalance.

Cleaning the Housing:

  1. Unplug the machine.
  2. Remove Splash Guard:
    • Countertop Models: Squeeze the sides of the splash guard until clear of the top pivot pins and pull it out. To remount, squeeze the sides and place onto the top pivot pins, ensuring it sits on the bottom pivot pins.
    • Wall Mount Models: Squeeze the travel rods together and slide the guard down. To remount, slide the guard up over the rods until it snaps into place.
  3. Wash the splash guard in warm soapy water, rinse, and sanitize. Avoid abrasive materials, paper towels, or cleaners containing ammonia, as these can scratch the surface. Dishwasher use is NOT recommended.
  4. Clean and disinfect all stainless steel surfaces with a commercial cleaning solution. Do NOT spray water or other fluids into the motor chamber. Avoid excess liquid around switches, motor protector, or cord entry hole. Abrasive cleaners may alter the surface finish. Ensure all areas are dry before plugging the machine back in.
  5. Cleaning Sticky Switches: If switches become sticky, unplug the machine and use a damp cloth moistened with water and mild detergent to clean around the edges of the switch paddles. Work the switches back and forth to loosen dried residue. Sticky switches can cause damage. Clean carefully to prevent liquid infiltration into the switch. Dry with a soft cotton cloth before plugging in.

Important Cleaning and Sanitizing Notes:

  • Do not use abrasive cleaning agents or concentrated bleach.
  • Do not use cleaners containing Quaternary Sanitizers on polycarbonate components.
  • Always follow cleaner/sanitizer manufacturer's specifications and instructions.
  • Adhere to local codes for cleaning/sanitizing equipment.
